- Prep the chard stalks and leaves: Rinse out the Swiss chard leaves thoroughly. Either tear or cut away the thick stalks from the leaves. Cut the stalk pieces into 1-inch pieces. Chop the leaves into inch-wide strips. Keep the stalks and leaves separate.
- Sauté the garlic and crushed red pepper: Heat the olive oil in a sauté pan on medium high heat. Add garlic slices, crushed red pepper, and coriander seeds (if using), and cook for about 30 seconds, or until the garlic is fragrant.

- Melt butter and olive oil together in a large skillet over medium-high heat. Stir in the garlic and onion, and cook for 30 seconds until fragrant. Add the chard stems and the white wine. Simmer until the stems begin to soften, about 5 minutes. Stir in the chard leaves, and cook until wilted. Finally, stir in lemon juice and Parmesan cheese; season to taste with salt if needed.

SWISS CHARD TIMBALES

Steps:
- Cut stems from Swiss chard. Finely chop stems and leaves separately.
- Heat oven to 375 degrees. Grease six 6-ounce or eight 4-ounce timbale molds or muffin tins. Use 1 tablespoon breadcrumbs to coat them.
- Place bacon in a heavy skillet over low heat. When it turns golden, add chard stems, leeks and garlic. Season with salt and pepper. Cook over low heat until vegetables are tender but not brown. Transfer to a bowl.
- Add chopped Swiss chard leaves to skillet, increase heat to medium-high and cook until leaves are wilted. Add leaves to bowl. Mix in 1/2 cup dry breadcrumbs and egg yolks. Beat whites until they hold peaks but are still creamy. Fold in. Season with salt and pepper and stir in nutmeg.
- Transfer mixture to prepared molds. Sprinkle remaining breadcrumbs on top. Bake 20 minutes. Unmold and serve hot.

GARLICKY SWISS CHARD
There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

- Stack chard leaves on top of one another (you can make several piles) and slice them into 1/4-inch strips.
- Heat oil in a very large skillet (or use a soup pot). Add garlic and red pepper flakes and sauté for 30 seconds, until garlic is fragrant. Stir in the chard, coating it in oil. Cover pan and let cook for about 2 minutes, until chard is wilted. Uncover, stir and cook for 2 minutes longer. Season with salt.

- Sauté until fragrant, about 1 minute.
- Add swiss chard; stir to coat.
