EASY CASHEW CHEESE DIP AND SPREAD



Easy Cashew Cheese Dip and Spread image

A creamy, cheesy, dip, spread, or sauce that is made with pureed cashews.

1 cup cashews ((raw unsalted))
1/2 cup water
1/2 tsp salt
1/2 cup red bell pepper ((1 small fresh red pepper))
1 stalk green onion ((with the roots cut off))
1/2 tsp smoked paprika ((optional))

Steps:

  • Soak raw cashews overnight or for at least 6 hours in cold water or use hot water instead and soak for about 30 minutes.
  • Drain soaking water.
  • Add cashews to an immersion blender container or high powered blender.
  • Add clean fresh water, salt, red pepper, and green onions. (or other herbs and spices)
  • Blend for about 2 minutes until very creamy.

Super Fantastic Vegan Cashew Cheese (Slices, Sauce or Dip) image

My mother has made this recipe for Cashew Cheese since I was very young. I think this is a great recipe because it's so versatile. You can make it in a loaf pan with Agar Agar, so you can slice it for sandwiches or it crumble on rice and beans. It's also great as a Cheese Sauce or Cheese Dip too, if you eliminate the Agar Agar. Enjoy!

3 tablespoons nutritional yeast flakes
1 teaspoon onion powder
1 cup water
1 (4 ounce) jar pimientos
1/8 teaspoon garlic powder
1 cup raw cashews
1 teaspoon salt
1/2 cup canola oil
1/2 cup extra virgin olive oil
1/3 cup lemon juice
4 tablespoons agar-agar
1 cup cold water

Steps:

  • To sterilize your Cashew Nuts: Spread your nuts out on a baking sheet and bake in a preheated 350 degree oven for 10 minutes and then cool completely before using them.
  • Whiz first 7 ingredients in blender or food processor until nuts are liquefied.
  • SLOWLY drizzle in oils to thicken and then add lemon juice after oils are incorporated.
  • Mix Agar Agar in 1 Cup Cold water. Cook in separate sauce pan until clear (about 10 min).
  • With a spoon stir cooked (warm) Agar Agar into cheese mixture. Immediately pour into loaf pan lined with plastic wrap and fold plastic wrap ends and sides over top.
  • Refrigerate until set and slice as needed.
  • To use as a spread or dip, do not add Agar Agar.
  • When the loaf version is set, my mom slices into ½ sections. She puts them side to side with clear wrap in between and freezes then for individual later use.

We recommend a small blender (we prefer the NutriBullet), or a high-speed blender. Add just enough water to achieve a creamy, pourable queso. If it gets too thin, thicken with additional raw cashews.
  • Taste and adjust flavor as needed, adding more nutritional yeast for cheesiness, salt to taste, cumin for smokiness, chili powder or harissa for heat, or garlic for zing. It should be quite flavorful, so don't be shy.
  • Serve with chips or add to things like tacos, nachos, burritos, and more! Garnish with additional harissa or a spoonful of fresh salsa or hot sauce for serving (optional).
  • Store leftovers covered in the refrigerator up to 5-7 days, or in the freezer up to 1 month. To thaw from frozen, set in refrigerator for 24-48 hours. Reheat in microwave or in a small saucepan over medium-low heat. Add more water as needed if it thickens when reheating.

  • *To make the cashew cheese sauce: soak the cashews in 4 cups of water for at least 2 hours; otherwise I've found that you can easily speed up the process by adding the raw cashews to a pot with water and placing over high heat. Bring water to a boil, then immediately turn off the heat; let the cashews sit for 30-45 minutes in the warm water, then drain.
  • Once the cashews have finished soaking you'll be ready to make the sauce: add drained cashews, garlic, nutritional yeast, almond milk, jalapeno, turmeric, paprika, onion powder, dijon mustard, salt and black pepper to a high powered blender. Blend until a thick sauce comes together. If you want a thinner sauce, add a bit more almond milk. Taste and adjust seasonings as necessary. Enjoy! Serves 6-8, depending on how you use it.
