Categories     Main Course

Time 1h15m

Number Of Ingredients 13

1 medium head of green cabbage (ca. 2.5 lbs, cored and coarsely chopped)
2 tablespoons oil or butter
2 tablespoons molasses (or light syrup)
1 pound ground beef (or pork)
1 onion (chopped)
2 cloves garlic (minced)
1 cup heavy cream
3 tablespoons breadcrumbs
4 tablespoons water
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
salt and pepper (to taste)
Lingonberry preserves for serving (optional)

Steps:

  • In a large non-stick skillet, heat 2 tablespoons oil or butter over medium-high heat. Add the cabbage and lightly fry it, often stirring, for about 5-10 minutes. Stir in 2 tablespoons molasses and season with salt and pepper to taste. Lower the heat to medium; cook until all the liquid has evaporated and the cabbage is caramelized, about 15 minutes. Set aside.
  • Meanwhile, in a large mixing bowl, mix the pound of ground meat, 1 chopped onion, 2 cloves minced garlic, 1 cup heavy cream, 3 tbsp bread crumbs, 4 tbsp water, 2 tablespoons soy sauce, 1 tablespoon Worcestershire sauce, and salt and pepper to taste.
  • Add 1/3 of the caramelized cabbage to the meat mixture and mix again to combine.
  • Place the meat mixture into a greased 10-inch cast-iron skillet or baking dish and top with the remainder of the cabbage. Bake for 45 minutes in a 350 degrees Fahrenheit preheated oven, or until meat is cooked and cabbage turns a beautiful brown color.
  • Allow resting 10 minutes before serving. Serve with boiled or mashed potatoes and lingonberry preserves.

SWEDISH CABBAGE ROLLS

Swedish Cabbage Rolls image

I found this recipe in one of my Grandma Busch's cookbooks that I inherited. I started making cabbage rolls the first year I was married. When my husband's sister got married, I catered her wedding and she asked me to make them for the reception. I made about 600 of these and there were no leftovers. I guess that tells you...

Categories     Beef

Number Of Ingredients 12

1 large egg
1 tsp kosher salt
1 tsp worcestershire sauce
1/4 c onions, finely chopped
2/3 c milk
1/2 lb lean ground beef
1/2 lb ground pork
3/4 c rice
6 large cabbage leaves
1 Tbsp brown sugar, firmly packed
1 Tbsp lemon juice, fresh
1 can(s) tomato soup

Steps:

  • 1. In bowl combine egg, salt, pepper, Worcestershire sauce, onion and milk; mix well.
  • 2. Add ground beef, ground pork and cooked rice; beat together with a fork.
  • 3. Immerse cabbage leaves in boiling water for 3 minutes or just until limp; drain. The heavy center vein of leaf may be slit about 2 1/2 inches.
  • 4. Place 1/2 cup meat mixture on each leaf, fold in sides and roll ends over meat. Place rolls in 12 x 7 1/2 x 2 inch baking dish.
  • 5. Blend together soup, brown sugar and lemon juice; pour over cabbage rolls. Bake in moderate oven 350-degrees for 1 1/4 hours. Baste once or twice with sauce.
  • 6. I always serve this dish with mashed potatoes. We then drizzle the tomato soup over the potatoes.

SWEDISH CABBAGE ROLLS (KALDOLMAR)

Swedish cabbage rolls (kaldolmar) image

A classic Swedish dish. This is the recipe from the late Tore Wretman (1918-2003), the actual inventer of Swedish gastronomy. According to him, it's his grandma's recipe, and the source is his memoires "Mat och Minnen", Bra Bockers Forlag, 1987. Since Tore always was asked, at every occasion, what his favorite dish was, he decided to always answer "kaldolmar", which - with his own words - was as close to the truth as one could get!

Categories     Meat

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 14

1 medium white cabbage or 1 medium preferably savoy cabbage, as fresh as possible
6 ounces ground beef
6 ounces ground pork
nutmeg (optional)
1/2 cup milk (for the meat)
2 eggs
1 onion
1/4 cup round-grain rice (e.g Avorio)
1/2 cup milk (for the rice)
salt
white pepper
2 tablespoons sugar or 2 tablespoons light syrup
3 tablespoons butter
2 cups beef stock (or sauce)

Steps:

  • Remove the stem from the cabbage and poach the head in boiling salted water for a few minutes.
  • Separate the outer leaves and remove any coarse stalks.
  • Let cool.
  • Rinse the rice and boil soft in the milk for about 20 minutes.
  • Let cool.
  • Finely chop the onion and sautée in the butter until transparent.
  • Let cool.
  • Mix meat, eggs, onion, milk, spices and rice.
  • Put about two ounces of the mixture on each cabbage leaf and roll to small dolmas (rolls).
  • Place them on a greased tray.
  • Put the sugar or syrup on top together with a little melted butter.
  • Bake in the oven at 175 degrees C/ 350 F for about 30 minutes; add the gravy or sauce, raise the heat a little and bake for another 20-30 minutes.
  • Serve the rolls with boiled or mashed potatoes (maybe enriched with cream and butter) and Farmors Gurka ("Grandma'sCucumber"): Thinly sliced cucumber marinated in strong vinegar, sugar, salt and parsley.
  • (Personally, I'm not very fond of the sugar/syrup in the recipe, so I use to exclude it, but that's only because I'm against sweet ingredients in main courses in general).

  • Heat the oven to 160°C/140°C fan/gas 3. Melt the butter in a large, heavy-based pan over a medium heat. Add handfuls of the cabbage and cook down until soft and starting to brown. Transfer each batch to a large roasting tin, repeating until you’ve used up all the cabbage.
  • Add 1 tbsp golden syrup and 150ml of the chicken stock to the tin, stir well and transfer to the oven to bake for 1 hour. Repeat the process, adding another tablespoon of the golden syrup and another 150ml chicken stock, and cook for a further 1 hour. Repeat the process so both are used up, also adding the caraway seeds. Stir and baste the cabbage each time you add liquid and watch it carefully for the final hour. It should be a rich brown colour when it’s finished. Season to taste with salt and pepper, stir for a final time and serve scattered with chopped parsley alongside your usual Christmas fare.
