Categories     sauce

Time 10m

Yield ½ cup

Number Of Ingredients 11

½ -1 teaspoon Szechuan Peppercorns (or sub black peppercorns)
1/4 cup soy sauce ( of Gluten-Free Liquid Aminos) see notes.
3 tablespoons honey (or sub maple syrup, coconut sugar, brown sugar or sugar alternative)
1 tablespoon sesame oil
1 tablespoon rice wine vinegar (or black vinegar)
1 tablespoon Chinese cooking wine (shaoxing) or mirin (both optional)
3 garlic cloves, finely minced (use a garlic press)
2 teaspoons fresh ginger, finely minced ( or use ginger paste)
1 tablespoon garlic chili paste (or sambal oelek) more for more spicy or sub 1 teaspoon chili flakes
½ teaspoon Chinese Five Spice
optional- 2-3 teaspoons corn starch, to thicken, see notes.

Steps:

  • Toast szechuan peppercorns in a hot dry skillet over medium heat, until fragrant, about 1-2 minutes. Crush.
  • Place all ingredients in a medium bowl or small jar and whisk until well combined.
  • If using as a stir-fry sauce, and you would like to thicken it, whisk in 2 teaspoons cornstarch.
  • If using as a marinade, forgo the cornstarch and make sure to season what you are marinating ( chicken, tofu, beef) with salt. The marinade alone will probably not be salty enough.
  • If making a stir-fry, try adding a few dry Chinese or Arbol chilies (5-10) to the stir-fry, right before adding the Szechuan Sauce. Do not eat the chilis. ????

GRILLED CASTROVILLE ARTICHOKE TARRAGON REMOULADE

Grilled Castroville Artichoke Tarragon Remoulade image

Provided by Food Network

Categories     appetizer

Time 1h5m

Yield 6 appetizer servings

Number Of Ingredients 13

6 large artichokes
1 cup white wine
3 lemons, halved
1 head garlic, split
4 sprigs fresh thyme
3 tablespoons salt, plus additional for seasoning
1 egg yolk
1 teaspoon Dijon mustard
1 cup olive oil
Freshly ground black pepper
3 sprigs tarragon, finely chopped
3 sprigs chervil, finely chopped
Pernod, optional

Steps:

  • Preheat an outdoor grill to medium heat. (The artichokes can also be done in a grill pan.)
  • Using a heavy-duty pair of kitchen shears, cut the pointy tips off the leaves of the artichokes. Put the artichokes in a large pot and add cold water to cover. Add the white wine, lemons, garlic, thyme and 3 tablespoons salt. Bring to a boil, then simmer about 30 minutes or until a paring knife easily pierces the heart. Remove from heat and allow to cool in the cooking liquid.
  • Meanwhile, make the remoulade sauce. In a food processor or by hand with a whisk, mix together the yolks and mustard. Add the oil in a slow, steady stream until the mixture is smooth and emulsified. Season with salt and pepper. Add the chopped herbs and, if desired, Pernod to taste.
  • Peel off the outer leaves and halve the artichokes. Using a spoon, scrape the choke from the center of the heart.
  • Grill the artichokes, turning once, until heated through and lightly charred on the outside, about 4 minutes. The artichokes can also be served chilled, without grilling. Serve with the remoulade.

SZECHWAN CRISPY BEEF

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 7

1 pound sirloin steak, rinsed and patted dry
Vegetable oil, for frying
1 cup shredded carrots
2 scallions, white part, thinly sliced lengthwise; greens cut on the diagonal, for garnish
1/4 cup stir-fry sauce (recommended: Kikkoman)
1 tablespoon dry sherry
1 tablespoon Vietnamese chili-garlic sauce

Steps:

  • Trim away fat from steak. Slice across the grain into 1/4-inch thick slices. Slice steak again across the grain for matchstick pieces of steak. Set aside.
  • Add 2 tablespoons of oil to a hot wok or large skillet over high heat. Add carrots and stir-fry for 2 minutes. Remove carrots and set aside.
  • Add enough oil to coat the bottom of the wok or skillet. Once hot, add beef strips and stir-fry for 8 to 10 minutes, or until beef is dark and crispy. Be careful as beef will splatter for the first 3 to 4 minutes while it loses its moisture.
  • Remove beef from skillet and drain out all oil, except for 1 tablespoon, if desired. Add scallions and stir-fry for 30 seconds. Add carrots and beef back to skillet. Stir-fry for another 30 seconds. Add stir-fry sauce, sherry, and chili-garlic sauce. Stir-fry for another 30 to 60 seconds. Garnish with green scallions and serve hot.

PHYLLO CRISP OYSTERS WITH REMOULADE

Phyllo Crisp Oysters with Remoulade image

Provided by Food Network

Categories     dessert

Time 50m

Yield 6 hors d'oeuvres

Number Of Ingredients 15

1 hard-boiled egg
1/2 cup creme fraiche
2 tablespoons chopped chives
1 teaspoon capers, chopped
1 tablespoon freshly squeezed lemon juice
Salt and freshly ground pepper
1/3 cup ice water
1 cup store-bought tempura flour
6 Malpeque oysters, scrubbed clean
Shredded phyllo dough (called Kaitafi), as needed
3 cups vegetable oil
1 cup all-purpose flour
Seaweed for garnish
Rock salt, for garnish
Peppercorns, for garnish

Steps:

  • Make the Remoulade: Remove the shell from the egg, and chop it or run it through the large holes of a box grater. Whip the creme fraiche to medium peaks and add the egg, chives, capers, and lemon juice. Season with salt and pepper, to taste. Cover and refrigerate until ready to use.
  • Make the Oysters: Mix the water into the tempura flour and refrigerate. Shuck the oysters and set aside. Reserve half of the shells for presentation and scrub them clean. On a clean work surface, lay out the shredded phyllo.
  • Heat the vegetable oil in a medium-sized pot to 350 degrees F. (To check without a thermometer, drop a small amount of the tempura batter into the oil--it should sizzle quickly rise to the surface.) Adjust the burner to keep the temperature constant.
  • Working with 1 oyster at a time, dredge in flour, dip in the tempura mix, and then roll around in the shredded phyllo to completely cover. Fry the oysters, turning them occasionally with a fork, until lightly browned. Using a slotted spoon, transfer them to a paper towel-lined plate and sprinkle with salt.
  • On a tray large enough to accommodate all of the oysters, form a bed of rock salt, peppercorns, and seaweed. Place the cleaned shells on the tray, spoon a dollop of the remoulade into each one, and top with an oyster.

Categories     appetizer

Time 50m

Yield approximately 2 cups

Number Of Ingredients 14

2 cups mayonnaise, recipe follows
2 tablespoons cornichons or sour gherkins, minced
3 tablespoons capers, minced
2 tablespoons chopped parsley leaves
1 1/2 anchovies, minced
1 tablespoon ketchup
1/4 teaspoon cayenne pepper
4 large egg yolks
1 teaspoon dry mustard
1 lemon, juiced
1 tablespoon water
1 1/2 cups canola oil
3 tablespoons extra virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the remoulade: Chop all the ingredients together and add them to the mayonnaise in the food processor; pulse a few times for them to blend. Refrigerate for 30 minutes before serving.;
  • First make the mayonnaise: In a non-reactive bowl or in a food processor, combine the egg yolks, mustard, lemon juice, and water. Whisk or pulse with the machine to break up the yolks.
  • If you're making the mayonnaise by hand, put the bowl on a damp towel to keep it from moving around while you work. Then drizzle in the oils, whisking constantly, to form an emulsion. If the mayonnaise breaks, stop drizzling and whisk until it comes together again. If you're using the food processor, pour in the oils in a thin stream, with the machine running. Taste and adjust seasoning with salt and pepper and more lemon juice.
