QUICK FRENCH TOAST WITH CARAMELIZED BANANAS
My favorite 'special' breakfast. On the table in only 15 minutes. I like to use large sndwiches rolls cut into 4 long strips, but any bread works. Amounts given are approximate.

Steps:
- Preheat nonstick skillet to 350, medium high.
- In shallow dish, mix egg and milk until well incorporated. Dip bread into egg-milk mixture to coak. For softer french toast, allow to soak until all liquid is absorbed.
- Let about 1 teaspoon butter melt in skillet. Cook french toast in butter about 1 min per side, until just golden brown. Is desired, sprinkle with cinnamon before flipping. (If using strips, cook on all four sides.).
- Remove french toast to warm plate.
- In skillet, combine brown sugar and remaining butter.
- Add banana. Cook just enough to coat all sides with bubbling butter/sugar mixture, and carmelize slightly; less than 2 minutes total.
- To serve, top french toast with caramelized banana and any of the butter/sugar mixture left in the pan.

SWEET SAUSAGE FRENCH TOAST CASSEROLE WITH CARAMELIZED BANANAS
My entry for Ready, Set, Cook contest #3. Was hungry for "breakfast" for supper on night and this just kind of materialized. We like it and hope you do too! Times do not include refrigeration and setting time, so adapt accordingly please.

Steps:
- Grease 8x8 square baking dish.
- Fit 4 bread slices into the bottom of the pan.
- Crumble sausage over the bread in the pan.
- Top with remaining 4 slices bread.
- Beat eggs together then add the milk, cinnamon and ginger.
- Pour over the bread in the pan, covering completely.
- Cover tightly and refrigerate at least 8 hours or up to 24 hours.
- Remove from refrigerator 1 hour before baking.
- Bake at 350°F for 60 minutes or just until the middle is set.
- After casserole has baked for 35 minutes, start making the banana sauce.
- Melt stick of butter over medium heat in a skillet.
- Stir in the brown sugar and heat until bubbly, stirring so as not to stick or burn.
- Reduce heat to low and slice bananas about 1/4 inch thick into the skillet.
- Continue to cook and stir occasionally until bananas are reducing in size and are becoming caramelized.
- Keep sauce warm.
- Remove casserole from oven and let set for 5 minutes.
- Cut into squares and top with warm banana sauce ladled over the top.
EASY CARAMELIZED BANANAS
These are great for breakfast over pancakes, waffles, french toast, crepes, oatmeal, etc. Or serve with low fat ice cream and toasted macadamia nuts for dessert. You can use regular tub margarine or butter in place of the cooking spray. However, this will double the cooking time, and make for a crunchier stickier outside to your banana.

Steps:
- Slice bananas into thick coins or lengthwise strips, depending on your preference.
- Pour sugar onto a plate. Roll bananas in sugar, until completely coated.
- Spray a medium size nonstick pan, and heat over medium high heat. Add bananas and sugar.
- Cook bananas until light to golden brown underneath, about 4-5 minutes (you can lift with a spatula or fork to peek). Be careful not to overcook or burn them (if you smell them browning, or see color in the pan, flip them right away). Keep in mind these times will vary, depending on your stove.
- Gently flip bananas over to brown other side, turning heat down to medium. The second side will brown in about one minute.
- Transfer to a plate that has been coated with cooking spray (otherwise they may stick - they are ooey gooey and sticky!) and serve. Alternately, slide them right onto your ice cream or breakfast food.
- Soak pan in hot water to facilitate cleaning.
CARAMELIZED BANANAS
A delicious little treat to cure your sweet tooth while trying to eat healthy! I found this from a lady at our church and tried it out to my delight.

Steps:
- Peel bananas and cut lengthwise in half.
- Sprinkle sugar over bananas so they're lightly coated.
- Place in oven and broil until the sugar caramelizes.
- Meanwhile in saucepan, combine sugar and a little bit of water just enough to dissolve sugar and place on stove.
- Cook mixture on high heat while constantly stirring until it becomes a light syrup.
- Add the raisins just before taking it off the stove.
- Immediately after the bananas come out of the oven, top with raisin syrup mixture and serve.

FRENCH TOAST WITH RUM BANANAS
Treat your guests or family to a SPECIAL BREAKFAST! Very easy to prepare. The combination of the ingredients are a plus to this entree. If you are cooking for a large crowd, keep cooked toast in a warm oven and top with bananas just before serving. Use firm, but not overripe bananas.

- For French Toast:.
- In a shallow wide bowl, beat eggs, milk, half and half vanilla, cinnamon and salt.
- Melt 1 tablespoon butter in frying pan or griddle over medium heat. While butter melts, soak 2 to 3 slices of bread in batter. Remove bread and let excess drip off.
- Arrange slices in pan, not letting slices touch. Fry one side until golden brown for approximately 5 minutes. Flip over and brown second side. When done transfer to a cookie sheet and keep in a warm oven. Repeat for other slices. Before serving sprinkle with powdered sugar.
- For Rum Bananas:.
- Melt butter over medium heat. When butter starts to turn brown, add bananas and mix gently. Sprinkle brown sugar on top of bananas. Stir until sugar has melted.
- Add rum and cook 1 minute. Add maple syrup and water. Cook until just heated. Remove from heat and use as topping or beside toast.
EASY NIGHT BEFORE FRENCH TOAST RAPHAEL
My family and friends just love this recipe! It's easy, delicious, and you make it the night before so there is no work in the morning. Just pop it in the oven and by the time the table is set and coffee is on, it's ready! I believe this recipe came from the Best of Bridge cookbook. Great served with fresh fruit or yogurt. Can also be cooked in casserole dish on the barbeque so you don't heat up your house on a hot day!

Steps:
- Put half the bread into the bottom of a greased 9 x 11 pan.
- Dot cubed cheese on top.
- Cover with the rest of the bread.
- Combine remaining ingredients and pour over bread mixture.
- Cover and refrigerate overnight.
- Bake at 375 degrees for 45 minutes in the morning.
- Drizzle with more syrup over top when finished baking.
- Serve while hot.
- Another variation is to add a layer of your favourite fresh fruit.
- (peaches, blueberries, apples)on top the first layer of bread cubes.
