CHINESE CHICKEN SKEWERS
A delicious Asian inspired recipe for Chinese Chicken skewers that's going to knock your socks off! Simple but full of flavor!

Steps:
- Cut the chicken into 1 - 1.5" pieces.
- Combine the Marinade ingredients in a bowl.
- Add the chicken and set aside to marinate for at least 30 minutes, up to overnight.
- Thread chicken onto skewers.
- Heat 1 tbsp oil in a large skillet (big enough to fit the skewers) over medium high heat.
- Cook half the skewers for 3 to 5 minutes on each side until deep golden brown, using spatula to press them so they cook through evenly. Repeat with remaining skewers.
- Serve immediately, garnished with finely sliced scallions.

SZECHUAN CHICKEN SKEWERS WITH SINGAPORE COLE SLAW
A great tasting simple meal that is fairly quick to make apart from the marinating time. It is very low in fat but full of flavour.

Steps:
- prep time does not include marinating time.
- For the chicken.
- In a large bowl, storage container or Ziploc bag combine all the marinade ingredients, add chicken and refrigerate for several hours or overnight.
- Thread chicken onto water soaked wooden skewers or metal skewers. Reserve marinade.
- To cook, either grill on BBQ or under the grill about 4-6 inches from heat for 8-10 Min's a side or until chicken is cooked through . Baste several times with reserved marinade.
- For the Singapore slaw.
- Combine lime juice, sugar, soy sauce, chili sauce, curry powder and honey in a jar, shake to combine. Place jar in fridge for several hours or overnight.
- Combine both cabbages, carrots and peppers in a large bowl. Pour dressing over and toss. You may not need to use all the dressing (don't drown it).
- To serve, place slaw on a plate and top with skewers.

- In a separate bowl, combine the last 3 ingredients.

BEAUCHAMP'S STUFFED SZECHUAN CHICKEN
This recipe for a Clay Cooker was given to me by my friend Beauchamp more than 20 years ago. It is a great Winter time meal. The ingredients scared me for at least ten years, but when I did make it, it was a hit with the whole family. This is my favorite recipe to make in the clay cooker. I have used 2 tablespoons of red chili chutney for the pepper paste. I am revising the time and the order of ingredients to make the recipe easier to follow. I allow at least 3 hours to make this, as I am slow. I have a Zaar friend Cheri who has asked me about this recipe. I wish her and Scott the best! After numerous meals, we decided to have a dinner party around this recipe...

- Soak clay cooker in water 10 minutes.
- Make stuffing of egg, scallions, spinach, rice, and ham.
- Rub chicken inside and out with hot pepper paste, and stuff bird.

Steps:
- Place the chicken and cornstarch into a bag or bowl, and toss to coat. Heat oil in a wok or large skillet over medium-high heat. Fry the chicken pieces and garlic, stirring constantly until lightly browned. Stir in the soy sauce, vinegar, sugar and water. Cover, and cook until the chicken pieces are no longer pink inside, 3 to 5 minutes.
- Stir in the green onion, and cayenne pepper, cook uncovered for about 2 more minutes. Serve over white rice.
