CORN AND JALAPEñO DIP RECIPE
This creamy and cheesy slow cooker dip is the perfect snack to feed a hungry crowd on game day or to get any party started. If you are expecting a large crowd, you may want to double this recipe so you do not run out before the party is over. With only eight ingredients and minimal prep time, this recipe will become your go-to recipe for entertaining. Simply stir the first seven ingredients together in the slow cooker and let it cook. You will know the dip is ready when it is creamy and bubbling. If you are short on time, you can switch your slow cooker to high, instead of low, and have it ready in 1 ½ to 2 hours. The sweet corn and spicy jalapeño create the perfect flavor combination. - Stir together cream cheese, Cheddar cheese, corn, half-and-half, scallions, garlic, and jalapeño in a 3-quart slow cooker.
- Cover and cook on LOW 3 ½ to 4 hours or on HIGH 1 ½ to 2 hours until creamy and bubbling, stirring halfway through. Stir in bacon.
- Garnish with scallions, if desired. Serve with corn chips.

- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside. Place corn, jalapenos, sour cream, Pepper Jack cheese and Parmesan into a slow cooker; season with salt and pepper, to taste. Stir until well combined. Top with cream cheese. Cover and cook on low heat for 2 hours. Uncover and stir until cream cheese is well combined. Cover and cook on high heat for an additional 15 minutes. Serve immediately, garnished with bacon and chives, if desired.

Steps:
- In large bowl combine cream cheese and sour cream and beat until smooth.
- Beat in taco seasonings and jalapenos. Beat into this mixture one of the 3/4 C of the shredded cheese.
- Fold in the corn and mix well.
- Place mixture into a 9-inch square or comparable sized prepared baking dish(sprayed with non-stick).
- Cover the top with the remaining 3/4 C of the shredded cheese.
- Garnish top with a few sprinkles of taco seasoning.
- Bake at 300 degrees F until cheese is melted and bubbly. (DO NOT OVERBAKE--IT WON'T BE CREAMY).
- Serve hot with tortilla chips.
