SUNNY'S IT'S APPLE THYME! GLAZED BACON



Sunny's It's Apple Thyme! Glazed Bacon image

Number Of Ingredients 7

1/4 cup apple jelly
2 tablespoons chopped fresh thyme
1 tablespoon cinnamon sugar
1/2 teaspoon applewood liquid smoke
1 Granny Smith apple, peeled, cored and chopped into tiny cubes
Kosher salt and coarsely ground black pepper
12 to 16 strips bacon

Steps:

  • In a large bowl, mix the jelly, thyme, cinnamon sugar, liquid smoke, apples, a tiny pinch of salt and several grinds of coarse black pepper. Set aside.
  • Line a baking sheet with nonstick aluminum foil and lay the bacon strips on top. Set the oven to 400 degrees F and place the bacon in the oven as it preheats. Bake until most of the fat is rendered, about 20 minutes. Remove from the oven and use paper towels to blot as much excess fat as possible.
  • Place a wire rack on the baking sheet and lay the bacon back on top. Brush or scoop the glaze over the bacon. Bake until the apple bits are golden and the bacon is crisp, an additional 20 to 30 minutes. Let cool for a few minutes before serving.

2 cups shredded Mexican blend cheese
1/2 cup salsa
1/4 cup pilsner beer
4 ounces cream cheese, at room temperature

Steps:

  • Add the cheese, salsa, beer and cream cheese to a large microwave-safe bowl and mix until combined. Microwave on high until the cheese is melted and the mixture is smooth and combined, 2 to 4 minutes. Stir once more before serving.

SUNNY'S TWISTED BACON



Sunny's Twisted Bacon image

Number Of Ingredients 7

1 pound bacon strips
3 tablespoons light brown sugar
1 tablespoon chopped fresh thyme leaves (from like a zillion sprigs)
1 teaspoon dry mustard
1 teaspoon smoked or hot paprika
1/2 teaspoon garlic powder
Freshly cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper or nonstick aluminum foil. Take each strip of bacon and twist it along the length being careful to not stretch, just twist. Place the twisted strip on the prepared baking sheet and repeat with the rest, nestling them close together on the baking sheet.
  • In a small bowl, add the brown sugar, thyme, dry mustard, paprika, garlic powder and plenty of black pepper. Mix with a fork until combined.
  • Sprinkle the sugar mixture all over the bacon. Bake for about 40 minutes. The twists will be slightly flimsy. Let the bacon cool on the baking sheet for 30 minutes, loosening every 10 minutes so they don't stick to the baking sheet. They will firm up once cooled down.

BALSAMIC-GLAZED APRICOTS WITH RICOTTA CLOUDS



Balsamic-Glazed Apricots with Ricotta Clouds image

2 tablespoons unsalted butter
4 fresh apricots, pitted and halved
3 tablespoons balsamic vinegar
2 tablespoons honey
1/2 cup fresh ricotta

Steps:

  • In a medium skillet over medium heat, melt the butter and cook until the foam subsides. Place the apricots cut side down in the skillet and cook, stirring occasionally, until apricots are slightly tender and warmed through, 5 to 6 minutes. Meanwhile, in a small bowl, whisk together balsamic vinegar and the honey. When apricots are ready, and add honey-balsamic mixture to the skillet. Increase the heat to medium-high and cook, stirring frequently, until the apricots have cooked through and the glaze is bubbling, uniformly coating the apricots. To serve, place a scoop of ricotta on each serving plate, top with 2 apricot halves and drizzle with the honey-balsamic glaze from the skillet.
