Steps:
- In a large resealable bag, combine 1/4 cup of the apricot preserves, the tamari, chili paste and sesame oil. Add the diced chicken and toss to combine. Marinate in the refrigerator for at least 4 hours or up to overnight.
- Preheat a grill pan over medium heat. Thread each skewer in the following order: pepper, chicken, pineapple, chicken, pepper, chicken, pineapple. Repeat until all the chicken is used; reserve the marinade in the bag.
- Drizzle the skewers with the olive oil and place them in the hot grill pan. Cook, rotating often, until the chicken is cooked through and edges of the pineapple are golden brown, about 10 minutes.
- Meanwhile, place the reserved marinade and the remaining 2 tablespoons apricot preserves in a small saucepan and bring to a boil. Baste the skewers with this mixture 2 or 3 times during cooking.
SWEET AND SOUR CHICKEN SKEWERS

- Put the vinegar, sugar, reserved pineapple juice and cornstarch slurry into a small saucepan. Bring to a boil over medium heat, then reduce heat and simmer until the sauce thickens, about 8 minutes. Remove from heat and set aside. Reserve half of the sauce in a small serving bowl to be used as a dipping sauce alongside the skewers.
- Quarter the red pepper and remove the core and seeds. Slice each quarter into 6 pieces. Cut each chicken thigh into 6 pieces.
- Preheat a grill pan or an outdoor grill to medium heat.
- On each of the 8 skewers, place 1 chunk of pineapple, then a piece of chicken thigh, followed by a piece of red pepper. Repeat with another piece of pineapple then chicken, then red pepper. Season skewers with salt and pepper, to taste. Grill the skewers on oiled grill, cooking for 4 minutes on each side. Brush the sweet and sour sauce all over the skewers and grill and additional 2 minutes per side. Remove to a serving dish and serve with the reserved sweet and sour sauce, for dipping.

Steps:
- Marinate cubed chicken in soy sauce for 15 minutes.
- Cut onion into 1 1/2 inch chunks.
- Cut pineapple spears into 6 pieces each.
- Set aside.
- Lightly oil grill rack and heat grill or preheat oven broiler.
- In small bowl, combine plum sauce, orange rind, gingerroot and red pepper flakes and mix well and set aside.
- Alternately skewer chicken, onion and pineapple onto 15 inch metal skewers.
- Discard leftover soy marinade.
- Place kabobs 4 to 6 inches over medium high heat or charcoal grill.
- Brush plum mixture over kabobs.
- Cover grill and cook 4 to 5 minutes.
- Turn and brush again.
- Cover and cook an additional 4 to 5 minutes.
- If broiling, place on broiler pan 4 to 6 inches from heat using above times.

- In a bowl, combine 1/2 cup sweet-and-sour sauce, pineapple juice, teriyaki sauce and garlic. Pour half of marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate about 15 minutes. Set aside remaining marinade., Meanwhile, cut peppers into 1-in. pieces and onions into wedges. Core pineapple; cut crosswise into 1/2-in. slices. Cut each slice into 4-6 wedges., Drain chicken, discarding marinade. On metal or soaked bamboo skewers, alternate meat with onions, peppers and pineapple. Brush kabobs with reserved marinade. Sprinkle with crushed red pepper flakes., Grill, uncovered, over medium heat for 4-5 minutes on each side. Baste with marinade. Continue turning and basting for 10-12 minutes longer or until chicken is no longer pink, adding tomatoes to kabobs during the last 5 minutes of cooking if desired. Serve with rice. Serve remaining sweet-and-sour sauce on the side.

SWEET N SOUR CHICKEN KABOBS
Don't waste money buying the pre made store kabobs that are limited on the amount of great food you can fit on that skewer, so easy to make and taste much better when it's fresh and you cooked it !! If you are using wooden skewers, make sure to soak them in cold water for 20 min before putting on your food. Should make enough for 8 to 10 skewers.

- Heat grill or grill pan on medium heat, assemble chicken, zucchini, pineapple, onion and pepper chunks onto skewers and season with salt and pepper. In a bowl mix ketchup, maple syrup, worcestershire sauce, and hot sauce, keep half of the sauce for later and brush the rest onto skewers. Grill each side about four min or until chunks are lightly charred and chicken is cooked through, then brush rest of sauce onto skewers and enjoy.
