BREADED CURRY CHICKEN DRUMMIES
These drumsticks are crispy with just the right amount of zing to get your mouth watering for more! They are super easy to make and are baked rather than fried so they save on fat but not on flavor. Boneless, skinless chicken breasts or assorted chicken parts can be used instead of all drumsticks. -Lynn Kaufman, Mount Morris, Illinois

Steps:
- Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.
- Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)

CROCK POT CURRIED CHICKEN LEGS
I came up with this recipe when I had a lot of jelly to use up. I have a thing for those Welche's jelly jars. I still have some in my cupboard from when my son was little.

- Add olive oil, melted butter, garlic powder, salt, paprika, curry powder, and cumin in a small bowl. Whisk to combine.
- Add drumsticks and marinade to a gallon sealable bag or container. Toss to coat and leave them to marinade for at least 30 minutes (overnight works good too!)
- For the smoker, heat to 350 and smoke for 45 minutes to an hour or until the internal temperature reaches 180 degrees. Turn occasionally for equal cooking.
- For the oven, preheat oven to 425 degrees. Place marinated chicken drumsticks on an elevated rack inside of a sheet pan. (I usually line the pan with foil to help with cleanup and brush the rack with olive oil to help with sticking.) Cook for 35 to 40 minutes, or until the internal temperature reaches 180 degrees, turning halfway to crisp both sides of the chicken.
