2 (15 ounce) cans black-eyed peas, drained
2 tablespoons canola oil
1 small yellow onion, minced
1 teaspoon ground coriander
1/2 teaspoon garlic, finely grated
1/2 teaspoon ginger, finely grated
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne
1/2 teaspoon ground cumin
1/4 cup tomatoes, minced
1 cup hot water (2 c if using dried peas)
1/2 teaspoon salt, to taste
1/2 teaspoon sugar
1 cup coconut milk
2 tablespoons cilantro, minced
1 tablespoon lemon juice

Steps:

  • in large saucepan, heat oil over medium-low heat and saute the onion until it turns dark brown, about 8 minute add coriander, garlic, ginger, turmeric, cayenne, and cumin and stir for 2 minute add tomato and stir over low heat until it disintegrates.
  • add peas and mix well. pour in the water, add salt and sugar, and bring to a boil. turn heat down to low, cover, and simmer until peas are cooked through, about 10 minute (20 minutes if using dried peas). stir in coconut milk and simmer uncovered for another 8-10 min., again allowing the flavors to come together.
  • add cilantro and lemon juice, simmer for 1 minute more, and remove from heat. serve hot.

Curried Black-Eyed Peas image

Rich, hearty black-eyed peas simmered in coconut milk get a boost of spice from habanero pepper and curry powder.

6 garlic cloves, thinly sliced
2 small yellow onions, diced
1 habanero, stemmed, seeded, and super-small dice
1⁄4 cup olive oil, plus more as needed
1 Tbsp. salt, plus more as needed
3 Tbsp. curry powder
3 cups dried black-eyed peas (soaked overnight)
2 cups water
1 (13.5-ounce) can unsweetened coconut milk
1 tsp. black pepper
1 bunch cilantro, chopped
Juice of 2 limes

Steps:

  • In a large pot over medium-high heat, sauté the garlic, onion, and habanero with the olive oil and a pinch of salt for 5 to 7 minutes.
  • Stir in the curry powder and cook until the onions are nicely coated, then add in the beans and water. Turn down the burner to medium-low, cover the pot, and cook for about 20 minutes.
  • Stir in the coconut milk, turn down the burner to low, and simmer with the pot cover off for 30 minutes or until the beans are tender.
  • Stir in the 1 tablespoon of salt and add the pepper, cilantro, and lime juice. Taste your beans! Add more salt if you like, keep simmering, tasting your beans until they are seasoned and cooked through to your liking.

1 cup dried black-eyed peas or two 15-ounce cans, drained
2 tablespoons, canola oil
1 small yellow onion, minced (about 1 cup)
1 teaspoon coriander seeds, finely ground
1/2 teaspoon finely grated garlic (about 1 large clove)
1/2 teaspoon finely grated ginger (about a 1-inch piece)
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne (I always start with the half the suggested cayenne, and then decide if it needs more. Mine didn't.)
1/2 teaspoon cumin seeds, finely ground
1/4 cup minced tomato (1 small tomato)
2 cups (or 1 cup if using canned peas) hot water
1/2 teaspoon salt, or to taste if using canned peas
1/2 teaspoon sugar
1 cup canned coconut milk
2 tablespoons minced cilantro leaves
1 tablespoon lemon juice

Steps:

  • If using dried black-eyed peas, rinse and soak them in enough water to cover for 6 to 8 hours. Drain. In a large saucepan, heat the oil over medium-low heat and saute the onion until it turns dark brown, about 8 minutes. Add the coriander, garlic, ginger, turmeric, cayenne and cumin, and stir for 2 minutes. Add the tomato and stir over low heat until it disintegrates. Add the peas and mix well. Pour in the hot water, if using, add the salt and sugar, and bring to a boil. Turn the heat down to low, cover, and simmer until the peas are cooked through, about 20 minutes. If using canned peas, simmer for only 10 minutes (it is essential to simmer the canned peas, too, so that all the flavors blend better). Stir in the coconut milk and simmer uncovered for another 8 to 10 minutes, again allowing the flavors to come together. Add the cilantro and lemon juice, simmer for 1 minute more, and remove from heat. Serve hot.

GOAN BLACK-EYED PEAS (SLOW COOKER)



Goan Black-Eyed Peas (Slow Cooker) image

From "The Indian Slow Cooker" by Anupy Singla. Goa was originally colonized by the Portuguese. Coconut milk is used frequently in Goan cuisine. This was a really delicious meal, although I am not sure about the quantity of water, see Note. Use a 5 qt slow cooker for full amount, a 3 1/2 qt cooker if you halve the recipe.

3 cups dried black-eyed peas, sorted rinsed and drained
2 small tomatoes
1 large onion, peeled and cut into large chunks
2 inches piece ginger, peeled and cut into pieces
2 garlic cloves, peeled
4 -6 Thai peppers (or serrano or cayenne peppers)
2 tablespoons ground coriander
2 tablespoons salt
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 tablespoon brown sugar
9 cups water, see Note
1 (14 ounce) can coconut milk
fresh cilantro (garnish)

Steps:

  • Put the black-eyed peas in the slow cooker - no need to presoak.
  • Peel and chop the tomatoes (or do what I did - use canned).
  • Grind together the tomatoes, onion, ginger, garlic and chiles in a food processor (I used my stick blender and a deep-ish bowl). Add to slow cooker.
  • Add the coriander, salt, turmeric, cumin and sugar to the slow cooker.
  • Add the water and give it a stir. Cook on High for 7 hours. (Mine were done in about 5 hours). (See note about water. One reviewer reports using 6 cups and that that was enough.).
  • Just before it's done, stir in the coconut milk and let it heat through, about 10 minutes.
  • Garnish with cilantro. Serve with bread,naan, or rice, or on its own as a soup. (I strained off some of the liquid and served over rice).
  • NOTE - I thought this was too much water. My peas cooked much more quickly than indicated, perhaps they were very fresh and just did not absorb as much water. When making again, I will reduce water and report back.

  • Prep your ingredients: Finely chop 1 large white onion. To do this, start by cutting it in half through root end. Trim top, then peel away skin and first tough layer; discard. Leave root end on. Starting close to the board and moving upward, thinly slice through onion parallel to cutting board, leaving root end intact. Make thin lengthwise slices across onion, leaving root end intact. Slice onion crosswise, working from top to bottom to create small cubes. Run your knife through once more if any pieces are too big. You should have 2–3 cups chopped onion.
  • Smash, peel, and finely chop 4 garlic cloves. Peel one 1" piece ginger with a spoon, then slice into planks. Stack 2 planks at a time and cut into thin matchsticks. Set aside. Remove ribs and stems from 1 bunch Tuscan or curly kale and discard. Tear leaves into 2" pieces. Rinse three 15.5-oz. cans black-eyed peas in a fine-mesh sieve.
  • Heat ¼ cup extra-virgin olive oil or vegetable oil in a medium pot over medium-high. Cook onion and garlic, stirring often, until golden, 10–12 minutes.
  • Add 2 Tbsp. plus 1½ tsp. ground coriander, 1 tsp. ground turmeric, 1 tsp. garam masala, and ½ tsp. cayenne powder to pot and cook, stirring constantly, until incorporated and fragrant, about 3 minutes. Add one 14.5-oz. can crushed tomatoes, bring to a simmer, and cook, stirring often, until sauce darkens and thickens, 10–14 minutes. The sauce should look jammy and will start to stick to the bottom of the pot.
