BAKED DOUGHNUTS
These aren't like deep-fried doughnuts, but they are a yummy breakfast treat! Shape them however you like - by any other name, they'll taste as sweet!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet, or donut baking pan.
- In a medium bowl, mix sugar, baking powder, baking soda, nutmeg, cloves, cinnamon and flour. Mix buttermilk, eggs, honey and butter in a separate medium bowl, and stir into the dry ingredients. Spoon the mixture onto the prepared pan in doughnut shapes.
- Bake 12 minutes in the preheated oven, until golden brown.

Steps:
- Preheat oven to 325 degrees, usung about 2 tablespoons butter, generously butter a 15x10x1-inch baking pan,set aside.
- In a large bowl stir together the nuts, grandulated sugar, corn syrup, salt, and pepper until well combined; spread in prepared pan.
- Bake for 25 minutes or until golden and bubbly, stirring once or twice; remove from oven; sprinkle generously with raw sugar; toss to coat.
- Transfer mixture to a large piece of foil (Release foil works great), cool completly about 30 minutes; break apart to serve.
- Store nuts in an airtight container at room temperature for up to 2 weeks or in freezer container in freezer up to 3 months.
SWEET & SALTY BAKED DONUTS
These baked donuts are delicious and slightly healthier than their fried counterpart. I like to mimic my favorite from the donut shop, chocolate glaze with chopped peanuts, but the donut by itself is a great blank canvas! If you do not have whole wheat pastry flour on hand, just use all all-purpose flour.

- Preheat oven to 325 and lightly grease your donut pan.
- Mix together dry ingredients. Add remaining ingredients and whisk to combine. Using a piping bag, pipe batter into prepared pan (you can also carefully use a spoon to fill pan).
- Bake 8-11 minutes, or until donuts spring back when touched. Let cool for 5 minutes before removing to a wire rack. During this time, prepare your glaze by microwaving all four ingredients together until smooth.
- Dip the tops of slightly cooled donuts into the glaze and top with chopped peanuts.

- Preheat oven to 350º F.
- In a large bowl, combine dry ingredients with a whisk to mix thoroughly. Combine wet ingredients in a small sauce pan over medium low heat and mix until earth balance is melted. This mixture should NOT get too hot, you should be able to stick your finger in the mixture. It should feel slightly warm.
- Add wet to dry and mix until just combined. It should form a very soft dough.
- Using a tablespoon measure, scoop out dough into your ungreased nonstick mini-donut pan. Smooth out the top of the dough with your fingers, this will make for more even, prettier donuts, but isn't crucial. The dough should sit just below the rim of the pan.
- Bake for 12 minutes. They should not be browned on top, but a tester will come out clean. Invert hot pan over a cutting board or cooling rack to release donuts.
