SWEET POTATO AND CELERY ROOT FRIES
Steps:
- Preheat oven to 450 degrees F. Cut potatoes and celery root into 1/2-inch thick matchsticks. In a small bowl, mix together cayenne, paprika, 5-spice powder, garlic powder, black pepper and salt. Spread matchsticks evenly on 2 sheet trays and toss with oil and spice mixture. Roast until golden brown, about 40 minutes, shaking pan occasionally. Serve immediately.

Steps:
- Bring 2 medium-size pots of salted water to a boil.
- Cook sweet potatoes in one pot until just tender,about 5-6 minutes.
- Do not over cook sweet potatoes.
- Cook Idaho potatoes in the other pot until just tender,about 8-10 minutes.
- Drain both potatoes and combine in a bowl with salt and pepper.
- Dressing:.
- Mix together mayonnaise, chutney and curry powder.
- Gently mix with potatoes with a rubber spatula.
- Fold in the scallions and parsley.
- Serve at room temperature.
- This salad keeps covered in the refrigerator for up to 2 days.

Steps:
- Mix condensed milk, mustard, and vinegar a day in advance--it will thicken to a mayonnaise consistency.
- Cook potatoes with or without skins, fry bacon in thin slices until crisp. Chop everything else and mix in a large bowl.
- Cut the potatoes in halves. Then add the mayonnaise mix and toss.
- Sprinkle mustard seeds over the top.
- This recipe is lovely hot or cold--even as a main potato dish with chicken or fish it's perfect.
- Note: It is a sweet dish so if you want it a bit less sweet put in 300grams condensed milk instead of 450g.

- Arrange potatoes in an even layer in a 15x10-inch jelly-roll pan.
- Coat with cooking spray, and sprinkle with 1/2 teaspoon salt.
- Bake at 400°F for 25 minutes or just until tender. Let cool slightly.
- Stir together remaining 1/4 teaspoon salt, celery, and next 9 ingredients in a large bowl until blended.
- Add potatoes, and toss gently to coat.
- Sprinkle with crumbled bacon, if desired; garnish, if desired.
- Serve warm or chilled.
