2 tablespoons butter
1 teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon salt
½ teaspoon onion powder
8 ounces tomato sauce
2 cups chicken broth

Steps:

  • In a large skillet (one that has a lid) over medium heat, melt butter.
  • Stir in cumin, chili powder, salt, onion powder and rice for 1-2 minutes.
  • Whisk in tomato sauce and chicken broth.
  • Bring a boil, then reduce to a high simmer.
  • Cover and cook for 25 minutes (see note).
  • Uncover, fluff with a fork, and serve.

2 cloves garlic, minced
2 tablespoons vegetable oil
3 cups uncooked instant rice (such as Minute®)
2 ¼ cups chicken broth
1 cup vegetable juice (such as V8®)
1 ½ teaspoons taco seasoning

Steps:

  • Cook and stir onion, garlic, and vegetable oil in a skillet over medium heat until onions are softened, about 5 minutes.
  • Stir rice into onion mixture and cook, stirring often, until rice becomes slightly opaque, 1 to 2 minutes.

Easy Spanish Rice image

So easy this should be illegal. The only caveat, if you can call it that, is you need an ingredient most gringos do not usually have. I'm not even too sure what it does but it lends a little something that I otherwise could not achieve. Get Sazón Goya in the Hispanic isle at your local store. Small box with 10 or so packets of this spice blend.

1 tablespoon olive oil
1 cup brown rice
1 (14 1/2 ounce) can chicken stock
1 (14 1/2 ounce) can diced tomatoes
1 teaspoon ground cumin
5 g sazon goya

Steps:

  • Rinse brown rinse and drain.
  • In a small sauce pan heat the olive oil over medium heat.
  • Sauté the rice for a few minutes in the oil.
  • Add the cumin and Sazón Goya and mix well.
  • Add the chicken stock and tomatoes. Bring to a boil.
  • Reduce to a slow simmer and cover for about 1 hour. Check after 50 minutes due to stove differences. There should be a small amount of liquid left.
  • Remove from heat, uncover and let stand for a few minutes to absorb the rest of the liquid.

1 tbsp rapeseed oil
1 large onion , finely chopped
200g lean pork tenderloin fillet , diced into cubes roughly 1.5cm
2 large garlic cloves , chopped
100g brown basmati rice
½ -1 tsp smoked paprika (depending on how much heat you want)
generous pinch saffron
500ml hot vegetable bouillon
1 large red pepper , deseeded, quartered and sliced
160g fine green beans , trimmed and halved
60g large prawns
large handful parsley , chopped
½ lemon , cut into wedges

Steps:

  • Heat the oil in a frying pan and cook the onion for 5 mins until soft. Add the pork and fry a few mins to brown it a little.
  • Tip in the garlic, rice and paprika, stirring briefly. Stir the saffron into the bouillon, then pour this in as well. Add the pepper, cover the pan, reduce the heat and simmer for 25 mins before mixing in the beans. Cover and cook for 10 mins more.
  • Add the prawns, cover again and cook for 2 mins until the rice has absorbed all the liquid. Stir in the parsley and serve with lemon wedges.

1 medium onion, chopped (I like onions so I used a large one)
2 tablespoons vegetable oil (I used olive oil)

1 small green bell pepper, chopped
1 1/2 teaspoons salt
3/4 teaspoon chili powder
1/8 teaspoon garlic powder

Steps:

  • In a large skillet, heat the oil over medium heat.
