CINNAMON CHOCOLATE CHIP COFFEE CAKE
Dessert for breakfast? Heck yes! This cinnamon chocolate chip coffee cake with a thick cinnamon swirl is the perfect start to any day.

- Preheat oven to 375°F. Grease and flour a 6 cup bundt pan and set aside. In a stand mixer fitted with a paddle attachment beat the butter and sugar together until light and fluffy. Scrape down the bowl and add in the yogurt, vanilla, and eggs, and mix well.
- In a separate bowl mix together the flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until combined and no clumps of flour remain. Using a rubber spatula, fold in the chocolate chips.
- Meanwhile, using a fork, whisk together brown sugar and cinnamon for the cinnamon swirl. Pour half of the batter into the bundt pan and smooth using the back of a spoon. Sprinkle half of the brown sugar mixture over the batter and swirl into batter using a fork or knife. Pour in the second half of the batter and swirl the rest of the brown sugar mixture over it.
- Bake for 25-30 minutes, or until a knife comes out clean when inserted into the cake. Allow to cool for 10 minutes, then plate and serve for breakfast, lunch, and dinner.
CINNAMON-CHOCOLATE CHIP CHEESECAKE
This is a show-stopper dessert! The cheesecake is so creamy and luscious, studded with chocolate chips and a faint cinnamon flavor. The mascarpone here takes a little edge off of the tang from the cream cheese. The ganache, speculoos cookies, and Hershey's® kisses take it over the top. Perfect for a party!

- Preheat oven to 350 degrees F (175 degrees C). Line the bottom and sides of a 9-inch springform pan with 4 layers of aluminum foil.
- Pulse graham crackers in a food processor until finely chopped. Add butter, 1/4 cup sugar, and 1/2 teaspoon salt; pulse until incorporated, about 5 times. Transfer crumb mixture to the prepared pan and press evenly over the bottom and halfway up the sides.
- Bake in the preheated oven until fragrant and starting to turn crispy, 8 to 10 minutes. Remove and set aside to cool while you prepare the cheesecake filling. Lower the oven temperature to 325 degrees F (165 degrees C).
- Combine cream cheese, mascarpone, and remaining 1 1/4 cups sugar in the bowl of an electric stand mixer fitted with the paddle attachment. Mix on medium-high speed until completely smooth and creamy, 1 to 2 minutes, scraping down sides as necessary. Add sour cream, vanilla, cinnamon and 1/2 teaspoon salt; mix until combined, about 30 seconds. Add eggs, one at a time, and mix on low until just incorporated. Fold in 1 cup chocolate chips.
- Pour cheesecake mixture into prepared cookie crust. Top cheesecake with 1/4 cup of the remaining chocolate chips and place entire pan into a large roasting pan. Transfer to the center rack in oven and carefully pour boiling water into the roasting pan to come up 1 inch on the sides of the springform pan, being careful to not let water get into cheesecake.
- Bake until filling is set but still slightly jiggly in the center, 60 to 65 minutes. Turn oven off and prop the door open. Let cheesecake cool in the oven for 1 hour. Remove from the oven and take cheesecake out of the roasting pan. Set aside to cool completely, about 30 minutes. Cover with plastic wrap and refrigerate until fully chilled, at least 4 hours or overnight.
- Place remaining 1/2 cup chocolate chips in a medium bowl. Microwave heavy cream until hot but not boiling, about 1 minute. Pour over chocolate chips and let sit, undisturbed, for 5 minutes. Add remaining 1/4 teaspoon salt and stir until smooth and shiny. Set aside to cool for 15 minutes.
- While ganache cools, run a sharp paring knife around edges of crust to loosen from pan. Remove sides of springform pan. Run knife around bottom of cheesecake to loosen. Gently shimmy, or use large spatulas, to transfer cheesecake onto a cake stand or serving plate.
- Top cheesecake with chocolate ganache leaving 1-inch uncovered around the perimeter of the cheesecake. Crumble speculoos cookies; sprinkle over ganache. Place candy kisses on top of uncovered perimeter of cheesecake. Slice and serve cold or at room temperature.

This is a delicious, moist cake that my mother has made for years. I don't know the cake's real name, but it is delectable. I have yet to meet a person who does not like this cake. This cake is so good, it doesn't need icing!

Steps:
- Peel, core and slice apples to desired size (I prefer a little thinner than apple pie slices).
- Grease well a 9x13 cake pan or an angel food cake pan.
- Stir flour, sugar, oil, eggs, baking soda, cinnamon, salt and vanilla in a large bowl.
- Stir in apples and chocolate chips.
- Pour batter, which will be very thick and lumpy, into pan.
- Bake at 375 degrees for 1 hour.
- Let cool.
- Store in an air-tight container or cover with saran wrap.
- ***Tips*** if using an angel food cake pan, be very careful when removing it from the pan, it sometimes falls apart. if using a regular cake pan, serve right from the pan. ***If cake seems to be a little dry, place slices of apples on the top of the cake until you are ready to serve.

Steps:
- Combine butter, 1 cup sugar, and eggs in mixing bowl.
- Combine dry ingredients and add alternately with sour cream into bowl.
- Add vanilla.
- Batter will be very thick.
- Spread 1/2 of batter into 9X13 pan.
- In seperate small bowl combine 1/2 cup sugar and cinnamon.
- Add half of cinnamon mixture over top of batter in pan.
- Sprinkle 1/2 of chocolate chips over cinnamon mixture.
- Add remaining batter over top of chocolate chips.
- Add remaining cinnamon sugar and top with remaining chocolate chips and bake in 350 degree oven for 20- 30 minutes.
- Serve warm.

- Heat oven to 350°F. In large bowl, beat 1 1/3 cups sugar, the butter, vanilla and eggs with electric mixer on medium speed, or mix with spoon. Stir in flour and baking powder. Stir in chocolate chips.
- Divide dough into fourths. Shape each fourth into roll, 1 inch in diameter and about 15 inches long, on lightly floured surface. Place rolls about 2 inches apart on ungreased cookie sheet. Flatten slightly with fork to about 5/8-inch thickness. Mix 3 tablespoons sugar and the cinnamon; sprinkle over dough.

- In the bowl of an electric mixer, combine all ingredients (except the cinnamon/sugar and chocolate chips). Beat on low for 1 minute. Scrape down the sides of the bowl and beat for 3 more minutes on medium.
- Pour half the batter into the prepared cake pan and sprinkle with half of the cinnamon sugar mixture. Sprinkle half of the chocolate chips on top. Pour the remaining batter over the first layer, cover with the remaining cinnamon/sugar mixture and finish with the remaining chocolate chips.
