SWISS CHARD WITH BROWN RICE

Swiss Chard with Brown Rice image

Enjoy a healthy vegetarian dish made with Swiss chard and brown rice in Korean style. Sea kelp stock makes rice more flavorful and the slightly spicy chili topping sauce adds an extra kick to the dish. Make sure to soak the brown rice the night before.

Provided by Holly Ford

Categories     Rice Dishes

Number Of Ingredients 12

2 cup Brown Rice (soaked in water overnight)
1 small bunch Swiss chard (trimmed and chopped into bite size pieces)
2 dried sea kelp (dashima)
3 cups water
1 tablespoon wild sesame oil or sesame oil
2 tablespoon Korean chili flakes (gochugaru)
4 tablespoon soy sauce
1 clove garlic finely minced
1 tablespoon sesame oil
2 teaspoon toasted sesame seeds
dashes black pepper
1 green onion finely chopped

Steps:

  • Drain the rice, which has been soaked overnight, from the water and set aside.
  • To make stock, boil 3 cups of water and add the sea kelp. Remove from the heat and let it sit for 10 minutes for the flavor to release. Reserve 2 cups of stock.
  • Ina heavy bottom pot, heat the sesame oil over medium heat, add the Swiss chard and saute until soft. Add the rice and continue to saute for 2 more minutes. Pour the reserved 2 cups of sea kelp stock into the pot. Let it boil, reduce the heat and simmer for 15-20 minutes, covered.
  • Remove from heat and let it sit for another 5 minutes so the remaining heat inside the pot will finish the job.
  • When done, fluff the rice so that they can be incorporated with Swiss chard.
  • Meanwhile make the chili topping sauce by combining all the ingredients.
  • To serve, spoon over the rice in a bowl, top with the sauce, and mix all together to incorporate the rice with the sauce. Serve warm and enjoy!

CHINESE SWISS CHARD STIR-FRY RECIPE

Chinese Swiss Chard Stir-Fry Recipe image

Cook this healthy Swiss chard with Sichuan chili bean paste (doubanjiang) and fermented black beans. This is one of the best ways to eat Swiss chard.Recipe adapted from Every Grain of Rice by Fuchsia Dunlop

Provided by Holly Ford

Categories     Side Dish

Time 20m

Number Of Ingredients 10

1 bunch (14 oz) Swiss chard
3 tbsp oil
1 1/2 tbsp Sichuan chili bean paste (doubanjiang)
2 tsp minced garlic
2 tsp minced ginger
1 1/2 tbsp fermented black beans (douchi) (rinsed )
1/2 cup chicken stock (low sodium)
2 tbsp green onion
3 tbsp chopped celery (optional)
2 tbsp chopped cilantro (optional)

Steps:

  • Snap each stem toward the end, which will allow you to peel away the stringy bits (as you would with celery). Discard the fibrous, stringy layer.
  • Slice Swiss chard, about 1 inch long for the stem part and 2 inches for the leafy leaves. Bring a pot of water to boil. Add some salt. Add the Swiss chard stem pieces and cook for 3 minutes. Add the leafy parts and cook for 1 minute. Drain under cold running water. Gently squeeze the water out from the chard.
  • Heat oil in a wok or skillet over medium flame. Add doubanjiang and stir-fry until it smells delicious and the oil is a rich red. Add garlic, ginger, and fermented black beans and stir-fry for a few moments more until you can smell their fragrances.
  • Add the chicken stock and bring to a boil. Add the chard and stir-fry until the sauce and greens are well mixed and heat through.
  • Sprinkle with green onion and serve immediately with rice. (If using celery and cilantro, add them with green onion.) Serve Swiss chard immediately with rice. It makes a great side dish for any Asian main course.

STIR-FRIED SWISS CHARD AND RED PEPPERS

Stir-Fried Swiss Chard and Red Peppers image

This is particularly beautiful if you can find rainbow chard, those multicolored bunches with red, white and yellow stems. Slice the chard crosswise in thin strips. If the pieces are too thick, they'll be tough.

1 tablespoon peanut oil or canola oil
1 tablespoon minced garlic

1 pound Swiss chard, preferably rainbow chard, stems trimmed, washed in two changes of water and cut crosswise in 1/2-inch strips

Turn the heat to high, and stir-fry for one minute, or until the pepper begins to soften. Add the salt, pepper and sugar. Toss together, and add the soy sauce mixture. GARLICKY SWISS CHARD

Garlicky Swiss Chard image

There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

SWISS CHARD RICE BOWL WITH CHORIZO

Swiss Chard Rice Bowl With Chorizo image

Jessica Koslow, the owner of Sqirl in Los Angeles, started making rice bowls as way to showcase Kokuho Rose brown rice, a particularly nutty and perfumed heirloom variety grown in Northern California. She has a varied roster of preparations, all of which will work with any good quality brown rice. In this recipe, Swiss chard stems and leaves are seasoned with toasted garlic, cumin and smoked paprika before being mixed into the rice; a crisp chorizo patty adorns the top. If you'd rather leave out the chorizo, you can top this with a fried egg or fried tofu instead.

Provided by Melissa Clark

Categories     dinner, lunch, main course

Time 1h

Yield 2 to 3 servings

Number Of Ingredients 14

1 cup medium- or short-grain brown rice
Kosher salt, as needed
2 tablespoons unsalted butter
1 large bunch Swiss chard, leaves and stems separated
2 tablespoons cumin seeds
6 tablespoons extra-virgin olive oil, more as needed
2 fresh (uncured) chorizo sausages, casings removed, meat formed into patties
2 garlic cloves, thinly sliced
2 to 3 tablespoons cider vinegar, as needed
3 tablespoons finely chopped chives
1 teaspoon smoked sweet paprika, more to taste
Black pepper, as needed
1/2 cup parsley leaves, as needed
Fleur de sel, as needed

Steps:

  • In a medium pot, combine rice with 2 1/3 cups lightly salted water. Bring to a simmer over medium-high heat. Reduce heat to low, cover pot and cook until rice is tender, 40 to 50 minutes. Let stand off the heat, covered, for 10 minutes. Toss in 1 tablespoon butter and salt to taste.
  • Meanwhile, cut the chard leaves into 2-inch pieces and the stems into 1/2-inch lengths.
  • Heat a large skillet over medium heat. Toast cumin seeds in the dry pan until they are fragrant and slightly darker in color, 1 to 2 minutes. Pour cumin onto a plate to stop the cooking.
  • Add 1 tablespoon oil to the pan, let it heat for a few seconds, then add chorizo patties and cook until golden on both sides and cooked through, about 7 minutes. Transfer to a paper-towel-lined plate.
  • Add 2 tablespoons oil to the skillet, then add garlic. Cook until golden and crisp, 1 to 2 minutes. Using a slotted spoon, transfer garlic to a paper-towel-lined plate.
  • Add chard stems and a large pinch of salt to the skillet. Cook until stems are almost tender, about 5 minutes. Add chard leaves, another pinch of salt, 1 tablespoon butter and 1 tablespoon vinegar. Cook until leaves are wilted, 2 to 3 minutes.
  • Toss chard with rice, toasted cumin, the remaining 3 tablespoons olive oil, the chives, 1 tablespoon vinegar, the paprika, and salt and pepper. Taste and adjust seasonings if necessary. In a small bowl, toss together parsley, garlic chips, a generous drizzle of oil and large pinch fleur de sel. Divide rice into serving bowls, top with chorizo and sprinkle with parsley-garlic mixture.
