1 tablespoon garlic powder
1-1/2 pounds boneless skinless chicken breasts
16 uncooked manicotti shells
2 jars (26 ounces each) spaghetti sauce, divided
1 pound bulk Italian sausage, cooked and drained
1/2 pound fresh mushrooms, sliced
4 cups shredded part-skim mozzarella cheese
2/3 cup water

Steps:

  • Preheat oven to 375°. Rub garlic powder over chicken; cut into 1-in. strips. Stuff chicken into manicotti shells. Spread 1 cup spaghetti sauce in each of 2 greased 13x9-in. baking dishes. , Place 8 stuffed manicotti shells in each dish. Sprinkle with sausage and mushrooms. Pour remaining spaghetti sauce over the top. Sprinkle with cheese., Drizzle water around the edge of each dish. Cover and bake 45-55 minutes or until chicken is no longer pink and pasta is tender. Freeze option: Cover and freeze unbaked casseroles for up to 1 month. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Bake casseroles as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

3 jars (26 to 30 ounces each) tomato pasta sauce (any variety)
1 tablespoon garlic salt
4 1/2 pounds chicken breast tenders (not breaded)
3 packages (8 ounces each) manicotti shells
3 cans (2 1/4 ounces each) sliced ripe olives, drained
6 cups shredded mozzarella cheese, (24 ounces)

Steps:

  • Heat oven to 350°F. Spread about one-third of each jar of pasta sauce in each of 3 ungreased rectangular baking dishes, 13x9x2 inches.
  • Sprinkle garlic salt on chicken. Insert chicken into uncooked manicotti shells, stuffing from each end of shell to fill if necessary. Place 14 shells on pasta sauce in each dish.
  • Pour remaining pasta sauce evenly over shells, covering completely. Sprinkle with olives and cheese.
  • Cover and bake about 1 hour 30 minutes or until shells are tender.

1 jar (25.5 oz) Muir Glen™ organic pasta sauce (any variety)
3/4 cup water
1 teaspoon garlic salt
1 1/2 lb uncooked chicken breast tenders (not breaded)
14 uncooked manicotti shells (8 oz)
2 cups shredded mozzarella cheese (8 oz)
Chopped fresh basil leaves, if desired

Steps:

  • Heat oven to 350°F. In medium bowl, mix pasta sauce and water. Spread about 1/3 of the pasta sauce mixture in ungreased 13x9-inch (3-quart) glass baking dish.
  • Sprinkle garlic salt on chicken. Insert chicken into uncooked manicotti shells, stuffing from each end of shell to fill if necessary. Place shells on pasta sauce in baking dish. Pour remaining pasta sauce evenly over shells, covering completely. Cover with foil.
  • Bake about 1 hour or until chicken is no longer pink in center and shells are tender. Sprinkle with cheese. Bake uncovered about 5 minutes or until cheese is melted. Sprinkle with basil.

30 ounces spaghetti sauce
1 teaspoon garlic salt (or more, to taste)
1 1/2 lbs chicken breast tenders
8 ounces manicotti (14)
2 cups mozzarella cheese
1 tablespoon parsley or 1 tablespoon mixed Italian herbs
14 ounces chicken broth

Steps:

  • Preheat oven to 350 degrees.
  • Spread about 1/3 of the sauce in an ungreased 13x9x2 baking dish.
  • Sprinkle garlic salt on chicken tenders.
  • Insert chicken into uncooked manicotti shells, stuffing from each end to fill, if necessary (a chopstick or wooden skewer may help with this process).
  • Place shells on spaghetti sauce in dish. Pour remaining sauce evenly over shells, covering completely. Add chicken broth (1 can).
  • Sprinkle with cheese.
  • Cover and bake about 1-1/2 hours or until shells are tender. Sprinkle finished dish with parsley or Italian herbs.

1 container (15 oz) whole-milk ricotta cheese
1 teaspoon garlic salt
1/4 teaspoon crushed red pepper flakes
1/2 cup finely chopped fresh basil leaves
14 uncooked manicotti shells (8 oz)
1 jar (25.5 oz) Muir Glen™ organic tomato basil pasta sauce
3/4 cup water
2 cups shredded mozzarella cheese (8 oz)

Steps:

  • In medium bowl, mix chicken, ricotta cheese, garlic salt and red pepper flakes; stir in 1/4 cup of the basil. Spoon into quart-sized resealable food-storage plastic bag. Cut 3/4 inch tip off bag. Pipe filling into manicotti shells.
  • Spray 5-quart oval slow cooker with cooking spray. In medium bowl, mix pasta sauce and water. Spread about one-third of the sauce mixture in slow cooker. Place 7 of the filled manicotti shells in pasta sauce. Sprinkle with 1 cup of the mozzarella cheese. Spoon another one-third of the sauce mixture over shells. Top with remaining 7 filled manicotti shells; sprinkle with remaining 1 cup mozzarella cheese. Top with remaining one-third of sauce mixture.
  • Cover; cook 2 to 3 hours on High heat setting or until shells are tender. Serve with remaining 1/4 cup basil.

2 -3 chicken breasts, cooked and shredded
15 ounces ricotta cheese
1/2 cup freshly grated parmesan cheese
1 tablespoon oregano
1 tablespoon fresh parsley, chopped
1 teaspoon basil
1/2 teaspoon salt
8 manicotti, cooked
1 (16 ounce) jar of favorite spaghetti sauce
8 slices mozzarella cheese

Steps:

  • In a bowl combine parmesan and ricotta cheese, chicken and spices.
  • Fill each manicotti shell with mixture.
  • In the bottom of a rectangular casserole dish, spread a about 1/2 cup of spaghetti sauce around.
  • Now place filled manicotti shells in dish.
  • Top with 4 pieces of mozzarella cheese.
  • Now pour the rest of spaghetti sauce over the top.
  • Place the other 4 slices of mozzarella cheese on top.
  • Cover dish tightly with tin foil and bake for about 30-35 mins in a 350 degree oven.
  • Take the tin foil off and bake for another 5 or 10 minutes.
  • Let cool for about 10 minutes before serving.

  • Preheat oven to 350F. To a 9×13-inch baking dish (ceramic or glass preferred), add one jar of pasta sauce in an even, smooth, flat layer. Smooth sauce lightly with a spatula if necessary.
  • To one manicotti shell, add about 3 strips of chicken. I find two strips slide in fairly easily and then the third strip I just stuff in however I can. I pack the shells very full with chicken. The exact amount of chicken used will vary based on thickness of chicken breasts, length of manicotti, length of chicken strips, etc. Place the stuffed shell in the center of the baking dish at the top of dish (on the short side of the dish).
  • Repeat the stuffing process and continue to place shells down center of pan, then fill in on the sides. I comfortably fit 7 shells down the middle horizontally and 2 shells on each side, for a total of 11. Amount of shells used may vary based on exact baking dish size.
  • After all the shells are in the baking dish, cover them with the second jar of pasta sauce, making sure to cover them completely. Exposed areas won’t cook and will simply turn hard and crunchy.
