Dragon Noodles image

This 30-Minute Dragon Noodles recipe will Rock your dinner table!. Soft lo mein tossed with tender chicken and crisp veggies served up in a scorching sauce.

12 ounces lo mein noodles
3 tablespoons canola oil (divided)
1/4 cup soy sauce
2 tablespoons rice wine or dry sherry
1 tablespoon chili oil (more according to your heat tolerance)
2 tablespoons Sriracha sauce
2 teaspoons Asian sesame oil
1/4 cup brown sugar packed
1/4 cup water
2 boneless chicken breast halves (cubed into 1/2 inch pieces)
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup green onions (sliced on the diagonal into 1/2 inch pieces)
1 cup carrots (cut into matchsticks)
1 red bell pepper (seeds removed, cut into matchsticks)
4 cloves garlic (minced)
1/4 cup fresh cilantro (chopped)
2 tablespoons toasted sesame seeds

Steps:

  • Cook noodles according to package instructions and drain well.
  • Meanwhile in a small bowl whisk together soy sauce, rice wine, chili oil, Sriracha sauce, sesame oil, brown sugar, and water. Set aside.
  • In a large skillet, heat oil until shimmering. Season chicken with teaspoon salt and pepper. Add the chicken to skillet and cook, over medium-high heat, until chicken is cooked through, 3-5 minutes. Remove to a plate and set aside.
  • In the same skillet, add 1 tablespoon oil and stir fry the green onions, carrots, and red bell pepper, over high heat, just until tender-crisp. Add the garlic to veggies and cook until fragrant.
  • Add the noodles, sauce, and chicken back to the skillet, turning the heat down to low, and heat through. Adjust seasoning. Sprinkle with cilantro and sesame seeds and serve.

This recipe was created in honor of a group of World of Warcraft players who gathered to play WOW together at my house one Saturday. This recipe is meatless but feel free to add any amount of dragon meat you wish to.

1 1/2 tablespoons vegetable oil
1 tablespoon sesame oil
1 large onion, cut into thin wedges
4 garlic cloves, very thinly sliced
1 inch fresh ginger, grated
2 tablespoons shaoxing wine
2 tablespoons chinese black vinegar
2 teaspoons chili sauce or 2 teaspoons sambal oelek
2 tablespoons light soy sauce
2 tablespoons dark soy sauce
2 tablespoons vegetable stock
3 small red chilies, finely chopped
1 red bell pepper, cut into thin strips
1 green bell pepper, cut into thin strips
2 large carrots, cut into coins
3 1/2 ounces green beans, trimmed
3 1/2 ounces shiitake mushrooms
7 ounces snow peas
2 teaspoons honey
1 tablespoon water
18 ounces hokkien noodles, separated or 18 ounces egg noodles
1 1/3 cups dry roasted peanuts

Steps:

  • Mix together the Shaoxing wine, black vinegar, and chili sauce and set aside. Mix together the soy sauces and vegetable stock and set aside.
  • Heat a wok or large skillet until very hot. Add the vegetable and sesame oils and swirl to coat the sides. Stir-fry the onion, garlic cloves, ginger and chilies over high heat for 1 minute, or until the onion starts to soften.
  • Add the bell peppers, carrots, green beans and wine-vinegar sauce and stir-fry for 1 minute. Add the mushrooms and snow peas. Toss together well.
  • Add the honey and 1 tbsp water, toss well and then cover and cook for 1-2 minutes, or until the vegetables are just tender.
  • Add the noodles, nuts and soy sauce mixture. Stir-fry for 30 seconds and then cover and cook for a further 2 minutes, until the noodles are heated through.

This is my Favorite Thai recipe. Simple to make yet elegant in presentation. Just be careful with the oil content. It may seem excessive, but too little oil, and the noodles will stick and you'll have a mess in your wok. You can get away with 5 tbs. or so instead of the full 1/2 cup but you will have to work extremely fast to avoid the sticking. This will serve about 4 as a noodle side dish or 2 as a main course.

8 ounces Thai rice noodles
1/4 cup tamarind paste
1/4 cup water
4 ounces boneless skinless chicken breasts
4 ounces fried tofu
6 tablespoons roasted unsalted peanuts
3 tablespoons fish sauce
2 tablespoons sugar
2 tablespoons lime juice
1/2 cup vegetable oil
1 teaspoon chopped garlic
8 large shrimp, shelled and deveined (5 oz)
2 eggs
1 cup bean sprouts
2 green onions, cut into 1 inch pieces
1/2 teaspoon roasted chile
red pepper, strips
fresh coriander leaves
wedges lime

Steps:

  • Soak the noodles in a good amount of cold water for an hour or more.
  • Place 1/4 cup warm water in a small bowl and combine with the tamarind paste and soak it for at least 15 minutes or more.
  • Slice chicken ino 1/4-inch long strips.
  • If you are having a hard time cutting thinly through fresh chicken meat, place it in the freezer for about 15-20 minutes or so to harden a little bit; then slice it. It should now slice easilly.
  • Set the sliced chicken aside.
  • Now slice the fried tofu into 3/4 inch size cubes.
  • Set the tofu aside
  • Use a blender or food processor to grind peanuts into a coarse meal.
  • Set the Peanut meal aside.
  • Take the reserved tamarind paste in its water. Mash the tamarind in the water and transfer the muddy looking mixture to a strainer set into a bowl. Continue mashing in the strainer with a spoon, forcing as much waterto strain into the bowl as you can, Scrapeing off any juice that clings underneath the strainer.
  • You should have about 5 Tablespoons of tamarind juice. Add to it the fish sauce, lime juice and sugar. Beat the mixture thoroughly to combine and set aside. Discard the solids left behind in the strainer.
  • In a wok or large frying pan, heat oil until it is just about to smoke. Add garlic and stir, and cook for about 30 seconds or so. Then add the chicken and stir-fry for about 1 minute.
  • Now add the tofu and shrimps and stir-fry for another minute. crack the eggs into wok and fry without breaking them up for 1 or 2 minutes.
  • While the eggs are cooking, drain the noodles quickly, then add them to the wok with a quick fold. Stir-fry for 1 minute bringing the mixture from the bottom up.
  • Add reserved tamarind juice, and continue stir-frying, mixing it all together for 1or 2 minutes. The noodles will have shrunk to about half of their original volume and softened up to al dente (cooked but firm not mushy).
  • Add 2/3 of the reserved ground peanuts and stir. Then Add 2/3 of the bean sprouts and all the green onion pieces. Stir-fry for 30 seconds and remove from heat.
  • Transfer Pad Thai noodles to serving platter and sprinkle with roasted chilies and top with the rest of the ground peanuts, the rest of the sprouts, and some strips of red pepper and fresh coriander leaves. Garnish with some of lime wedges on the side and serve immediately while still fresh and hot.

6 boneless skinless chicken breast halves (1-1/2 pounds)
2 cans (10-3/4 ounces each) condensed broccoli cheese soup, undiluted
2 cups whole milk
1 small onion, chopped
1/2 to 1 teaspoon salt, optional
1/2 to 1 teaspoon dried basil
1/8 teaspoon pepper
Hot cooked noodles

Steps:

  • Cut chicken pieces in half; place in a 5-qt. slow cooker. Combine the soup, milk, onion, salt if desired, basil and pepper; pour over chicken. Cover and cook on high for 1 hour. Reduce heat to low; cover and cook 5-6 hours longer or until chicken is tender. Serve over noodles.

For a gluten-free version, toss the shallots in cornstarch rather than flour.

Fried Shallots
Extra-virgin olive oil
4 shallots, thinly sliced into rings
1/4 cup unbleached all-purpose flour
Soup
2 tablespoons extra virgin olive oil
2 bone-in, skin-on chicken breasts
Kosher salt and freshly ground pepper
One 2-inch piece of ginger, peeled and finely chopped, (1 tablespoon)
1/4 tsp. ground cumin
1 tsp. ground tumeric
4 cups Swanson Chicken Broth
8 ounces vermicelli rice noodles or thin spaghetti
1 cup leafy herbs, such as cilantro, dill and basil

Steps:

  • Make the fried shallots: In a small skillet, heat ¼-inch of oil until shimmering. Working in small batches, add a handful of shallots, and cook, turning frequently, until golden, about 1 minute. Using a slotted spoon, transfer fried shallots to a paper towel lined plate.
  • Make the soup: In a medium pot, heat the oil over medium-high. Add the chicken and brown on both sides, about 4 minutes per side. Remove the chicken to a plate.
  • Reduce the heat to medium and add the ginger, turmeric, and cumin. Cook, stirring constantly, until fragrant, about 1 minute.
  • Pour the broth into the pot and return the chicken. Bring to a boil and then reduce to medium-low. Cover and gently simmer until the chicken breasts are just cooked through, about 10 to 12 minutes. Turn off heat. Using tongs or a slotted spoon remove the chicken breast to a plate and let cool slightly. Discard skin and bones and shred chicken meat. Keep warm.
  • Meanwhile, bring a large pot of salted water to a boil. Add the rice noodles or thin spaghetti and cook until al dente per package instructions. Drain.
  • Add noodles to broth and serve brothy noodles topped with pulled chicken, herbs, fried shallots, and black pepper.

2 tablespoons butter
1/4 teaspoon crushed red pepper flakes
1 large egg
1 tablespoon brown sugar
1 tablespoon soy sauce
1 teaspoon sriracha asian garlic sauce (to taste)
1 handful fresh cilantro leaves, chopped
1 green onion, sliced thin

Steps:

  • Boil the noodles and cook al dente according to the package directions.
  • While waiting for the water to boil, prepare the sauce. In a small bowl stir together the brown sugar, soy sauce and sriracha.
  • In a large skillet melt 2 tablespoons of butter over medium-low heat. Add the red pepper to the butter as it melts. Whisk an egg in a bowl and then add to the melted butter. Stir gently and cook through. Once the egg is done cooking; turn off the heat.
  • When the noodles are tender, drain the water and then add them to the skillet with the cooked egg. Then add the prepared brown sugar/sauce. Turn the heat down low to evaporate excess moisture and stir until everything is coated well with the sauce. Sprinkle the sliced green and cilantro leaves on top and serve immediately.

1/4 tsp. crushed red pepper - I used 1/4 tsp. cayenne pepper instead
1 large egg - I used 2 large eggs
1 Tbls. brown sugar - I used 2 Tbls. brown sugar
1 Tbsl. soy sauce - I used 2 Tbls. soy sauce
1 Tbls. Sriracha (rooster sauce)
1 sliced green onion - I used 2 sliced green onions
1 handful fresh cilantro - chopped (optional) I used parsley

Steps:

  • * Cook linguine according to package. * While noodles are cooking prepare the sauce by mixing together the brown sugar, soy sauce and sriracha in a small bowl and set aside to be used at the very end. * In a large skillet melt butter over medium/low heat. * Add the crushed red pepper or cayenne pepper to the butter as it melts. * Whisk the eggs in a small bowl and then add it to the skillet with the melted butter. * Stir and cook as if making scrambled eggs. Then turn off heat. * When linguine is done cooking, drain and add to the skillet with the cooked eggs. * Also add the prepared sauce mixture. * Turn the heat back onto low and stir everything to coat well and evaporate excess liquid. * Sprinkle with green onions and cilantro or parsley. * Serve warm.

This is my absolute FAVORITE when I go to Shakespeare's Tavern in Atlanta. It is served chilled but it has a bite to it so it is the perfect cool, but warm dish. It is very light like a salad almost. I like to trade out the egg noodles for thin spaghetti noodles.

1/4 cup sesame oil
1 tablespoon Chinese chili sauce
2 1/2 tablespoons soy sauce
2 tablespoons juice from pickled ginger
1 1/2 tablespoons lemon juice
2 1/2 tablespoons japanese rice vinegar
2 1/2 tablespoons granulated sugar
1/2 teaspoon kosher salt
1/2 lb very thin fresh Chinese egg noodles
1 grated lemon, rind of
2 tablespoons black sesame seeds, toasted in a dry, heavy skillet until fragrant
3/4 cup thinly sliced scallion
grated red radish
julienne scallion (both green and white)
toasted black sesame seed

Steps:

  • In a bowl combine the oil, chili sauce, soy sauce, pickled ginger juice, lemon juice, rice vinegar, sugar and salt. Whisk to blend and set the bowl aside.
  • In a colander fluff the noodles to separate and untangle the strands. Bring a large saucepan of water to a rolling boil. Add the noodles and swish them gently with chopsticks. Let them cook for 2 minutes or until the noodles are tender but still have some bite. Drain them, plunge them briefly into ice water, then drain again. Shake the colander to remove excess moisture and transfer the noodles to a bowl.
  • Whisk the dressing again to combine it. Toss the noodles with just enough of the dressing to moisten them well, using your fingers to coat and separate the strands. Let the noodles sit for 10 minutes.
  • Taste the noodles. If they seem dry, add a bit more dressing and toss again. Add the lemon rind, black sesame seeds and scallion rings and toss well.
  • Taste the noodles again. They should be bright and sparkly. Cover them tightly and refrigerate up to one day.
  • To serve: Bring the noodles to room temperature. Mound the noodles in a bowl or twirl them in individual bowls. Garnish each dish with grated red radish, scallion and black sesame seeds.
  • Serves 2 or 3 as a main course; 4 to 6 as part of a multi-course meal.
