VIETNAMESE GARLIC SHRIMP (PRAWN) NOODLE SALAD



Vietnamese Garlic Shrimp (Prawn) Noodle Salad image

This is a great, fresh salad with a fantastic Vietnamese dressing based on a recipe by Bill Granger, a famous Australia chef. I really like this dressing because it's got plenty of flavour but the fish sauce is mild in it. I love Nuoc Cham, which is the classic Vietnamese dipping sauce that doubles as dressings. But some people find that the fish sauce flavour is too strong. Plus, it's an art form to get the flavour balance right!

12 - 15 medium shrimp ((prawns), shelled and deveined (about 5 - 7 oz / 150 - 200g, excluding shells))
1 tbsp olive oil
2 garlic cloves (, minced)
Pinch of salt and pepper
1/4 cup lime juice
1/4 cup fish sauce
2 tbsp rice vinegar
1 tbsp caster sugar
1 large garlic clove (, very finely chopped)
1 tsp very finely chopped red chili (, adjust to taste (I use birds eye which is spicy))
2.5 oz / 75g dried rice vermicelli noodles ((Note 1))
3 cups iceberg lettuce (, shredded)
1 cup carrot (, cut into fine matchsticks)
1 1/2 cups cucumber (, cut into matchsticks)
1 1/2 cups beansprouts
1/4 cup coriander leaves (, lightly packed)
1/4 cup mint leaves ((ordinary or Vietnamese), lightly packed)

Steps:

  • Combine the Garlic Shrimp ingredients in a small bowl and set aside for 10 minutes.
  • Combine the Dressing ingredients in a small jar, give it a shake then set aside for 10 minutes.
  • Heat a skillet / fry pan over high heat. Add the shrimp, scraping in the olive oil and garlic from the sides of the bowl. Cook for 2 minutes, or until browned and the shrimp is just cooked through. (Note 2)
  • Remove the prawns from the skillet onto a plate.
  • Prepare the vermicelli noodles according to the packet directions. I like to just soak them in hot tap water for a few minutes, this ensures they don't overcook. Then drain the noodles.
  • Arrange the noodles and remaining Salad ingredients on a large plate (like the photo) or toss together in a bowl. Top with prawns (warm or at room temperature). Drizzle over the Dressing (or toss through), or you can serve the Dressing on the side.
  • Serve immediately.

1/2 lb egg noodles (thin Chinese style, or linguini in a pinch)
4 ounces shrimp (small, pre-cooked)
4 ounces snow peas (sliced diagonally)
1/2 lb bean sprouts
1 carrot (cut into matchstick size pieces)
1 egg
5 tablespoons soy sauce
1/2 tablespoon hot pepper sesame oil
1 1/2 teaspoons sugar
1/2 tablespoon sesame oil
1 tablespoon black vinegar
2 tablespoons rice vinegar
3 green onions (minced)
1 tablespoon gingerroot (grated)

Steps:

  • Boil noodles in water for about 10 minutes. Rinse, add 1 tablespoons oil (to avoid sticking). Set aside to cool thoroughly.
  • To 2 cups of boiling water, immerse snow peas, sprouts and carrots. Cook for 1 minute.
  • Rinse vegetables immediately in cold water. Place in refrigerator to cool.
  • Pour beaten egg in a small oiled skillet. Roll the egg to cover the bottom of pan. Cook, then shred into slices.
  • Place noodles, shrimp, cooled vegetables and shredded egg into a bowl. Toss with prepared sauce and toss lightly before serving.

2 tablespoons ketchup
1 tablespoon soy sauce
2 teaspoons cornstarch
1 teaspoon honey
½ teaspoon crushed red pepper
¼ teaspoon ground ginger
1 tablespoon vegetable oil
¼ cup sliced green onions
4 cloves garlic, minced
12 ounces cooked shrimp, tails removed

Steps:

  • In a bowl, stir together water, ketchup, soy sauce, cornstarch, honey, crushed red pepper, and ground ginger. Set aside.
  • Heat oil in a large skillet over medium-high heat. Stir in green onions and garlic; cook 30 seconds. Stir in shrimp, and toss to coat with oil. Stir in sauce. Cook and stir until sauce is bubbly and thickened.

4 1/2 tablespoons fresh lime juice

1 pound peeled deveined cooked medium shrimp
1 cup thinly sliced Japanese cucumbers or Persian cucumbers
1 8-ounce package sugar snap peas, cut crosswise into 1/2-inch pieces (about 2 cups)
1 red bell pepper, thinly sliced
1/2 cup (loosely packed) fresh mint leaves
1/2 cup (loosely packed) fresh cilantro leaves

Steps:

  • Cook noodles in large saucepan of boiling salted water until tender, stirring occasionally, 4 to 5 minutes. Drain. Rinse with cold water; drain well. Using scissors, cut noodles into thirds.
  • Whisk lime juice, fish sauce, chili-garlic sauce, and sugar in small bowl until sugar dissolves. Place shrimp in medium bowl. Add 2 tablespoons dressing; toss to coat.
  • Divide noodles among bowls. Top with cucumber slices and all remaining ingredients. Spoon shrimp with dressing over, and drizzle with remaining dressing.

This is the first gourmet recipe I ever made. The time I ever used hot sauce, ginger root or sesame oil. It is still a favorite. Please don't let the list of ingredients turn you away from this delicious recipe. The recipe is from a magazine ad for Planters Peanut Oil from the '70's. I only use about 2-3 tablespoons Peanut Oil.

1/2 cup scallion, minced
1/2 cup bamboo shoot, minced
3 tablespoons water
3 large garlic cloves, minced
1/2 cup catsup
1 tablespoon soy sauce
2 tablespoons sugar
1 tablespoon cornstarch
1/4 teaspoon hot sauce, I use more
1 1/2 cups planters peanut oil, I use 2-3 tablespoons of the oil
1 lb raw shrimp, shelled and deveined
1/4 teaspoon gingerroot, minced
3 tablespoons dry sherry (optional)
1 1/2 sesame oil

Steps:

  • Combine scallions, bamboo shoots, ginger, garlic and hot sauce in a small bowl.
  • In a second bowl combine sugar, catsup, sherry(if using), soyce sauce and sesame oil.
  • In a third bowl mix cornstarch and water.
  • Heat peanut oil in a wok or large skillet to 400 degrees Fahrenheit.
  • Have a large bowl ready with a strainer in it.
  • Add shrimp to hot oil and cook until pink, no more than 2 minutes.
  • Place in large bowl.
  • Use 2 tablespoons of the cooking oil in the same skillet or wok on high heat.
  • Add scallion mixture and stir fry for 1 minute.
  • Add drained shrimp and stir fry for 30 seconds.
  • Add catsup mixture.
  • Stir fry for 30 seconds.
  • Add cornstarch mixture to pan.
  • Cook and stir until slightly thickened.
  • Serve with steamed rice.

4 ounces oriental noodles or 4 ounces spaghetti, broken up
3 tablespoons honey
3 tablespoons oil
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 tablespoon soy sauce (may use light)
1 1/2 teaspoons gingerroot, grated
1 teaspoon red pepper flakes, crushed (or to taste)
3 cups chicken breasts, cooked and shredded
1 cup red cabbage, finely chopped
4 scallions, finely sliced
2 carrots, shredded
1 red bell pepper, diced
1/2 cup dry roasted peanuts (optional)

Steps:

  • Cook noodles to desired doneness as directed on the package.
  • Meanwhile, in a small bowl combine the oils, honey, vinegar, soy sauce,ginger root and red pepper flakes; whisk together to blend well.
  • Drain noodles; rinse noodles in cold water to cool.
  • In a large bowl, combine cooked noodles, chicken and vegetables.
  • Pour dressing over salad, toss to mix well, garnish with peanuts if desired, and serve.
