SWEET & SPICY PECAN BACON
A recipe to make bacon even better. Mild chili powder works fine, but kick it up a knotch and try ancho or chipotle chili powder. Adapted from Mr. Breakfast.

Steps:
- Preheat oven to 425 degrees.
- In a small bowl, mix together the brown sugar and chili powder.
- Prepare 2 large (about 15 x 10-inch) baking pans or rimmed cookie sheets by lining with aluminum foil.
- Arrange the bacon slices side-by-side in a single layer in the 2 pans.
- Bake the bacon alone for about 10 minutes.
- Remove from oven and carefully drain off accumulated fat.
- Sprinkle brown sugar mixture over the slices. Sprinkle slices with chopped pecans.
- Bake for 8 to 10 minutes longer until crisp.
- Transfer bacon to stacked paper towels to drain excess fat and to crisp up a little more.

SPICED PECANS
So simple, so good! Have tried several different combinations of spices, but keep coming back to this one. I use only pecans, but mixed nuts would be fine.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- In a small bowl beat the egg white with the water. Stir in the pecans, mixing until well moistened.
- In a small bowl, mix together sugar, salt, cinnamon, cloves and nutmeg. Sprinkle over the moistened nuts. Spread nuts on prepared pan.
- Bake in preheated oven for 30 minutes, stirring once or twice. Be careful not to overcook and burn the nuts.

PECAN BACON
Steps:
- Preheat oven to 375°. Place bacon in a single layer in a foil-lined 15x10x1-in. baking pan. Bake until lightly browned, 16-18 minutes., Remove bacon from pan. Discard drippings from pan, wiping clean if necessary., In a shallow bowl, mix remaining ingredients. Dip both sides of bacon in brown sugar mixture, patting to help coating adhere; return to pan., Bake until caramelized, 8-10 minutes longer. Remove immediately from pan.

- Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix together Frank's RedHot® and brown sugar together until fully incorporated.
- Arrange the bacon on the prepared baking sheet. Bake for 15 minutes. Using a pastry brush, brush the bacon slices with the RedHot® mixture. Flip the bacon over and brush on the other side. Continue baking until the bacon is crisp and brown, 10-15 minutes more.
- Enjoy!

SWEET AND SPICY PECANS
These pecans have graced our family's Christmas sweet gift platters. I've also sprinkled them over my gourmet salads. They add so much in either case. I can't get enough of them! Lining the pans with parchment paper makes for easier removal of the pecans and easier cleanup!

Steps:
- Stir 1 cup sugar into the hot water in a large bowl until the sugar is completely dissolved. Soak the pecans in the water for 1 hour; drain.
- Preheat an oven to 400 degrees F (200 degrees C). Line two 9x13 inch baking dishes with parchment paper.
- Sift the 2/3 cup sugar, chili powder, and cayenne pepper together in a separate large bowl; add the pecans and toss to coat evenly. Spread the coated pecans in a single layer into the prepared dishes.
- Bake in the preheated oven until the coating on the pecans are bubbly, stirring once, 10 to 15 minutes. Remove the pecans from the pans immediately and spread onto a counter or other flat surface covered with parchment paper to cool.

- Place a wire rack on a foil lined baking sheet. Arrange the bacon on the wire rack and sprinkle with the cayenne pepper, crushed red pepper and black pepper. Lightly pat the brown sugar on top of the bacon to create a thin layer.
- Transfer the baking sheet to the oven and bake for 30-40 minutes or until the brown sugar has melted and the bacon is crisp. Remove from the oven and allow to cool for 10 minutes. Using tongs, transfer the bacon to a parchment lined baking sheet and allow to cool to room temperature. Store in an airtight container for up to 3 days at room temperature.
