SUN OVEN BRAISED FRENCH BASIL CHICKEN



Sun Oven Braised French Basil Chicken image

1 tablespoon olive oil
2 onions, finely chopped
4 cloves garlic, minced
1 teaspoon herbes de provence
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon all-purpose flour
1/2 cup dry white wine
1 cup chicken broth
1 (14-ounce) can diced tomato, with their juices
1 (14-ounce) can artichoke hearts, drained, rinsed, and quartered
3 pounds skinless, bone-in chicken thighs
1 red bell pepper, seeded and diced
1/2 cup fresh basil leaves, finely chopped

Steps:

  • Set Global Sun Oven out to preheat. Heat the oil in a skillet over medium-high heat. Add the onions; cook until softened, about 5 minutes. Stir in the garlic, Herbes de Provence, salt, and pepper. Add the flour and cook, stirring for 1 minute. Add the broth and the tomatoes and bring to a boil. Stir in the artichoke hearts and remove from heat. Arrange the chicken pieces evenly over the bottom of a roasting pan or baking dish and pour the tomato mixture over them. Cover and cook in the Sun Oven until the chicken is fork tender, 1 to 1 1/2 hours. Stir in the red pepper and basil; continue cooking until the pepper is tender, about 20 minutes.

1 cup whole milke plain yogurt
2 large onions
1/2 cup freshly squeezed orange juice
1/4 cup water
1 tablespoon grated fresh ginger
3 cloves garlic, chopped
2 teaspoons coriander seeds, toasted and ground
1 teaspoon turmeric
1/4 teaspoon cayenne pepper
kosher salt
8 skinless, bone-in chicken thighs

Steps:

  • 4 to 6 hours in advance put the yogurt in a small strainer lined with cheesecloth or paper towels set over a bowl and place it in the refrigerator to drain. Discard the liquid. Set Sun Oven out to preheat. Thinly slice one of the onions. Soak the slices in cold water for 10 minutes. Drain thoroughly and set aside. Chop the other onion. Puree the chopped onion, orange juice, water, ginger, garlic, coriander, turmeric, and cayenne in a blender or food processor. Season the chicken thighs with the kosher salt. Arrange the thighs in a large pot. Pour the onion puree over the chicken. Cover and cook in the Sun Oven until the chicken is fork tender, 1 1/2 to 2 hours. Transfer the chicken to a platter; keep warm. Stir the sliced onions into the sauce, cover and let stand for 5 minutes. Stir in the strained yogurt. Gently heat over medium heat. Return chicken to the sauce, turning to coat.

1 (3 pound) chicken, skinned and cut into 8 pieces
5 cloves garlic, peeled and crushed
2 bay leaves
3/4 cup soy sauce
1/4 cup apple cider vinegar
1 tablespoon fresh ginger, finely grated
1/4 teaspoon freshly ground black pepper
1 tablespoon brown sugar
1 tablespoon cornstarch
1/4 cup chicken broth
green onion, sliced, for garnish

Steps:

  • Set Sun Oven out to preheat. Place the chicken pieces in a large pot or roasting pan. In a medium bowl, mix together the garlic, bay leaves, soy sauce, vinegar, ginger, pepper, and sugar. In a small bowl, whisk together the broth and the cornstarch. Stir the cornstarch mixture into the soy sauce mixture. Pour the sauce over the chicken in the pot. Cover and cook in the Sun Oven until the chicken is fork tender, 1 1/2 to 2 hours. Garnish with the green onions.
