This main dish is a nice change of pace from traditional sweet-and-sour meatballs. It's much quicker to make, too. For variety, I like to substitute a different kind of sausage, like spicy Italian.-Nova MacIsaac, Souris, Prince Edward Island

1 package (12 ounces) uncooked sausage links
1 cup sugar
3 tablespoons cornstarch
1 cup water
1/2 cup vinegar
1/2 cup ketchup
1 can (8 ounces) crushed pineapple, drained
Hot cooked rice

Steps:

  • In a large skillet, cook sausage until a thermometer reads 160° drain. When cool enough to handle, cut into bite-size pieces; set aside. , Combine the sugar, cornstarch, water, vinegar and ketchup; add to skillet. Bring to a boil. Reduce heat; cook for 2 minutes or until thickened. Add pineapple and sausage; heat through. Serve with rice.

2 packages (16 ounces each) miniature smoked sausages
2 tablespoons butter
1 can (15-1/4 ounces) sliced peaches, drained and halved
1 cup chili sauce
3/4 cup sugar
1/2 cup ketchup
1 teaspoon dried minced onion
1 teaspoon curry powder

Steps:

  • In a large skillet, brown sausages in butter. In a large bowl, combine the remaining ingredients; stir in the sausages. Transfer to a greased 2-qt. baking dish. , Bake, uncovered, at 350° for 30 minutes. Stir; bake 15 minutes longer or until bubbly.

1 large onion, cut into 1-inch pieces
1 medium green pepper, cut into 1-inch pieces
1 tablespoon canola oil

  • Drain pineapple, reserving 1/4 cup juice; set pineapple aside. In a small bowl, combine the preserves, cornstarch, vinegar, soy sauce, ginger and reserved juice., In a large skillet, saute the sausage, onion and pepper in oil until vegetables are tender. Add sauce mixture and pineapple. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.

2 tablespoons unsalted butter

Steps:

  • Preheat oven to 350 degrees F & grease a 2-quart baking dish.

1 medium onion, chopped

1 celery rib, chopped

1/2 cup cider vinegar
1 teaspoon salt
1 can (20 ounces) pineapple chunks
3 tablespoons cornstarch
1/4 cup cold water
Hot cooked rice

Steps:

  • In a large skillet, saute the sausage, onion, green pepper and celery in butter over medium heat until meat is no longer pink and vegetables are tender; remove with a slotted spoon and set aside., In the same skillet, combine the brown sugar, ketchup, vinegar and salt. Drain pineapple, reserving juice; set pineapple aside. Add juice to skillet; bring to a boil. Return sausage mixture to pan. Combine the cornstarch and water until smooth; stir into skillet. I decided that I needed to share this recipe after two people came into our break room tonight to see what I was eating that smelled so good. The recipe is adopted from a woman I work with, she calls it "Party Kielbasa". I like using turkey smoked sausage, but it works well with either smoked sausage or kielbasa. I brown the sausage in a frying pan with the Liquid Smoke before I bake it, because I like it to be a little bit crunchy on the outside, but you can just throw it all together without browning it, it tastes good either way. I serve it over rice because it soaks up the juice nicely. It could probably be a crockpot recipe in the summer, but I like baking it in the winter.

12 ounces chili sauce (I use Heinz.)
20 ounces crushed pineapple with juice, undrained
3/4 cup brown sugar
2 bell peppers, cut into bite size pieces (I use yellow or red and green, to make it colorful)
1 lb smoked sausage or 1 lb kielbasa, cut into bite size pieces
5 -10 drops liquid smoke (I use it if I think my smoked sausage isn't smokey enough.) (optional)

Steps:

  • Mix the chili sauce, canned crushed pineapple with juice, and the brown sugar together in a large casserole dish (I use the stoneware from my crockpot).
  • Add the bell pepper pieces and smoked sausage.
  • Mix everything together.
  • Bake uncovered at 350 for one hour, stirring occasionally.
  • Enjoy!
