The refreshing flavor combination of orange and vanilla in this frozen ice cream treat is sure to appeal to guests of all ages.

40 vanilla wafers, finely crushed (about 1-1/2 cups)
1/4 cup butter, melted
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
2 cups cold milk
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
2 cups orange sherbet, softened

Steps:

  • Line 13x9-inch pan with foil, with ends of foil extending over sides. Mix wafer crumbs and butter; press onto bottom of prepared pan.
  • Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in half the COOL WHIP; spoon over crust. Refrigerate 10 min.
  • Add remaining COOL WHIP to sherbet; whisk until blended. Spoon over pudding layer in crust.
  • Freeze 3 hours or until firm. Use foil handles to remove dessert from pan before cutting to serve.

2 pkg. (4 serving size) JELL-O Vanilla Flavor Instant Pudding (see note below)
1 (8 ounce) tub COOL WHIP Whipped Topping, thawed, divided
2 cups orange sherbet, softened

Steps:

2 (113 g) packages jell-o instant vanilla pudding
3 cups thawed Cool Whip Topping, divided
2 cups Orange sherbet, softened

Steps:

  • Line 13x9-inch pan with foil, with ends extending over sides of pan.
  • Mix crumbs and butter. Press firmly onto bottom of pan; set aside until ready to use.
  • Add milk to dry pudding mixes in medium bowl. Beat with wire whisk 2 minutes or until well blended. Gently stir in half of the whipped topping. Spoon evenly over crust. Refrigerate 10 minutes. Add remaining whipped topping to sherbet; stir with wire whisk until well blended. Spoon evenly over pudding layer; cover.
  • Freeze at least 3 hours or overnight. Use foil handles or remove dessert from pan before cutting into squares to serve. Store leftover dessert in freezer.
  • SUBSTITUTE: Prepare as directed, using lemon or lime sherbet.

One of my neighbours had this for dessert when I popped over and I had to have to recipe. So Good!!!

1 cup butter
1/2 cup sugar
1 egg
1 teaspoon baking powder
1 3/4 cups flour
2 cups hot boiling water
1 cup sugar
2 packages custard powder (3-4 tbsp)

Steps:

  • Mix the ingredients for the bottom layer together and press into 9x13 pan.
  • Bake at 325 for 15-20 minutes.
  • Mix custard in a little cold water before adding to boiling water.
  • Boil til thickens.
  • Spread over the base.
  • Top with whipping cream.
  • Sprinkle coconut over top.

I found this recipes a couple of years ago in a little recipe book you usually find at supermarket checkouts. I make it quite a lot in the summer .It is great served at cookouts on a hot day. Everyone I know that has tried it loves it. Sometimes for fun I use different sherbets, lime, raspberry ect.

1-1/2 c finely crushed vanilla wafer
1/4 c melted butter or margarine.
2 c cold milk
2 box 4 servings each vanilla instant pudding
1-8 oz pkg cool whip defrosted & divided
2 c orange sherbet softened

Steps:

  • 1. Mix crumbs & butter together press into bottom of 9x13 pan,set aside
  • 2. Add milk to pudding mix. beat with whisk for 2 minutes ,stir in half of whipped topping .Spoon evenly over the crust. Refrigerate for 10 minutes.
  • 3. Add remaining cool whip to sherbet,stir with wire whisk until blened. Spread over the pudding mix Cover with foil freeze for at least 3 hours. Serve in squares.
  • 4. You may use graham crackers instead of vanila wafers for the bottom layer

PINEAPPLE DREAM SQUARES

These a very sweet and delicious squares, I'm sure everyone will love them. A variation of this is to melt 2 squares semi-sweet chocolate with 1 tsp. vegetable oil. Drizzle over cooled squares. Let chocolate set before cutting into squares.

1 1/2 cups all-purpose flour
1/4 cup brown sugar, lightly packed
1/2 cup butter or 1/2 cup margarine, softened
3 eggs
1 cup flaked coconut
3/4 cup brown sugar, lightly packed
3/4 cup corn syrup
1 (14 ounce) can crushed pineapple, well drained
2 tablespoons butter or 2 tablespoons margarine, melted
1 teaspoon vanilla extract

Steps:

  • TO MAKE BASE;
  • Preheat oven to 350°F Spray a 9-inch square pan with cooking spray. In a medium bowl, combine flour and brown sugar. Cut in butter until mixture is crumbly. Press into bottom of pan. Bake until lightly browned, 12-15 minutes. Cool slightly.
  • TO MAKE TOPPING:.
  • In a medium bowl, whisk eggs just until blended. Stir in remaining ingredients. Spread over base.
  • Bake until topping is set but still soft in center, 40-45 minutes. Cool completely on a wire rack. Cut into squares. Keep refrigerated.
