Seafood Salad made with imitation crab meat,mayonnaise, lemon juice, celery, red onion and a few basic seasonings is adelicious and affordable option for when that seafood craving hits. Dependingon what your mom called it, this is the classic crab salad or seafood salad weall grew up with.

10 ounces Aquamar® Surimi Flakes (imitation crab)
1/3 cup mayonnaise
3 tbsp lemon
1/2 cup celery, minced (about 2 stalks)
3 tbsp red onion, minced
1/2 tsp salt
1/4 tsp pepper
1/2 tsp dill

Steps:

  • Break imitation crab meat into bite-sized pieces and add to a bowl.
  • Add remaining ingredients and gently stir to combine.
  • The salad can be served immediately, however, the flavor will improve if it melds in the refrigerator for a few hours overnight. Store tightly covered in the refrigerator.

1 (6 ounce) package imitation crabmeat
1/2 cup bleu cheese salad dressing
1 cup diced celery
1/2 cup shredded red cabbage
2 cups chopped romaine lettuce
1 teaspoon dried dill
1/4 teaspoon cracked black pepper
salt

Steps:

  • Cut imitation crab legs in half inch pieces at an angle and place in a bowl. Add all other ingredients except for salad dressing, dill, salt, and pepper.
  • Mix the salad together to combine and add dressing and dill. Stir again to combine.
  • Last season the salad with salt and pepper to taste and stir once to combine. Chill in the refrigerator for 10 minutes up to 20 minutes and serve.

If you're short of time and still want something nice for lunch, try this salad. It is better when chilled for an hour or so but can be eaten immediately. It keeps well in the fridge for a couple of days. Also nice as an appetizer on crackers or as a cucumber stuffing.

5 eggs, hard-boiled
7 ounces surimi (imitation crab meat)
3 tablespoons mayonnaise
1 teaspoon lemon juice
1 teaspoon dill weed
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Mash the eggs.
  • Flake and cut the surimi.
  • Mix eggs, surimi, mayonnaise, lemon juice, dill weed, salt and pepper.
  • Chill.

Jacques Pepin says he keeps a package of surimi in his fridge for last minute appetizers or first-courses. This is a very nice, lightly dressed salad that you can adjust to your tastes. I make about half of it as a light lunch.

2 cups surimi (cut into 1 inch pieces, I cut smaller)
2 tablespoons sour cream
2 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1 dash tabasco hot pepper sauce
3 tablespoons minced scallions
1 1/2 tablespoons chopped shallots or 1 1/2 tablespoons chopped onions
1/4 teaspoon salt
3 -4 cups mixed salad greens
3 oil-cured olives (I actually used Kalamatas)

Steps:

  • Combine all ingredients except the salad greens in a medium bowl. I reduce the surimi into smaller flakes or pieces, but it's up to you.
  • Divide the greens among four plates, top with greens.
  • I often add other herbs - garlic chives, thyme or lemon thyme, dill. I also omit the salt - surimi is salted, and I really don't think the salad needs additional salt, but do it to your taste.
