1 medium carrot
1 lebanese cucumber, halved and seeded
16 slices smoked salmon (about 300g)
1 large avocado, sliced
4 spring onions, sliced
16 round rice paper sheets (16cm)
1/2 cup sweet chili sauce
1/4 cup lime juice
2 tablespoons chopped fresh coriander
2 tablespoons chopped fresh mint leaves

Steps:

  • Cut carrot and cucumber into long thin strips.
  • Place 1 roll of rice paper in a bowl of warm water until just softened; lift from the water carefully and place on a board.
  • Place a slice of salmon, a slice of avocado and a little of the carrot and cucumber and onion on one end of the sheet.
  • Roll once, fold in sides and roll up.
  • Repeat with the remaining ingredients and serve with Dipping Sauce.
  • Dipping sauce- combine all ingredients in a small bowl.

These are famous sweet Filipino snacks sold in sidewalks. Very simple to make and a traditional comfort food for many households. Basics would just be the bananas, sugar and wrapper but adding the jack fruit makes all the difference and is preferred by most. Note: There are different types of spring roll wrappers. Get the non-translucent ones, if ever.

6 plantains, ripe and each cut lengthwise
12 spring roll wrappers, non-translucent or 12 egg roll wrappers or lumpia skins
3/4 cup dark brown sugar
6 slices jackfruit, cut lengthwise (optional)
1 teaspoon cinnamon (optional)
1/4 cup water
1 teaspoon starch
1 cup oil, for deep frying

Steps:

  • place a sliced banana 1 1/2 inch from the bottom edge of a spring roll wrapper, sprinkle it with some sugar and cinnamon, and top it with a sliced jack fruit.
  • seal the sides and roll the wrapper, sealing the top as well with water/starch mixture.
  • In the meantime, heat oil in non-stick wok(so sugar doesn't stick) until it's sizzling hot with the leftover sugar and fry the wrapped bananas until it's golden brown, spooning (or use spatula) the sugar from the pan on the wrapper to give it a bit of caramelized coating.
  • Drain on paper towels or sieve.
  • Serve while still warm and the wrapper's crunchy.

These are my kids (and ours!) new favourite food! They are healthy and delicious, and can be made ahead and kept in the fridge until you are ready to serve.

12 rice paper sheets
1 carrot, cut into ribbons
1 red capsicum, cut into strips
200 g shaved ham or 200 g smoked salmon
1 avocado, sliced
2 spring onions, cut into strips
4 mushrooms, thinly sliced
sweet chili sauce, to dip
soy sauce, for dipping
thai barbecue sauce, for dipping

Steps:

  • Soak the rice paper for 30 seconds in warm water.
  • Arrange a selection of the listed ingredients in the centre of the paper.
  • Fold the edges over, then roll into a log.
  • Serve chilled, with a selection of dipping sauces.

1 package rice paper, wrappers
1/4 cup cilantro leaf
1/2 cup julienned red pepper
1/2 cup julienned yellow pepper
1 cup snow peas, stringed and julienned
1 cup bean sprouts
1/4 cup pickled ginger
1 teaspoon sesame oil
1 teaspoon rice wine vinegar
1 cup cooked vermicelli

Steps:

  • Soak rice paper wrappers in warm water (one at a time - I use a tin pie plate) for a about 20 seconds or until soft.
  • Lay wet wrapper on a tea towel to absorb excess water.
  • Starting about 1/3 from bottom of wrapper, create a 3" long row with cilantro leaves, red pepper, yellow pepper, snow peas, bean sprouts, vermicelli noodles and a little ginger.
  • Roll up from bottom, turning in sides as you roll.
  • Slice each roll in half on a bias and serve with orange chili dipping sauce.
  • Seasoned Vermicelli Noodles - in a medium bowl whisk seasme oil and rice wine vinegar together, then toss with cooked vermicelli noodles.

These rolls are very delicious, easy to make and low fat. Fab as a starter, and people are always very impressed. They can be served cold, but I prefer to perpare them in advance, leave them in the fridge covered with a wet tea towel and then steam them for two minutes just before serving. I like to serve them with a sweet chili sauce and vietnamese coleslaw (I shall post this recipe also).

30 g rice vermicelli
1 cup cabbage, shredded
1 carrot, grated
1 tablespoon coriander, chopped
1 spring onion, chopped
1 tablespoon rice vinegar
1 tablespoon water
1 teaspoon caster sugar
1/2 teaspoon salt
1 garlic clove, minced
18 sheets circular rice paper

Steps:

  • Firstly, mix the rice vinegar, water, caster sugar, salt and garlic in a large bowl and leave to sit.
  • Soak the rice vermicelli in boiling water for about 10 minutes, until it is no longer hard (but not soggy!).
  • Add the noodles, cabbage, carrot, coriander and spring onions to the dressing and mix well.
  • Now set up your production line- get a flat bowl and fill it with hot water. Take a rice paper sheet and soak it in the water until it's soft- about 15 seconds.
  • remove it from the water and place on a clean tea towel. Spoon some of the mixture onto the rice paper.
  • Fold in the bottom first, then the sides, and roll to form a cigar shape.
  • Continue the same with the rest of the rolls.
  • These can be prepared well in advance and stored in the fridge under a wet tea towel- see the recipe description above for serving suggestions.

1 small cucumber, peeled and julienned
1 small carrot, peel and julienned
1/4 cup mint leaf
3 tablespoons pickled ginger, finely sliced (optional)
40 g baby dou miao or 40 g snow pea sprouts
1 bunch chives, cut in 9 cm lengths
10 g enoki mushrooms (the Japanese golden mushroom)
rice paper sheet (8cm X 22cm)
3 tablespoons freshly squeezed lime juice
3 tablespoons Thai fish sauce
1 clove garlic, crushed
2 small red chilies, finely sliced
1 tablespoon brown sugar or 1 tablespoon palm sugar

Steps:

  • Soften rice paper sheets by soaking in warm water.
  • When soft and pliable, remove and place on a clean cotton cloth.
  • Lay a small amount of the filling along the centre top of the rice paper.
  • Fold one side in towards the centre, then fold the bottom up towards the top.
  • Roll the wrap over towards the remaining side to make a neat roll.
  • Repeat the process until the rice paper and filling are used up.
  • Combine all dipping sauce ingredients into a bowl.
  • Serve with rice paper rolls.
