Sweet and Tangy Thai Cucumber Salad image

Learn how to make an easy Thai cucumber salad. This salad is loaded with crisp cucumbers, robust red onions, and tons of toasted sesame seeds. The dressing is sweet and tangy and so refreshing!

¼ cup rice vinegar
3 tablespoons sugar
½ teaspoons salt
2 teaspoon EACH: toasted sesame oil AND fish sauce
¼ - ½ teaspoon red pepper flakes
1 large hothouse (English) cucumbers, thinly sliced
½ red onion, thinly sliced
⅓ cup chopped peanuts (optional)
1 tablespoon toasted sesame seeds

Steps:

  • DRESSING: If you aren't the biggest fan of fish sauce, start with 1 teaspoon instead of two. Combine the ingredients for the dressing in a small bowl and whisk until the sugar dissolves. Set aside.
  • THAI CUCUMBER SALAD: Combine the ingredients for the salad (except the peanuts) in a medium bowl. Pour the prepared dressing on top and stir so all the cucumbers are evenly coated in the dressing. Cover the bowl with plastic wrap or a lid and allow the salad to marinate in the refrigerator for roughly 15-20 minutes or up to 1-2 hours. Add the peanuts to the top right before serving.

  • Whisk together the tamarind juice, cilantro, peanuts, rice vinegar, brown sugar, fish sauce, red pepper flakes, sesame oil, and ginger in a large bowl. Stir in the cucumber. Cover and refrigerate for 10 minutes before serving.

Table salt and ground black pepper
2 tablespoons chopped unsalted peanuts

Steps:

  • Whisk together rice vinegar, lime juice, fish sauce, Thai sweet-chili sauce and sambal in a medium mixing bowl. Add the sliced cucumbers and scallions and toss to coat with the dressing. Season to taste with salt and pepper. Set aside for about 10 minutes to allow the flavors to blend. Drain any excess liquid that may have accumulated, then add the chopped cilantro, reserving a bit for garnish. Toss the salad lightly and transfer to a serving dish. 1/2 cup white vinegar
1/2 cup water
1/2 cup sugar
1 teaspoon salt
1 large cucumber (about 12 oz)
1/4 cup red onion, coarsely chopped
1/3 cup dry roasted salted peanut, finely chopped
3 tablespoons fresh cilantro, coarsely chopped
fresh cilantro leaf

Steps:

  • In a small saucepan, combine vinegar, water, sugar, and salt and boil gently over medium heat. Stir occasionally to dissolve the sugar and salt. After about 2 minutes, when the syrup is clear and slightly thickened, remove from heat and cool to room temperature.
  • Peel the cucumber and slice lengthwise in quarters. (You can remove the seeds if you want to.) Slice these strips into 1/4 inch thick triangles.
  • In a bowl, combine the cucumbers, cooled vinegar mixture, onion, and cilantro and mix well.
  • Use a slotted spoon to serve into individual dishes. Sprinkle servings with the chopped peanuts and cilantro leaves.

1/4 cup dry roasted peanuts, crushed
1/4 cup fresh cilantro, chopped

Steps:

  • Place sliced cucumber on a platter.
  • Meanwhile combine vinegar, sugar, water and salt in a small saucepan and heat until sugar and salt are dissolved.
  • Remove from heat and allow to cool.
  • Place shallots and chili pepper in vinegar mixture and stir.
  • Pour mixture over cucumbers just before serving and sprinkle with peanuts and fresh cilantro.
  • Don't be concerned about the strong smell when heating the vinegar.
