2-1/2 cups all-purpose flour
1/2 cup nonfat dry milk powder
1/3 cup sugar
2 teaspoons baking powder
1 teaspoon salt
2 large eggs
1 cup water
2 cups chopped peeled apples
Oil for deep-fat frying
Sugar

Steps:

  • In a large bowl, combine first five ingredients. Whisk eggs and water; add to dry ingredients just until moistened. Fold in apples. , In an electric skillet, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, in hot oil. Fry until golden brown, about 1-1/2 minutes on each side. Drain on paper towels. Roll warm fritters in sugar. Serve warm.

Mom's Apple Fritters image

My mom made these for us after school in the fall with the apples we'd pick and buy from a fruit farm. Warm, crisp, and sweet, a perfect fall treat.

1 quart vegetable oil for deep-frying
1 ½ cups all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
½ teaspoon salt
⅔ cup milk
2 eggs, beaten
1 tablespoon vegetable oil
3 cups apples - peeled, cored and chopped
1 cup cinnamon sugar

Steps:

  • Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
  • In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
  • Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.

1 cup cake flour
1 tablespoon sugar
3/4 teaspoon baking powder
1/4 teaspoon salt
1 large egg
1/3 cup whole milk
4 teaspoons butter, melted
1 tablespoon orange juice
2 teaspoons grated orange zest
1/4 teaspoon vanilla extract
3/4 cup chopped peeled tart apple
Oil for frying
Confectioners' sugar

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, combine the egg, milk, butter, orange juice, zest and vanilla. Add to dry ingredients just until moistened. Fold in apples., In an electric skillet or deep-fat fryer, heat 1/4 in. of oil to 375°. Drop batter by rounded tablespoons into oil. Fry until golden brown on both sides. Drain on paper towels. Dust with confectioners' sugar. Serve warm.

2 tablespoons confectioners' sugar, plus more for dusting
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon fine salt
1/8 teaspoon freshly grated nutmeg
1 1/2 cups sparkling cider
1 teaspoon pure vanilla extract
Vegetable oil, for deep-frying
3 tart cooking apples, such as Granny Smith, Gravenstein, Honeycrisp or Braeburn
Cinnamon sugar, for dusting, optional

Steps:

  • Whisk together the flour, confectioners' sugar, baking powder, cinnamon, allspice, salt and nutmeg in a large bowl. Pour in the cider and vanilla extract, and whisk to make a smooth batter.
  • Preheat the oven to 200 degrees F.
  • Pour enough oil into a heavy-bottomed soup pot so it comes about a third of the way up the sides. Heat the oil over medium heat until a deep-frying thermometer inserted in the oil registers 360 degrees F.
  • Peel, core and slice the apples into rounds, about 1/3-inch thick. Put some flour in a shallow bowl. Working in batches, dust the apple slices in the flour, then dip in the batter to evenly coat. Carefully add to the oil. Fry, turning once, until golden and crisp, about 5 minutes. Transfer to a rack set on a baking sheet, and keep warm in the oven. Repeat the process until all of the apples are cooked, allowing the oil to return to 360 degrees F between batches.
  • Dust with confectioners' sugar or cinnamon sugar and serve immediately.

  • When the temperature is right, drop the batter into the oil a tablespoon at a time and fry until golden brown. Don't worry if they end up becoming weird shapes! Drain on paper towels.
  • Roll the fritters in cinnamon sugar and serve immediately! They're really best when they're fresh.
