SIMPLE CUSTARD
This is my own alteration of a few different recipes. Not too rich or too sweet as many egg custards can be. Can be served warm immediately or cold.

Steps:
- Cook and stir milk, vanilla extract, and butter in a saucepan over medium heat until simmering. Remove mixture from heat before it comes to a boil.
- Whisk eggs, sugar, and cornstarch together in a bowl until sugar dissolves.
- Set saucepan back over low heat. Pour in egg mixture slowly, whisking constantly, until custard thickens enough to coat the bottom of a spoon, 5 to 10 minutes.

CHAI TEA CUSTARD
Delicious chai tea custard is cool and refreshing. Serve within a day.

Steps:
- Heat milk in a saucepan until just boiling and remove from heat; add tea bag and let sit until tea has steeped, 2 to 3 minutes. Remove tea bag.
- Whisk sugar, eggs, egg yolks, and salt together in a bowl. Pour 1/3 the milk mixture into the egg mixture, whisking constantly, until combined. Pour egg-milk mixture back into saucepan with milk. Cook over medium-low heat, stirring often, until custard thickens and easily coats the back of a spoon, about 10 minutes. Well defined trails should appear when you drag your finger across the back of a coated spoon.
- Stir butter into custard until melted; pour into serving dishes or ramekins. Chill custard in the refrigerator, at least 1 hour.

VANILLA CUSTARD WITH RASPBERRY MASH
Steps:
- In a medium saucepan, heat the milk and vanilla bean to a boil over medium heat. Immediately turn off the heat and set aside to infuse for 10 minutes. In a bowl, whisk the egg yolks and granulated sugar until light and fluffy. Add the cornstarch and whisk vigorously until no lumps remain. Whisk in 1/4 cup of the hot milk mixture until incorporated. Whisk in the remaining hot milk mixture, reserving the empty saucepan.
- Pour the mixture through a strainer back into the saucepan. Cook over medium-high heat, whisking constantly, until thickened and slowly boiling. Remove from the heat and stir in the butter. Pour into individual dessert dishes and chill. Chill at least 2 hours or until ready to serve. (The custard can be made up to 24 hours in advance. Cover with plastic wrap if you are keeping it longer than that.)
- Raspberry Mash: Place 1/4 of a pint of raspberries in a bowl with the sugar and mash it with the back of a fork. Toss in the remaining 1/4-pint of raspberries and gently toss to coat.
- Whip the cream with the sugar and serve on the custard and mash.
CARDAMOM-COFFEE CUSTARD
Steps:
- In a nonreactive saucepan, bring the milk, vanilla bean, crushed coffee beans and cardamom to a simmer over medium heat. Immediately turn off the heat and set aside to infuse for 15 minutes. Meanwhile, in a mixer fitted with a whisk attachment (or using a hand mixer), whip the egg yolks, sugar and salt until pale yellow and fluffy. With the mixer running at low speed, mix in the cornstarch, then very gradually pour in the hot milk mixture, mixing it in as you go.
- Strain the mixture through a fine sieve back into the saucepan, to smooth it and to remove the spices. Whisking constantly, cook over medium-high heat until thick and just boiling. When the mixture thickens, the whisk will leave trail marks on the bottom of the pot and the mixture will have a few large bubbles boiling up to the top. Cook just until no starchy taste or feeling remains. Remove from the heat and stir in the butter until melted. Pour into 4 custard cups, ramekins, or mugs and chill, uncovered, at least 2 hours or overnight. Serve chilled, placing a whole coffee bean in the center of each serving.
SMOOTH SWEET TEA

- Sprinkle a pinch of baking soda into a 64-ounce, heat-proof, glass pitcher. Pour in boiling water, and add tea bags. Cover, and allow to steep for 15 minutes.
- Remove tea bags, and discard; stir in sugar until dissolved. Pour in cool water, then refrigerate until cold.

SWEET-WINE CUSTARD TART

Steps:
- For crust
- Combine flour, sugar and salt in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Blend in enough water by tablespoons to form moist clumps. Gather dough into ball. Flatten into disk. Wrap in plastic and refrigerate until firm enough to roll, about 30 minutes.
- Preheat oven to 400°F. Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. trim overhang to 1/2 inch (reserve dough scraps). Fold overhang in; press dough firmly to create double-thick sides. Freeze crust 10 minutes.
- Line crust with foil. Fill crust with dried beans or pie weights. Bake until crust sets, about 25 minutes. Remove foil and beans and bake crust until golden brown, about 10 minutes. Transfer crust to rack and cool completely. Gently cover any cracks in crust with small bits of reserved dough and press lightly to smooth. (Can be prepared 6 hours ahead. Let stand at room temperature.)
- For Filling:
- Preheat oven to 400°F. Mix sugar and cornstarch in medium bowl. Add 3 eggs, whipping cream and dessert wine and whisk until filling is well blended. Place crust on baking sheet. Pour filling into crust. Bake until filling sets and top browns, about 20 minutes. Transfer tart to rack and cool 15 minutes.
- Remove tart pan sides. Transfer tart to platter. Serve tart warm.

- I start these in my food processor because it is so fast but they can be made just as easily in a large bowl by cutting the butter into the dry ingredients with a pastry blender or just rubbing it into the dry ingredients using your hands like Nan did.
