SWEET POTATO FRITTERS WITH LEMON CHICKEN



Sweet Potato Fritters With Lemon Chicken image

I find it hard to eat only one, so I usually quarter the recipe and make only one. Just in case I'm tempted to eat more.

600 g chicken breast fillets
2 tablespoons lemon juice
600 g sweet potatoes, peeled and grated
5 shallots, finely chopped
2 teaspoons fresh ginger, minced
2 eggs, lightly beaten
1/3 cup flour
1/3 cup Thai sweet chili sauce
4 tablespoons coriander leaves (optional)

Steps:

  • Coat a large non-stick fry pan with cooking spray and cook the chicken breast fillets for 5 minutes each side. Pour over the lemon juice during the last minute of cooking. Transfer to a plate, cover with foil and keep warm while you make the fritters.
  • Place the grated sweet potato, shallots and ginger in a large mixing bowl and combine. Stir through the egg and flour.
  • Recoat the pan with cooking spray and heat. Scoop a quarter of the mixture into the pan and form into a circle about 12cm in diameter. Cook over a low heat for 4 minutes on each side or until golden and cooked. Remove from the pan and keep warm while cooking the remaining fritters.
  • Divide the fritters between 4 serving plates. Cut the chicken into slices and place on top of the fritters. Spoon over the sweet chili sauce and scatter with coriander, if using.

Canola oil
1 large sweet potato (about 1 cup)
4 tablespoons melted salted butter
1 egg
1/4 cup bread crumbs
2 tablespoons all-purpose flour
Salt and freshly ground black pepper
1/4 cup chopped chives (reserve 1 tablespoon for sour cream topping)
1/2 cup fresh or thawed frozen corn
1 cup sour cream

Steps:

  • In a shallow pan, heat oil to 350 degrees F.
  • Score sweet potato with a fork and microwave on high for 6 minutes or until cooked through. Let cool. Cut sweet potato in half, scoop out the flesh, and place it into a mixing bowl with the butter. Mash well. Add egg, bread crumbs, flour, salt, and pepper and mix well. Add the chives and corn and mix gently. Using 2 spoons to shape, scoop mounds into hot oil, cooking on both sides, in batches, until golden brown. With a slotted spoon or spider, remove fritters from oil and place on paper towel to dry. Mix sour cream, reserved chives, salt and pepper, to taste, and place a small dollop on each fritter when ready to serve.

1 lb potato, peeled and cut into 2 " pieces (russet or Idaho)
2 teaspoons salt, divided
1 1/2 cups chopped cooked chicken
1/2 cup shredded parmesan cheese
1 large egg, lightly beaten
1/4 cup sour cream
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/4 teaspoon grated fresh lemon rind
2/3 cup fine dry breadcrumb
vegetable oil, for frying

Steps:

  • Bring potatoes, 1 teaspoons salt, and water to cover to a boil in a small saucepan. Cook 20 minutes or until tender; drain and mash potatoes.
  • Stir together mashed potatoes, remaining 1 teaspoons salt, chicken, and next 7 ingrdients(through lemon rind). Chill mixture 1 hour. Shape into 2" balls.
  • Place dry breadcrumbs in a shallow dish. Roll balls in breadcrumbs, coating evenly.
  • Pour oil to a depth of 4" into a Dutch oven or fryer; heat to 370*F. Fry fritters, in batches, 2 minutes or until golden brown. Drain on wire racks on paper towels, and serve immediately. Serve with Lime Cayenne Mayonnaise(recipe posted separately).
