1 to 2 tablespoons water

Steps:

  • In a nonstick skillet or a wok, heat the oil over high heat. Add the asparagus, salt, and pepper. Cook, stirring often, for 3 minutes. Add the water, and continue to cook until easily pierced with the tip of a paring knife, about 3 minutes more.

1 tablespoon soy sauce
1 tablespoon cider vinegar
1 tablespoon cornstarch
¼ teaspoon sugar
¼ teaspoon dry mustard
¼ teaspoon salt
1 tablespoon vegetable oil
2 pounds fresh asparagus, trimmed and cut into 1 inch pieces

Steps:

  • In a bowl, mix the broth, sherry, soy sauce, cider vinegar, cornstarch, sugar, dry mustard, and salt.
  • Heat the oil in a skillet over medium heat. Mix the asparagus into the skillet, coating with the oil. Cook and stir 5 minutes, until tender but firm. Pour the broth mixture over the asparagus, and continue cooking 5 minutes, until thickened and heated through.

2 tablespoons cornstarch

3 tablespoons canola oil, divided
2 cups fresh asparagus pieces or fresh broccoli florets
1 cup sliced cauliflower
1 small sweet red or green pepper, julienned
1 small onion, cut into 1/4-inch wedges
2 teaspoons beef bouillon granules
1 tablespoon soy sauce
1 tablespoon ketchup
1 teaspoon red wine vinegar
Hot cooked rice

Steps:

  • Slice beef into thin 3-in. strips. In a large resealable plastic bag, combine the cornstarch, 2 tablespoons water, salt, pepper and hot pepper sauce; add the beef. Seal bag and turn to coat. , In a large skillet or wok, stir-fry half of the beef in 1 tablespoon oil until no longer pink; remove from the skillet and keep warm. I use clarified butter as I am lactose intolerant but I seem to be able to use the fat part of butter and get the flavour but not the sugars.I prefer the flavour of butter but you could use just about any kind of oil or even bacon fat.

2 tablespoons peanut oil
2 scallions, about 1/4 cup thinly sliced
1 teaspoon minced ginger
1 garlic, minced
1/2 cup chicken broth or 1/2 cup water
1 tablespoon light soy sauce
1 teaspoon sesame seeds, toasted

Steps:

  • Cut the asparagus into 2-inch lengths. Combine the cornstarch and water in a small bowl and stir into a smooth paste. Set aside.
  • Heat the oil in a large heavy skillet or wok and when very hot, add the asparagus, scallions, ginger and garlic and stir fry for 1 minute. Add the chicken broth, bring to a boil, and cook, stirring, for 2 minutes.
  • Make a well in the center of the asparagus and add the cornstarch mixture and the soy sauce. Cook, stirring, for 30 seconds or more, until sauce is smooth and thickened. Serve immediately over rice or noodles garnished with seeds.Season with additional soy sauce if desired.

1/2 tablespoon mustard
2 tablespoons extra-virgin olive oil
2 cloves garlic, sliced

  • Snap off the ends of the asparagus where they break naturally and peel the spears. Slant-cut them about one-inch long.
  • Beat the lemon juice and mustard and set aside.
