Number Of Ingredients 6

4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
4 tablespoons shortening
1 ½ cups warm water
2 quarts oil for frying

Steps:

  • In a large bowl, stir together flour, baking powder, salt and shortening. Stir in water; mix until dough is smooth. Cover and let stand for 20 minutes.
  • Roll out on floured board until 1/8 to 1/4 inch thick. Cut into 3 inch squares. Heat oil in deep-fryer to 375 degrees F (190 degrees C). Fry until golden brown on both sides. Drain on paper towels and serve hot.

450 g all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
25 g shortening
175 ml luke water
fat (for frying)
40 g icing sugar
1/4 teaspoon cinnamon

Steps:

  • Stir together the first three ingredients.
  • Rub the shortening into the flour until it resembles fine bread crumbs.
  • Gradually add the water.
  • Stir with a fork until it becomes a crumbly dough.
  • Turn onto a floured surface.
  • Knead into a smooth ball, divide the dough in half.
  • Allow to stand for 10 minutes.
  • Divide into two.
  • Roll each half into a rectangle.
  • Using a medium pastry cutter, cut into runds.
  • Do NOT re-roll or patch dough.
  • Fry a few at a time in deep hot fat 200 C, 400 F, Gas mark 6 till golden.
  • Drain on a paper towel.
  • Serve with honey or roll in icing sugar and cinnamon.

From Mexican Cooking at the Academy, California Culinary Academy. Sopaipillas are golden-fried puffs of dough. In new Mexico where they are popular, they are usually eaten with honey, as suggested here. Sopaipillas are also good served with soups, and at brunches, parties, and buffets. My DH and I love this recipe. Great to serve with Mexican food. We fill them with honey and sometimes make a salad in them with lettuce, tomato, avocado, salsa, and sour cream. Yummy! Cook time doesn't include 1 hour rest time.

Number Of Ingredients 7

3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons shortening
1 cup warm water
oil, 1 1/2 inches deep for frying
honey

Steps:

  • Stir together flour, baking powder, and salt; cut in shortening with a pastry blender until coarse crumbs form.
  • Gradually work in the water to form a pastry-like dough. Turn onto a light floured board. Place a damp cloth over and allow to rest for 1 hour.
  • In large, heavy frying pan, heat oil to 425°F Divide dough in half (you will find it easier to handle this way). Roll each ball of dough as thin as possible. Cut into 3-inch squares and fry in hot oil, pushing squares down into the oil several times so that they will puff evenly. Turn once to brown and cook until golden on both sides. Place on paper towels to drain.
  • Serve warm with honey.

As impressive as they are, these pastries are so easy! The dough is a snap to make, and they take only minutes to fry up.

Number Of Ingredients 5

2 cups flour
1 Tbsp. baking powder
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
2/3 cup water
1-1/2 cups oil for frying

Steps:

  • Combine flour and baking powder in large bowl. Cut in cream cheese with pastry blender or 2 knives until mixture resembles fine crumbs. Gradually add water, mixing after each addition until well blended. Shape into ball; knead on lightly floured surface 5 min. or until smooth and no longer sticky. Cover; let stand 10 min.
  • Divide dough in half. Roll half the dough into 12x10-inch rectangle on floured surface; cut into 12 squares. Cut each square diagonally in half. Repeat with remaining dough.
  • Heat 2 inches of oil in medium saucepan to 375°F on medium-high heat. Add dough pieces, in batches; cook 1 to 2 min. or until edges of sopaipillas are golden brown, turning once. Remove from pan with slotted spoon; drain on paper towels.
