Delicious Ham and Potato Soup image

This is a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great.

Number Of Ingredients 11

3 ½ cups peeled and diced potatoes
⅓ cup diced celery
⅓ cup finely chopped onion
¾ cup diced cooked ham
3 ¼ cups water
2 tablespoons chicken bouillon granules
½ teaspoon salt, or to taste
1 teaspoon ground white or black pepper, or to taste
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk

Steps:

  • Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
  • In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
  • Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

2 tablespoons butter
1 1/2 to 2 cups onion (chopped)
1 cup celery (chopped)
2 large carrots (peeled and chopped)
2 to 3 cups ham (about 1 pound, diced)
1 clove garlic (minced)
2 cups vegetable broth
1 cup water
4 to 5 cups potatoes (peeled and diced)
3 tablespoons all-purpose flour
1 cup heavy cream
1 cup half-and-half (or whole milk , more if needed to thin)
Dash salt (to taste)
Dash freshly ground black pepper (to taste)
Optional: 2 tablespoons fresh parsley (chopped)
Garnish: green onions or chives (sliced)
Optional: cheddar cheese or cheddar-jack blend (shredded)

Steps:

  • Gather the ingredients.
  • In a large saucepan , melt butter over medium-low heat.
  • Add onion, celery, carrots, and ham.
  • Cook, stirring frequently until onions are tender, about 5 minutes.
  • Add the garlic and continue cooking for 1 to 2 minutes longer.
  • Add vegetable broth, water, and potatoes.
  • Cover and cook for about 25 minutes, until potatoes are tender.
  • Whisk flour into the heavy cream until smooth.
  • Stir into the hot mixture.
  • Stir in the half-and-half or milk. Taste and add salt and pepper, as desired. Continue cooking until hot.
  • Using a potato masher or fork, mash the potatoes slightly to thicken; add more milk if the soup is too thick.
  • Serve the potato soup garnished with parsley, sliced green onions or chives, or a little bit of shredded cheese.

One of my most requested "soup of the day" recipes from when I was in the food business. Swiss cheese gives this soup the most delectable flavor.

Number Of Ingredients 8

2 medium potatoes, peeled & diced
1/2 cup margarine
1/2 cup flour
2 green onions, chopped
2 -3 cups milk
4 slices swiss cheese
2 cups cooked ham, diced
salt and black pepper

Steps:

  • Cook diced potatoes in saucepan with just enough water to cover.
  • When tender, drain the liquid from the potatoes and save.
  • Set both aside while making roux.
  • In large saucepan, melt margarine.
  • Saute the chopped green onions until tender.
  • Remove onion from pan and set aside.
  • Add flour to melted margarine and stir until incorporated.
  • Cook over medium heat until the roux begins to just turn a golden color.
  • Using a whisk, stir in 2 cups of milk and 1 cup of the saved potato liquid.
  • Whisk until smooth and no lumps are seen.
  • Bring just to a boil or until the soup thickens.
  • Add the diced ham, cooked onion and the Swiss cheese. Also, add back in the cooked potatoes.
  • Stir until cheese is melted.
  • Add salt& pepper to your preference.
  • I usually add 1 teaspoons.
  • salt and 1/2 teaspoons.
  • pepper.
  • Stir well.
  • If soup is too thick, you may add the final cup of milk.
  • My bunch likes it thick.

You can never have too many soup recipes. This hearty soup is definitely filling enough to serve as a main course.

1 ½ pounds Yukon Gold potatoes, peeled and diced
1 medium onion, diced
1 medium carrot, diced
1 rib celery, diced
8 ounces smoked ham, diced
3 cloves garlic, sliced
3 tablespoons butter
¼ cup flour
4 cups chicken broth
2 cups water
½ cup heavy cream
salt and pepper to taste
1 pinch cayenne pepper
1 tablespoon chopped fresh chives for garnish

Steps:

  • Melt butter in a stockpot over medium heat until golden brown. Stir in carrot, celery, onion, ham, and garlic; cook and stir for 5-6 minutes, until the vegetables soften and the onions are translucent.
  • Stir in flour; cook for about 3 minutes. Stir in chicken broth, 1 cup at a time. Add water and stir to combine. Turn the heat to high and bring to a simmer. Simmer on medium-low for 15 minutes, stirring occasionally.
  • Taste the soup for salt and add more if necessary. Stir in potatoes; cook for 15 minutes, until potatoes are tender. Skim fat if desired.
  • With a potato masher, mash the soup a few times, leaving plenty of whole chunks of potato. Season with salt and pepper to taste, add cayenne if desired, and add cream. Stir to combine and heat through. Garnish with fresh chives.

This is an easy soup recipe that I've been making since the early 70's. I love the flavors of the ham, swiss cheese and just a hint of nutmeg. This is a perfect soup for a chilly windy day. This was a favorite for my daughter and now she makes it for her family too. Hope you enjoy!

1 10 1/2-ounce can condensed cream of potato soup, undiluted
1 c half and half
3/4 c milk
1 1/2 c diced cooked ham
1/4 c shredded swiss cheese
1/8 tsp nutmeg

Steps:

  • 1. In a medium saucepan over low heat, heat all ingredients, stirring occasionally. Be careful to not over heat. Heat just until hot and cheese is melted. Serve topped with cheese and/or real bacon bits.
  • 2. Note: Don't leave the nutmeg out, I believe this is a key ingredient for the wonderful flavor of this soup.

5 large potatoes (about 4 pounds), peeled and cut into 3/4-inch pieces
1/4 cup butter, cubed
1 medium onion, chopped
1 garlic clove, minced

2 cups 2% milk
1-1/3 cups roasted red pepper Alfredo sauce
1 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon dill weed
1/4 teaspoon pepper
2 cups cubed fully cooked ham
2 cups shredded Swiss cheese
1/4 cup seasoned bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 375°. Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; simmer, covered, 8-10 minutes or until crisp-tender. Meanwhile, in a large skillet, heat butter over medium-high heat. Add onion; cook and stir 6-8 minutes or until tender. Add garlic; cook and stir 1 minute. Stir in flour until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in Alfredo sauce and seasonings; heat through., Drain potatoes; transfer to a greased 13x9-in. baking dish. Layer with ham, cheese and sauce. In a small bowl, combine bread crumbs and butter. Sprinkle over top. Bake, uncovered, 18-22 minutes or until topping is golden brown and cheese is melted. Let stand 5 minutes before serving. To Make Ahead: Can be made a day in advance. Prepare recipe as directed, layering ham, cheese and sauce in baking dish. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Prepare crumb topping; sprinkle over top. Bake as directed.

I added a few more ingredients and now they make this recipe for their families and friends and share the recipe often. I hope you enjoy it!

8 yukon gold potatoes, peeled and chunked
1 cup yellow onion, chopped
1 1/2 lbs cooked ham, chopped
6 tablespoons butter, melted
6 tablespoons flour
salt
pepper
4 cups milk
1 cup half-and-half
2 tablespoons prepared yellow mustard
1 lb Velveeta cheese, cubed

Steps:

  • Peel and chunk potatoes.
  • Boil in salted water until almost done (fork can pierce but not break potato chunk).
  • Chop onion, cube ham and add to potato water during last 5 minutes of boiling time.
  • While potatoes are cooking, in small saucepan melt butter.
  • Stir in flour, stirring constantly.
  • Slowly add the half and half.
  • Stir to remove lumps till smooth and starting to thicken.
  • Slowly add 2 cups milk; stirring constantly to prevent lumps and scorching.
  • Add 1/2 of the Velveeta Cheese.
  • Stir to melt cheese.
  • Add remaining milk.
  • Season to taste.
  • Drain water from potato& onions reserving approximately 1/2 of the water.
  • Place drained ham, potatoes& onions in large stock pot.
  • Add milk mixture, remaining cheese and stir over low heat till cheese is melted.
  • Garnish w/choice of chopped green onions, bacon crumbles and grated cheddar cheese.
