PORK ROAST DINNER

Steps:
- Combine the garlic, fennel, rosemary, oregano, paprika, salt and pepper; rub over pork. Cover and refrigerate for 8 hours. , Place potatoes and onions in a 5-qt. slow cooker. Top with pork. Pour broth over meat. Cover and cook on low for 8-10 hours or until meat and vegetables are tender., Let meat stand 10-15 minutes before slicing.

- Place pork in a 6-qt. electric pressure cooker. Top with mushrooms, onion and red pepper. Whisk together hoisin sauce, chili sauce, soy sauce, lime juice, garlic, ginger and rice vinegar; pour over vegetables. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 20 minutes. Allow pressure to release naturally., Remove pork; shred with 2 forks. Return pork to pressure cooker; heat through. Sprinkle with cilantro and green onions; serve with rice, lime wedges, and Sriracha.

SWEET CHILI PORK ROAST
I made this the other day for my Mother-in-law and Eric's neice. It was wonderful.

Steps:
- 1. Mix the spices and coffee into the sugar and coat the pork roast with it.
- 2. Place in a slow cooker on low for 8 hpours or on high for 3 1/2 hours. Serve with sweet potatoes and cranberry sauce. We served broccoli also
SLOW-ROASTED SWEET CHILE PORK
Steps:
- Preheat the oven to 225 degrees F.
- In a medium bowl, combine salt, pepper, granulated garlic, menudo spice mix, chile powder, cumin and brown sugar until well mixed. Place pork butt in large roasting pan, fat-side up. Rub the spice-and-brown sugar mixture all over the pork butt with lots of love! Cover the roasting pan with foil, being sure it is airtight. Roast for at least 12 hours; don't rush it! It should be so tender that the bone will fall out when the pork is done.

Stir in the tomatoes, corn, beans, onion, broth, chiles, chili powder, garlic, salt, cayenne and pepper. , Cover and cook on low until pork is tender, 6-7 hours. Stir in cilantro. Serve with cheese if desired.
