This recipe is my great-grandmother's - she passed it down to my grandmother who passed it down to me. It's similar to pie but made in a casserole dish.

Cooking spray
4 tablespoons unsalted butter, melted
1/3 cup lightly packed light brown sugar
1/4 cup molasses
3 large eggs, beaten
1/2 cup half-and-half
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 teaspoon grated orange zest, plus 3 tablespoons juice (from about 1/2 orange)
2 pounds sweet potatoes, peeled and finely grated (about 3 medium potatoes; 6 cups grated)

Steps:

  • Preheat the oven to 350˚ F. Lightly spray a 9-inch square baking dish with cooking spray.
  • Whisk together the melted butter, brown sugar and molasses in a large bowl. Whisk in the eggs, half-and-half and vanilla until smooth. Whisk in the salt, cinnamon, ginger, nutmeg, orange zest and orange juice. Fold in the sweet potatoes. Pour the mixture into the prepared baking dish, then smooth the top and cover with foil.
  • Bake until the center is set and the potatoes are soft, about 40 minutes. Remove the foil and bake until caramelized on top, another 10 minutes. Let cool to room temperature, about 30 minutes.
  • To make the whipped cream topping: beat 1 cup heavy cream and 3 tablespoons confectioners' sugar in a chilled bowl with a mixer on high speed until stiff peaks form, about 2 minutes.

Eggnog Whipped Cream, recipe follows
1 cup heavy whipping cream
3 tablespoon confectioners' sugar
1/4 teaspoon ground nutmeg
1/3 cup eggnog

Steps:

  • Preheat the oven to 350 degrees F. Lightly spray a 9-inch square baking dish with nonstick cooking spray.
  • Whisk together the butter with the brown sugar and molasses in a bowl. Whisk in the eggs, half-and-half and vanilla until smooth. Stir in the salt, spices, orange zest and juice. Fold in the sweet potatoes. Pour the mixture into the prepared baking dish, then smooth the top and cover with foil.
  • Bake until the center is set and the potatoes are soft, about 40 minutes. Remove the foil and bake until bubbling and starting to brown on the edges, another 10 minutes. Remove from the oven and allow to cool to room temperature. Serve chilled or at room temperature with the Eggnog Whipped Cream.
  • Add the whipping cream, confectioners' sugar and nutmeg to the chilled bowl of a stand mixer fitted with the whisk attachment (or a chilled large bowl if using a hand mixer) and whisk on high speed until soft peaks form, about 2 minutes. Fold in the eggnog.

3 cups grated raw sweet potatoes
1 cup molasses or 1 cup dark cane syrup
2 teaspoons ground ginger
2 teaspoons baking powder
1 teaspoon salt
1/3 cup vegetable oil

Steps:

  • In a 3-quart saucepan, combine all ingredients and simmer slowly, stirring constantly, for 10 minutes.
  • Pour into well-greased 9-inch baking pan.
  • Bake at 325F for 30 minutes, stirring up every 5 minutes for the first 20 minutes.
  • Smooth down the top and allow to brown.
  • Cut into squares and serve either hot or cold.

1 large sweet potato, cut into chunks
1 cup brown sugar
1 cup butter
⅓ cup sweetened condensed milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 pinch salt
2 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a casserole dish with butter or oil.
  • Place the sweet potato chunks into a large pot and cover with salted water. Bring to a boil; reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and transfer to a large bowl.
  • Mash the potatoes with a potato masher. Add the brown sugar, butter, condensed milk, vanilla extract, cinnamon, and salt to the mashed potato; beat with a wire whisk until fluffy. Crack the eggs into the bowl and continue whisking until the mixture is light in color; pour into the prepared dish.
  • Bake in the preheated oven until golden brown, about 90 minutes.

2-1/2 pounds large sweet potatoes (about 4 large, peeled and shredded)
1/2 cup sugar
1/2 cup light corn syrup
1/2 cup butter, melted
1 tablespoon grated orange zest
3/4 cup all-purpose flour
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°. In a large bowl, combine sweet potatoes, sugar, corn syrup, butter and orange zest. In another bowl, combine flour, nutmeg and cinnamon. 2 1/2 lbs sweet potatoes
1/4 cup melted butter
2 eggs
1/4 cup dark brown sugar, firmly packed
1/2 cup milk
1 1/2 tablespoons vanilla extract
1/4 cup light molasses
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon clove
1 teaspoon grated orange zest (do not include the white pith, which is bitter)

Steps:

  • Preheat oven to 375°F.
  • Cook the potatoes unpeeled until tender throughout.
  • Let cool.
  • Peel and mash the potatoes, then stir in melted butter.
  • In a bowl, beat the eggs, add sugar and beat thoroughly.
  • Add milk, vanilla, molasses, salt, cinnamon, nutmeg, cloves and orange zest.
  • Beat until well blended.
  • Stir into mashed sweet potatoes, then mix until well blended.
  • Place the mixture into a buttered 1-1/2 quart baking dish.
  • Optionally, you may sprinkle the top of the pone with additional brown sugar.
  • Cover with foil and bake for 50 minutes ; uncover, then bake for 10 minutes.
  • Allow the pone to cool completely before serving.

JAMAICAN SWEET POTATO PONE

It's intro - Jamaicans never tire of anything made with sweet potato. This particuar pone, similar to those found in the American South, was inspired by the rich culinary heritage of Africa.

2 lbs sweet potatoes, peeled and sliced
2 teaspoons brown sugar
2 ounces butter
2 1/2 ounces orange juice
2 eggs, large and separated
4 ounces dark rum (light if it is all you have, more if you want)
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 350°F.
  • Cook the sweet potato slices in boiling water for 20 minutes or until tender.
  • Drain and mash with the brown sugar and butter.
  • Stir in the orange juice.
  • Lightly beat the egg yolks and add them to the mixture with the rum.
  • Grease a pie plate.
  • Beat the egg whites with the salt until stiff, but not dry.
  • Gently fold the egg whites into the potato mix.

For some, Jazz Fest can be a religious experience. For locals, it is a yearly pilgrimige and for myself, Sweet Potato Pone is the holy grail. I am still working on the crunchy, crumbly "crust" but this recipe for the filling is the closest I have come to the real deal. If you are ever in the neighborhood of New Orleans during late April or early May, stop by Jazz Fest and try out the Pone. It will be in the same vendor tent as the Greenbean Artichoke Casserole. Or you could just try mine! Cook time includes the time to bake the Sweet Potatoes.

This recipe comes from the 1986 cookbook, I Hear America Cooking, & although some will tell you that 'pone' should be considered a veggie side dish, others will let you know that it's definitely a dessert! Well, research tells me that, whatever else it is, centuries of cooking account for it as a sweet dessert!

1/2 cup brown sugar, packed
1/4 lb unsalted butter
1/4 cup light molasses
1/2 cup orange juice, fresh-squeezed
1 lemon
1 orange, zest of, minced
4 eggs, beaten
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 tablespoon brandy (or rum)
2 cups sweet potatoes, peeled, grated (raw)
2 lemons
3/4 cup granulated sugar
1/4 cup water

Steps:

  • FOR THE PONE: Preheat the oven to 325 degrees F, then butter a 9"x9"x2" baking dish.
  • In a mixing bowl, with a hand-held mixer, cream the sugar & butter, then gradually beat in the molasses & orange juice.
  • In another container, from the 1 lemon, mince the zest & set it aside while removing & discarding the white pith from the lemon. After that, seed the lemon & chop the pulp fine, before adding this pulp to the sugar/butter mixture, along with the orange zest, eggs, seasonings & brandy, mixing well to combine.
  • Add the grated sweet potatoes & mix well, then smooth this mixture into the prepared baking dish & bake for 1 hour.
  • FOR THE CANDIED LEMON SLICES: Meanwhile, cut the 2 lemons crosswise into 1/8-inch slices & remove the seeds.
  • In a covered pan, boil the sugar with the water for 5 minutes, then remove the cover & boil rapidly until syrup reaches the soft-ball stage (236 degrees F), then remove the pan from the heat.
  • Dip lemon slices in the syrup & put them on a baking sheet to dry until ready to use.
  • As soon as the pone is done, transfer the entire pone square to a rack to cool.
  • When cooled, cut into 12 bars & top each with a candied lemon slice.
