Steps:
- Preheat the oven to 390°F/200°C degrees.
- In a bowl, using a hand mixer cream together the sugar and the butter until it's well combined and creamy (about 1 minute). Mix in the egg and the vanilla extract.
- Add the flour along with the baking powder and salt, and beat with the mixer on slow speed until just combined.
- Line a 12-inch pizza pan with parchment paper, grease your hands with cooking spray then spread the dough in the pan in an even layer. You will have to use your hands to press down the dough.
- Bake in the oven for 13-15 minutes. The cookie base does not have to brown, it might look undercooked but that's totally fine as baking it for longer will dry it out. Remove from the oven, and cool completely on a cooling rack.
- To make the cream cheese frosting, whip the cream cheese with the powdered sugar and vanilla extract. Add the powdered sugar in batches to avoid getting a sugar storm.
- Once the cookie base has cooled completely, using a spatula spread the cream cheese frosting over the cookie dough base, and then decorate with fresh fruit creating a pattern. Drizzle/brush the fruit with honey if desired.

SWEET FRUIT PIZZA THAT LOOKS LIKE A REGULAR PIZZA!
There are a lot of fruit pizza recipes out here, but this one has a twist, it uses a regular pizza dough crust (I use recipe #117941 with 1/2 cup sugar added and it makes two pizza crusts), and the toppings make it look like a "regular pizza." Really good and super fun for kids to make too. And as a bonus, if you are careful about the white chocolate you use, I think it could be considered vegan. Feel free to experiment!

Steps:
- Make pizza dough according to directions but add about 1/2 cup extra sugar to make it sweet. Bake the dough empty. Cool.
- Spread with jam/jelly.
- Using a potato peeler or grater, add enough white chocolate shavings to look like cheese.
- Sprinkle on walnuts to look like sausage.
- Slice strawberries to look like pepperoni slices.
- Sprinkle with green sugar or other green cookie sprinkles if you want to simulate oregano.
- I find that it looks best the first day. But tastes great even if the strawberries dry out a little --
- Enjoy!

- Preheat oven to 375 degrees. For crust, cream butter and sugars together. Mix in eggs and vanilla extract and beat well. Add dry ingredients.
- Mix cream cheese and powdered sugar together until smooth. If you want a sweeter frosting, you can add more powdered sugar.
- Fresh Fruit Topping (as pictured): Wash and slice fruit and decorate away!Tropical Fruit Pizza: If using canned fruits, drain well and pat dry with a paper towel. Add fruit and sliced banana to prepared and frosted pizza just before serving. I like to start in the center with a layer of fruit and work my way out. Sprinkle with coconut flakes.Caramel Apple Pizza: Slice apples into thin slices, and place them in a bowl. Sprinkle one 2 teaspoons of lemon juice over apples and toss until they are covered. This will prevent browning. Add slices to pizza in a design of your choice. One idea is to start in the middle fanning apple slices out into a circle from the center, with red apple skins all facing the direction. Fan the green apple slices out for the next layer, again with the skins all facing the same direction. Drizzle caramel topping over apples.
