ASPARAGUS GUACAMOLE

To trim down traditional guacamole, I experimented with asparagus instead. My husband and our three hungry sons say this chunky low-fat version is as tasty as the original. I love the guilt-free dipping. -Judi Hammer of Litilz, Pennsylvania

Number Of Ingredients 11

1 pound fresh asparagus trimmed and cut into 1-inch pieces
1/3 cup chopped onion
1 garlic clove
1/3 cup chopped seeded tomato
2 tablespoons reduced-fat mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt
3/4 teaspoon minced fresh cilantro
1/4 teaspoon chili powder
6 drops hot pepper sauce
Assorted raw vegetables and tortilla chips

Steps:

  • Place 1/2 in. of water and asparagus in a saucepan; bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until tender. Drain; , Place asparagus in a blender. Add onion and garlic; cover and process until smooth. , In a small bowl, combine the tomato, mayonnaise, lemon juice, salt, cilantro, chili powder and hot pepper sauce. Stir in the asparagus mixture until blended. Serve with vegetables and chips. Refrigerate leftovers; stir before serving.

24 spears fresh asparagus, trimmed and coarsely chopped
½ cup salsa
1 tablespoon chopped cilantro
2 cloves garlic
4 green onions, sliced

Steps:

  • Place the asparagus in a pot with enough water to cover. Bring to a boil, and cook 5 minutes, until tender but firm. Drain, and rinse with cold water.
  • Place the asparagus, salsa, cilantro, garlic, and green onions in a food processor or blender, and process to desired consistency. Refrigerate 1 hour, or until chilled, before serving.

2 tablespoons olive oil
2 tablespoons fresh lime juice
1/4 bunch cilantro, no long stems
1 jalapenos or 2 serrano chilies, seeded
1 lb frozen peas, thawed
1/4 teaspoon cumin
1/4 teaspoon salt
1/4 medium red onion, finely diced

Steps:

  • In a food processor, process onion until finely diced; remove and set aside.
  • Add oil, lime juice, cilantro and pepper until roughly pureed.
  • Add peas, cumin and salt; blend until smooth, there will still be a few lumps, leave them.
  • Remove mixture to bowl and stir in onion.

This dairy-less guacamole recipe was printed in the local newspaper recently. Taste starts off sweet then heads to spicy-hot rather quickly. It was delicious on a tamale we ordered at a 'Mom and Pop-style' taco stand! Beautiful, mean and very green.

1 3/4 cups frozen baby peas, thawed (I used organic frozen peas from Stahlbush Island Farms here in Oregon)
1 large Hass avocado, peeled and pitted
1 small red onion, chopped
2 fire roasted jalapeno chilies (read *Note below)
1/4 cup lime juice
2 roasted garlic cloves, minced (can use raw garlic if you prefer)
1/2 teaspoon ground cumin (I roasted cumin seeds with the jalapenos but only the last 4-5 minutes)
1/4 teaspoon salt (to taste)
2 tablespoons chopped fresh cilantro
fresh cilantro
3 whole green peas

Steps:

  • *Note: I fire roasted two fresh green jalapenos on a stove top grill on medium-high heat. Placed them in a paper bag to "sweat" for about 15-20 minutes then removed the skin, seeds and membrane and chopped. Takes longer to do (than opening a can of fire roasted chilies), but the taste was good and fresh. Removing the seeds and membrane is optional if you want the guacamole spicier.
  • In a food processor, combine the peas, avocado, onion, chilies, lime juice, garlic, cumin and salt.
  • Process until smooth, scraping down the sides of the processor bowl with a rubber spatula as needed.
  • Add the cilantro and pulse until just blended.
  • Adjust seasonings if necessary.
  • Garnish with fresh cilantro and a few whole green peas.
  • Yield is estimated.

Number Of Ingredients 14

6 thick spears asparagus, peeled
4 tablespoons unsalted butter
6 ounces fresh morel or cremini mushrooms, cleaned and cut into bite-size pieces
2 1/4 teaspoons kosher salt
Freshly ground pepper to taste
Up to 8 cups chicken broth, homemade or low-sodium canned
2 tablespoons extra virgin olive oil
4 shallots, peeled and minced
2 cloves garlic, peeled and minced
1 pound Arborio rice
1/2 cup dry white wine
1/4 cup cooked tiny peas
3 tablespoons minced fresh chives
1/4 cup fresh chervil leaves

Steps:

  • Cook the asparagus in boiling, salted water until tender, about 10 minutes. Drain and refresh under cold running water. Cut diagonally into 1/4-inch slices and set aside. Heat 1 tablespoon of butter in a medium skillet over medium heat. Add the mushrooms and saute until soft, about 10 minutes. Season with 1/4 teaspoon of salt and pepper and set aside.
  • Bring the broth to a boil in a medium saucepan, reduce heat and keep at a low simmer. Meanwhile, in a large saucepan, heat 2 tablespoons of butter with the olive oil over medium-low heat. Add the shallots and garlic and saute until soft, about 5 minutes.
  • Stir in the rice with a wooden spoon, turning to coat well. Cook, stirring constantly, for 4 minutes. Stir in the wine, raise the heat to medium and cook until the wine is absorbed, about 1 minute.
  • Begin adding the broth 1/2 cup at a time, stirring constantly and adding more broth as it is absorbed by the rice. Adjust heat so rice and broth cook at a steady simmer. After about 15 minutes, the rice should be somewhat tender and some broth should be left.
  • Cook for another few minutes, adding more broth as needed, until the rice is al dente. Stir in the asparagus, the mushrooms, the peas, the chives and 1 tablespoon of butter. Season with 2 teaspoons of salt and pepper. Divide among 6 shallow bowls and garnish with the chervil. Serve immediately.

1 (16 ounce) can asparagus, cuts drained
1 (8 ounce) jar sliced mushrooms, drained
1 can cream of mushroom soup
1/2 cup cracker crumb
1 cup shredded cheddar cheese

Steps:

  • In a greased casserole dish, layer half of the peas, asparagus cuts, mushrooms, soup, cracker crumbs, and cheddar cheese.
  • Repeat layers.
  • Bake at 350 degrees for 30 minutes.

1 pound medium thick fresh asparagus
2 tablespoons fresh lime juice
2 tablespoons finely chopped onion
2 tablespoons very finely minced sweet red pepper
1 small canned green chili, seeded and minced (about 1 tablespoon), or minced fresh green chili to taste
1 tablespoon minced fresh coriander leaves
Pinch of salt
Cayenne pepper to taste

Steps:

  • Wash asparagus, snap off the ends and simmer in water until tender, about 20 minutes. Drain and allow to cool. Cut off the tips and reserve them.
  • Cut the spears into half-inch pieces and process to a smooth puree in a blender or food processor.
  • Fold in remaining ingredients. Either fold in the tips or use them to garnish the dip. Serve with corn chips or cut raw vegetables.
