STRAWBERRY COBBLER

Strawberry Cobbler image

This strawberry cobbler using fresh strawberries is a fantastic summer dessert. The strawberry filling is saucy without being runny, and the strawberries keep their shape and burst with flavor. Serve with ice cream for a real treat. This recipe makes enough for a crowd, or just enjoy leftovers for breakfast the next morning!

Time 1h

Yield 10

Number Of Ingredients 11

⅓ cup white sugar
⅓ cup water
2 ½ tablespoons cornstarch
2 pounds fresh strawberries, hulled and quartered
1 ⅓ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 cup unsalted butter, softened
⅔ cup white sugar
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).

  • Stir flour, baking powder, and salt together in a small bowl. Set aside.
  • Cream butter and sugar in a bowl with an electric mixer until light and fluffy. Beat in eggs and vanilla extract. Add flour mixture and stir with a spatula just until ingredients are combined. Drop batter by rounded tablespoons over the strawberry mixture. Try to cover as much filling as possible.
  • Bake in the preheated oven until topping is golden brown and filling is bubbling, 35 to 40 minutes. A toothpick inserted into the topping should come out clean. Remove cobbler from the oven and let cool. Serve warm or at room temperature.

SWEET STRAWBERRY COBBLER RECIPE - (4.3/5)

Sweet Strawberry Cobbler Recipe - (4.3/5) image

Number Of Ingredients 11

BAKING MIX (if making):
1pint1 pint fresh or frozen strawberries, thawed
1cup1 cup sugar
1cup1 cup baking mix, use mix like Bisquick or make your own
11 egg
1stick1 stick butter, melted
6cups6 cups flour
1/4cup1/4 cup baking powder
2tablespoons2 tablespoons sugar
1teaspoon1 teaspoon salt
1cup1 cup cold butter, chopped into small pieces

Steps:

  • Preheat oven to 350°F. Quarter strawberries and place in the bottom of a square baking dish. In a medium bowl, mix together sugar and baking mix. Stir in egg; mixture will be clumpy. Sprinkle over strawberries in dish. Drizzle butter over baking mix. Bake 35 to 40 minutes, or until browned. Serve with whipped cream if desired. Bisquick Baking Mix: Combine flour, baking powder, sugar, and salt in a large food processor. Pulse until fully incorporated. Add in chopped cold butter and process until texture is like coarse crumbs. Place baking mix in a sealed container and keep in refrigerator. I would try to use it within 6 months, but in my house it would never last that long! You could try to cut the butter in the old fashioned way with a pastry cutter, but I HIGHLY recommend using a food processor it makes it SO much easier. Also, find a good quality sealed plastic container or jar to store. I use one of my larger Lock & Lock containers. You can use this DIY Bisquick in place of any recipe that calls for the kind in the yellow box.

8 cups chopped fresh rhubarb (1/2-inch pieces)
⅓ cup white sugar
2 teaspoons ground cinnamon
1 teaspoon lemon juice
1 (21 ounce) can strawberry pie filling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place 8 large custard cups onto a baking sheet.
  • Chop the chilled cookie dough into 1/4 inch cubes and set aside. Mix the rhubarb with the sugar, cinnamon, and lemon juice. Fill each of the custard cups half full with the rhubarb mixture.
  • Spoon the strawberry pie filling over the rhubarb. Arrange the cubed cookie dough on top of the filling. Leave some open spaces between the cubes, so that the filling does not overflow when baking. There may be some cookie dough left over.
  • Bake in the preheated oven until the dough is fully cooked and starting to brown around the edges, about 45 minutes.
