1 cup sliced green apples
⅓ cup apple cider vinegar
3 tablespoons water
¼ cup white sugar
2 ¼ teaspoons salt
¼ teaspoon black pepper
¼ teaspoon ground cloves

Steps:

  • Place butter, cabbage, apples, and sugar into a large pot. Pour in the vinegar and water, and season with salt, pepper, and clove.
  • Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the cabbage is tender, 1 1/2 to 2 hours.

Steps:

  • In a small bowl, combine the vinegar, brown sugar, caraway and celery seeds; set aside. Place cabbage and onion in a saucepan; add a small amount of water. Cover and steam until tender, about 15 minutes. , Add vinegar mixture; toss to coat. Season with salt and pepper. Serve warm.

½ cup brown sugar
1 tablespoon caraway seeds
½ cup vinegar
¼ cup butter

Steps:

  • Place cabbage in a medium saucepan with water and salt, and bring to a boil. Stir in brown sugar and caraway seeds. Cook 12 minutes, or until cabbage is tender; drain.
  • In a medium bowl, toss cabbage with vinegar and butter until thoroughly coated.

1/4 cup diced Canadian bacon

Steps:

  • Heat oil in heavy large saucepan over medium-high heat. Add onion and apple and sauté until golden, about 7 minutes. Add cabbage, vinegar, sugar and celery seed and cook until cabbage is crisp-tender and liquid is reduced to glaze, about 10 minutes. Mix in bacon. Season with salt and pepper.

4 cups thinly sliced onions
1 2 1/2-pound head red cabbage, cored, thinly sliced
1 pound fennel bulb, cored, thinly sliced, fronds reserved
1/2 cup canned beef broth
6 tablespoons balsamic vinegar
6 tablespoons golden brown sugar

Steps:

  • Melt butter in heavy large pot over medium-high heat. Add onions and sauté until golden, about 10 minutes. Add remaining ingredients except fennel fronds. Bring mixture to boil. Reduce heat to medium-low. Cover and cook until cabbage is tender, stirring occasionally, about 1 hour. Season with salt and pepper. (Can be made 1 day ahead. Cool slightly. Cover and chill. Rewarm over medium-low heat.)
  • Transfer to bowl. Garnish with re-served fennel fronds and serve.

1 medium shallot, chopped
1 clove garlic, chopped
2 tablespoons unsalted butter
2 1/2 to 3 pounds red cabbage, shredded (about 10 cups)
1/2 cup red burgundy wine
1 1/4 cups balsamic vinegar
1/2 cup granulated sugar
Salt and freshly ground black pepper

Steps:

  • In a 12-inch skillet, saute the shallots and garlic in the butter over medium heat for 1 minute, until golden brown. Add the shredded cabbage. Add the wine to deglaze the pan, loosening any browned bits on the bottom of the pan with a wooden spoon. Stir in the vinegar and sugar. Season with salt and pepper to taste. Increase the heat to high and bring to a boil, stirring constantly to prevent the sugar from burning. Reduce the heat and simmer about 10 minutes, until the liquid is reduced by 3/4.

Steps:

  • In a large heavy non-stick skillet cook cabbage in oil over moderate heat, stirring, until wilted slightly, about 5 minutes. Add fennel and cook, stirring, until just tender, about 5 minutes. Stir in water, vinegar, sugar, and salt and pepper to taste and cook, over moderately low heat, covered, stirring occasionally, until vegetables are tender and liquid is almost evaporated, 10 or 15 minutes.
  • Serve cabbage and fennel hot or at room temperature.

5 cups red cabbage (1 small head)
4 slices bacon, diced
2 tablespoons brown sugar
2 tablespoons flour
1/2 cup water
1/3 cup vinegar
1 teaspoon salt
1/8 teaspoon pepper
1 small sliced onion

Steps:

  • Cook cabbage in 2 cups water in covered pan for 5-8 minutes or until tender; drain.
  • Fry bacon. Remove bacon and crumble.
  • Add sugar and flour to remaining fat and blend.
  • Add water, vinegar, salt and pepper and sliced onion. Cook until thick, stirring occasionally, about 5 minute.
  • Add bacon and cabbage and heat through.

100g light brown soft sugar
150ml red wine vinegar
1 cinnamon stick
1 star anise
large knob of butter

Steps:

  • Tip the cabbage into a large pan with the sugar, vinegar, cinnamon and star anise. Season well. Put over a medium heat and bring to a simmer, then cover, reduce the heat and cook for 1 hr, simmering gently and stirring occasionally.
  • Remove the lid, turn the heat up to medium and continue cooking for 20 mins, uncovered, until tender and the liquid has reduced to a sticky syrup. Once cool, will keep in an airtight container in the fridge for three days or frozen for up to two months. Reheat over a low heat. Stir in the butter before serving.

500g (1lb 2oz) red cabbage (or 1 small head), core removed and leaves thinly sliced
1 onion, thinly sliced
50g (1/3 cup) sultanas (golden raisins)
2 tbsp white wine vinegar
2 tbsp muscovado sugar or light brown sugar
250g (9oz) cooking apples (or 2 cooking apples), peeled, cored and sliced
15g (1 tbsp) butter
1/2 tsp ground mixed spice (allspice)
1 tsp salt
Freshly ground black pepper
Grated rind and juice of 1 orange

Steps:

  • Preheat the oven to 150°C/300°F/gas mark 2.
  • Layer the cabbage, onion, sultanas, vinegar, sugar, apples, butter and mixed spice into a baking dish and season with the salt and some black pepper. Add the orange rind and juice.
  • Cover the dish with kitchen foil and bake for 2 1/2 hours, removing the foil for the last 20 minutes of cooking. Serve hot or cold.

4 slices bacon, diced
1 small onion, sliced

2 tablespoons Gold Medal™ all-purpose flour
1/4 cup water
3 tablespoons white vinegar
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In 10-inch skillet, heat 1 inch water to boiling. Add cabbage; heat to boiling. Boil uncovered about 15 minutes, stirring occasionally, until tender; drain and set aside. Wipe out and dry skillet with paper towel.
