SUSAN'S SUNDAY POT ROAST

This is the basic version, You can thicken the jus to a gravy, add zucchini, summer squash, green beans or other veggies as desired. We love LOTS of carrots so add as much as you like. My familiy likes this served over rice.

1 3-5 lb chuck roast, shoulder roast, texas broil
3-4 medium garlic cloves quartered
2 tsp each-salt and pepper mixed in a small bowl
2 Tbsp vegetable oil
1 large jumbo onion, quartered
3 large stalks celery cut in chunks or slices
1/2 c optional-dry red wine
2 cubes knorr beef bouillon, or equivilent and water to cover/or canned beef broth to cover
2-3 sprig(s) fresh thyme, or 1 tsp dry thyme
1-2 lb carrots, peeled and cut however you desire-chunks, sticks etc.
2-3 lb potatoes, peeled and quartered
optional-squashes, beans, other vegetables as desired
optional-1 can tomatoes

Steps:

  • 1. Using a paring knife, cut deep narrow slits down into the meat and stuff each pocket with a sliver of garlic and a large pinch of salt/pepper mixed.
  • 2. Heat oil in a dutch oven over medium high, and deeply brown both sides of the roast. Remove to a plate and add the onion and celery, and cook stirring for 2-3 minutes.
  • 3. Add the wine if using, deglazing the pan, or just add the water/broth to deglaze.
  • 4. Add the bouillon cubes, and meat to the pan(make sure to get all the juices from the plate) Bring to a boil over high, reduce heat to a simmer.
  • 5. Add the carrots and thyme to the pot, cover and simmer for 1 hour.
  • 6. Check liquid level, add potatoes and other veggies if using. Cover and cook another 60 minutes.
  • 7. At the 2 hour point, check the meat for tenderness, and cook additional time if needed. Add more liquid at any point if needed. Adjust salt/pepper. Serve as desired.

SUNDAY POT ROAST WITH GRAVY (FOR DIABETICS)



Sunday Pot Roast with Gravy (for diabetics) image

One thing about traditional pot roast is the potatoes (carbs) and gravy (fat and carbs). Here is an alternative to try. It retains all the flavor of grandma's Sunday pot roast, but prevents me from eating so many carbs. I can get my carbs with a good homemade roll with this meal, and be totally happy!

3-4 lb sirloin tip roast or beef brisket
1 c sliced carrots
1 c sliced celery
1 c onion wedges
2 c fresh cauliflower florets
1 pkg lipton onion soup mix
1 can(s) beef broth (low sodium) + 1 can water
1 pkg brown gravy mix

Steps:

  • 1. Use a roasting pan somewhat larger than the roast. Place roast in pan, and place under broiler about 4 inches from heat. Broil to brown top. Switch oven setting from broil to bake, preheat to 300°.
  • 2. Arrange carrots, celery, onion, and cauliflower florets around roast. Combine soup mix, beef broth, and water in a jar and shake well. Pour over roast and vegetables. Cover roaster with lid or heavy aluminum foil.
  • 3. Roast for 2 to 2 ½ hours or until meat thermometer inserted in thickest part of roast measures 155° (or 140° for medium rare). Remove roast to serving platter and surround with vegetables. Re-cover with foil and let rest 10 minutes.
  • 4. Use the drippings from roaster with enough water to prepare gravy mix according to package directions. Serve roast and vegetables with gravy.

SUSAN'S POT ROAST (BASED ON MAMA'S POT ROAST)

This roast recipe was requested by my daughters. It is based on my mother's pot roast recipe, with a couple of additions and tweaks I learned over the years. It is traditionally prepared in a Dutch oven, but can be made in an electric skillet. Instructions for both are included.

2 medium onions, peeled and sliced 1-inch thick
6 large carrots, in 2-inch slices
2 stalk(s) celery, in 1-inch slices
1 lb small red potatoes, scrubbed and quartered
3-5 lb chuck roast (or round, sirloin, or brisket)
garlic salt and black pepper
2 Tbsp olive oil
1 tsp poultry seasoning or dried thyme
1 c red wine or beef broth
additional beef broth or water, about 2-3 cups
3 Tbsp wondra or fine flour

Steps:

  • 1. Prepare vegetables and preheat oven to 275°F. Rinse the roast and pat it dry. Rub garlic salt and pepper into all sides of the roast.
  • 2. Heat the Dutch oven over medium-high heat with 2 tablespoons of olive oil. Brown the onion slices on both sides and remove when browned, set aside . Sear the roast on all sides in the hot oil; remove and set aside.
  • 3. Deglaze the pot with 1 cup of beef broth or red wine. Stir in 1 teaspoon poultry seasoning or thyme. Place the roast in the pot, arranging all the prepared vegetables around it. Add water or more beef broth until liquid comes about halfway up the sides of the roast.
  • 4. Cover with lid and roast in the oven: 3 hours for a small roast, or 4 hours for a larger one. Test the thickest part with a thermometer to desired doneness - it should be well-done and tender, 170-180°. Remove roast to serving platter, and with a slotted spoon, arrange vegetables around it.
  • 5. Place the pot with the drippings on the stove over medium heat. Add 2-3 tablespoons Wondra or fine flour to ¼ cup water and stir or shake to make a paste. Stir the paste into the simmering stock and cook until thick and glossy for the gravy. OR, if au jus is desired, skip the flour and just reduce the stock about 1/3 and serve the juice with the roast.
  • 6. Electric Skillet: This works best with a roast about 3 or 3 1/2 pounds Brown the onion slices and sear the roast at 350° in the skillet according to directions above, deglazing the skillet as directed. Set the skillet to 225°, add roast and vegetables, liquid as needed, and cover. Simmer the roast until done, 2-3 hours, adding additional water or broth if necessary to keep the liquid about halfway up the sides of the roast. Test with meat thermometer as above. Roast should be very tender and well done.

One 4-pound boneless chuck roast
Kosher salt and cracked black pepper
2 tablespoons vegetable or olive oil, plus more if needed
2 carrots, chopped
2 celery ribs, chopped
1 yellow onion, chopped
1 bundle various fresh herbs, such as tarragon, rosemary, parsley, tied with twine
4 cloves garlic, chopped
1 cup dry red wine, such as cabernet sauvignon
2 1/2 cups low-sodium beef broth
2 cups watercress
1 cup picked fresh parsley leaves
Lemon juice, for drizzling
Olive oil, for drizzling
Salt and freshly cracked black pepper
1/4 cup sliced almonds, toasted
Risotto Cakes, for serving, recipe follows
3 cups low-sodium chicken broth
3 tablespoons unsalted butter
2 large shallots, minced (about 1/2 cup)
1 cup Arborio rice
3/4 cups dry white wine
5 ounces frozen peas, defrosted
1/3 cup lemon juice
1 tablespoon lemon zest
1 1/4 cups freshly grated Parmesan
4 ounces low-moisture shredded mozzarella
Salt and freshly ground black pepper
1 cup all-purpose flour, for dredging
2 eggs, beaten
1 1/2 cups panko breadcrumbs
Vegetable oil, for frying

Steps:

  • Preheat the oven to 350 degrees F.
  • Using paper towels, pat the roast dry to help get a great crust on the meat. Sprinkle the roast generously with salt and pepper. In a large Dutch oven over medium heat, add 2 tablespoons oil and heat until glossy. Add the roast and brown on all sides. Remove and transfer to a cutting board or a large plate.
  • Add more oil to the pot if needed, along with the carrots, celery and onions. Season with salt and pepper. Add the fresh herb bundle and cook until the vegetables start to brown, 5 to 10 minutes. Add the garlic and continue cooking for another minute. Add 3/4 cup of the red wine and reduce by half, scraping up the seared bits and incorporating them into the juice. Then return the roast to the pot and add the beef broth. Bring the liquid to a simmer before covering with a tight-fitting lid and placing the pot in the oven. Allow the roast to cook until fork tender, 3 1/2 to 4 hours, turning once halfway through.
  • Remove from the oven and transfer the roast to a large cutting board. Tent with foil while the roast rests. Placing the Dutch oven back on the stovetop over medium-high heat, add the remaining 1/4 cup of red wine to the liquid and reduce by half at a simmer, about 10 minutes. Strain the sauce and season with salt and pepper. Shred the roast into big chunks and toss with the jus.
  • For the herb salad: Toss the watercress and picked parsley with the lemon juice and olive oil to taste. Season with salt and pepper and top with the toasted almonds
  • Serve on top of the Risotto Cakes and top with the fresh herb salad.
  • For the risotto: In a medium saucepan, heat the chicken broth to a simmer. In a separate saucepan, melt the butter over medium-high heat. Add the shallots to the butter, cooking until fragrant and translucent, about 2 minutes. Add the Arborio rice and lightly toast, stirring to coat in the butter and shallots. Add the white wine, continuing to cook while stirring until the wine is absorbed. You should be able to run your spoon through the risotto and have the indentation stay.
  • Using a ladle, add enough of the warm chicken broth to cover the rice, stirring constantly over medium heat until the broth is completely absorbed. Repeat the process 3 more times, adding the broth in stages while continuing to stir. Once all of the chicken broth has been added and the rice is tender, add the peas, lemon juice and lemon zest and stir to combine.
  • Remove from the heat and stir in the Parmesan, mozzarella and season with salt and pepper. Cool the risotto by spreading it evenly over a sheet tray. Cover with plastic wrap and chill in the refrigerator for 20 to 30 minutes.
  • Once the risotto is cooled, form the mixture into burger-size patties, about 1-inch thick. Set up a dredging station with the flour in one dish, beaten eggs in another and panko breadcrumbs in another. Dip the rice patties into the flour, then into the eggs and finally coat them in the panko breadcrumbs.
  • In a large skillet, heat 1/2-inch vegetable oil over medium heat until a pinch of panko sizzles when dropped in the oil. Working in batches of 2 to 3, fry the risotto cakes until golden brown, 2 to 3 minutes per side (use a fish spatula under the cake and the back of a fork on top to help stabilize while flipping). Transfer to a wire rack, which will help them stay crispy. Season with salt and they are ready to serve. Yield: 6 large cakes.

4 ounces sliced mushrooms

  • Add mushrooms,salt and pepper.
  • Reduce heat to low,cover,simmer 2 hours.
  • Add veggies,cover and continue cooking 30 minutes or until tender. Cooking time is 2hrs.30.minutes.
