PARMESAN PUFF PASTRY BREADSTICKS

These parmesan puff pastry breadsticks are a quick and easy which makes them the perfect appetizer or snack for any occasion.

1 Puff Pastry, thawed (1/2 pound/250 grams), see note 1
2 tablespoons Extra Virgin Olive Oil, see note 2
Salt, to taste
Black Pepper, to taste
1 tablespoon Parmesan Powder, see note 3
1 teaspoon Dried Rosemary, finely chopped

Steps:

  • Preheat oven to 400 Fahrenheit (200 Celsius).
  • Unfold the puff pastry and roll it out thin (if not using ready-rolled).
  • Brush it with olive oil and sprinkle with salt, pepper, Parmesan powder and rosemary. Press it down lightly with a rolling pin.
  • Cut it into thin slices (0.5-inch/1.5-centimetre). Mine were 8-inch/20-centimetre long, but you can cut them into any length you like. Transfer them onto a baking sheet lined with baking parchment, leaving small gaps between them.
  • Bake in a preheated oven at 400 Fahrenheit (200 Celsius) for 8 minutes or until puffed and golden brown (see note 5).

10 ounces (2 1/2 sticks) cold unsalted butter
1/2 cup cold tap water
1 teaspoon salt
2 cups unbleached, all-purpose flour (about 9 ounces)

Steps:

  • Cut 8 ounces (2 sticks) butter into 1/2 to 1/4-inch dice, place on a plate and refrigerate while preparing remaining ingredients.Measure water and add salt; stir to dissolve and set aside.
  • Coarsely dice remaining 4 tablespoons (1/2 stick) butter. Place flour in work bowl of food processor fitted with metal blade; add 4 tablespoons butter and pulse until butter is absorbed -- about ten to twelve 1-second pulses.
  • Add remaining butter and pulse once or twice to distribute. Add water and pulse 3 or 4 times, just until dough forms a rough ball. Do not over-process.
  • Flour work surface and scrape dough from work bowl. Shape dough into a rough rectangle and place between 2 pieces of plastic wrap. Press dough with rolling pin to flatten, then roll back and forth several times with rolling pin to make a 12 by 18 inch rectangle of dough.
  • Peel away plastic wrap and invert dough to floured work surface. Peel away second piece of wrap. Fold dough in thirds in the width, folding the top third down and the bottom third up, to make a 6 by 18-inch rectangle, then roll up the dough from one of the 6-inch ends, making sure to roll end under dough. Press the dough into a square, wrap in plastic and refrigerate 1 hour, or until firm.

I posted "Easiest Breadsticks Ever", recipe #175415, they are a very easy homemade breadstick. Today I came across an easier and faster breadstick (from Paula's Home Cooking), but, these aren't exactly all homemade like the other recipe. I have not made them yet, but I will be tonight!

1 (17 1/3 ounce) package frozen puff pastry sheets, thawed
1 cup freshly grated parmesan cheese
1 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 cup butter, melted

Steps:

  • First preheat your oven to 400 degrees and lightly grease a baking sheet.
  • On a lightly floured surface, unfold pastry sheets, cutting each sheet into 13 strips, about 3/4 by 10-inches apiece.
  • In a shallow dish (pie pan), combine Parm. cheese, basil, and garlic.
  • Brush pastry sticks with melted butter.
  • Roll pastry in cheese mixture, lightly coating each side.
  • Gently twist pastry sticks, and place on a prepared baking sheet.
  • Bake for 12 minutes.
  • Remove to wire racks to cool.

Found in a supermarket booklet, it's easy to prepare and impressive enough for guests. Originally from the Emilia-Romagna region in Northern Italy, these long, thin breadstick appetizers are another reason to keep frozen puff pastry on hand. The 60 minutes prep time includes thawing of frozen pastry dough and cooling time once baked. Can be made ahead and frozen.

1 sheet frozen puff pastry, thawed
1 egg, slightly beaten
1/4 cup parmigiano-reggiano cheese (Ferrari recommended)
4 slices prosciutto (Prosciutto de Parma recommended)

Steps:

  • Thaw frozen puff pastry by bringing to room temperature, covered in plastic wrap, for 30 minutes. Preheat oven to 400 and line two baking sheets with parchment paper.
  • Sprinkle a large cutting surface with flour. Place puff pastry sheet on top of prepared surface and carefully unfold, making a 9-10 inch square. Brush with beaten egg. Top with cheese and press into the pastry dough. Cut the square into 16 strips Place strips 1/2 inch apart and bake for 10 minutes, grissini should be lightly golden. Cool for 15 minutes.
  • Cut each slice of prosciutto into four thin strips and wrap one diagonally around each breadstick. Serve immediately.
  • FREEZING: Grissini can be frozen after the 15-minute cooling period. When ready to serve bake at 350 for 6-8 minutes if frozen and 2-3 minutes if thawed.
