CLASSIC BEEF SWISS STEAK



Classic Beef Swiss Steak image

The rich beefy flavour of Blade Steak combines with zippy steak sauce to create this slow-simmer comfort food classic recipe.

1 ½ lb (750 g) Beef Blade or Cross Rib Simmering Steak
Salt and pepper to taste
1 medium Spanish onion, sliced
1 EACH small sweet red and green pepper, cut into strips
½ cup (125 mL) red wine
½ cup (125 mL) tomato juice
1 bottle (172 mL) steak sauce
1 lb (500 g) whole baby new potatoes or regular red potatoes, cut into 2 inch (5 cm) chunks

Steps:

  • Season steak with salt and freshly ground pepper to taste.
  • Heat a large lightly-oiled deep skillet over medium-high heat. Brown steak on both sides; remove from pan and set aside. Add onion and peppers; cook for 4 to 5 minutes, until softened. Stir in wine and tomato juice, scraping up browned bits from pan. Stir in steak sauce and bring to boil; add potatoes and return steak to pan.
  • Reduce heat; cover and simmer for 60 to 90 minutes, or until beef and potatoes are tender.

Pioneer Woman's Swiss steak recipe includes steaks that are simmered in a delicious, tomatoey sauce until they are melt-in-your-mouth tender. They are particularly wonderful with mashed potatoes or noodles, which can soak up the sauce.

2 Ib beef bottom round, trimmed of excess fat
2 tsp kosher salt
1 tsp freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks of celery, chopped
1 tbsp tomato paste
1 (14.5-ounce) can of diced tomatoes
1 tsp smoked paprika
1 tsp dried oregano
1 tbsp Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 F.
  • Slice the meat 1/2-inch thick with the grain and season with salt and ground black pepper on both sides.
  • Fill a pie pan with the flour.
  • Dredge both sides of the slices of meat in the flour until coated.
  • Use a needle meat tenderizer to tenderize the meat until each slice is 1/4-inch thick.
  • Put the slices aside and dredge them with the flour again until coated on both sides.
  • Set a 4 to 5-quart Dutch oven over medium-high heat with the vegetable oil or bacon drippings.
  • Add the steaks to the Dutch oven once the oil begins to shimmer, being careful not to crowd the Dutch oven.
  • Cook until golden brown, about 2 minutes on each side.
  • Once all the steaks have been browned, remove them to a plate.
  • After removing the last steaks from the pot, add the onions, garlic, and celery, and cook them for 1 to 2 minutes.
  • Stir the tomato paste into the mixture. Then, add the tomatoes, paprika, oregano, Worcestershire sauce, and beef broth, and stir well.
  • Add the meat back to the pot, submerging it in the liquid.
  • Place the pot on the middle rack of the oven and cover it.
  • Bake until the meat is tender, about 1 1/2 to 2 hours.
  • Serve and enjoy with your favorite sides.

An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 (2 pound) beef round steak, 1 inch thick
2 tablespoons vegetable shortening
¼ cup water, or as needed
1 (8 ounce) can diced tomatoes
1 onion, minced
½ green bell pepper, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
  • Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.
  • Turn steak pieces over and add tomatoes, onion, and green bell pepper to the skillet. Season with salt and black pepper. Simmer until vegetables are tender, about 30 more minutes.

1 1/2-2 lbs sirloin steaks (round steak)
3 tablespoons extra virgin olive oil
1/4 cup flour
1 lb fresh tomato (canned tomatoes)
1 anaheim chili (fresh, chopped)
1 onion
1 garlic clove
1/4 cup fresh cilantro (fresh, chopped)
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 275.
  • Combine flour, salt, and pepper.
  • Sprinkle steak with flour mixture.
  • Brown meat on both sides in oil, remove from pan and place in prepared oven proof casserole dish.
  • Combine tomatoes, green pepper, onion and garlic in blender or food processor and process until desired consistency.
  • Pour over meat.
  • Cover and cook in 275 degree oven for 1 1/2 -2 hours or until tender.
  • Serve the tomato gravy over rice.

  • Preheat oven to 325° F. In a large resealable plastic bag, combine flour, salt, pepper, and granulated garlic. Add steak, a few pieces at a time, and shake to coat.
  • On the stovetop, heat oil in a cast-iron Dutch oven (or other heavy, oven-safe pot) over medium-high heat. Brown steak in oil on both sides. Remove steaks to a plate.
  • To the same pot, add the onion, celery, bell pepper, and mushrooms. Turn the heat down to medium, and cook and stir for 6-7 minutes, or until vegetables are beginning to soften. If needed, add a little extra oil. Add garlic and tomato paste, and cook for 1 additional minute.
  • Stir in diced tomatoes, beef broth, Worcestershire sauce, thyme, sugar, and celery seed. Scrape the bottom of the pot with a spatula to release all of the flavorful bits. Return steaks to the pot, making sure they are covered by the gravy.
