BANANA OATMEAL COOKIE
This recipe has been handed down in my family for generations. It's a good way to use overripe bananas. It's also a moist cookie that travels well either in the mail or car. This is usually the first cookie to disappear at my house.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Sift together the flour, baking soda, salt, nutmeg and cinnamon.
- Cream together the shortening and sugar; beat until light and fluffy. Add egg, banana, oatmeal and nuts. Mix well.
- Add dry ingredients, mix well and drop by the teaspoon on ungreased cookie sheet.
- Bake at 400 degrees F (200 degrees C) for 15 minutes or until edges turn lightly brown. Cool on wire rack. Store in a closed container.

SUGAR-FREE OATMEAL BANANA RAISIN COOKIES
I was searching for something sugar-free to take to a bake sale, and came across a recipe similar to this online. This is my modified version of that recipe. These sold quickly at the bake sale! They have a granola-like appearance and are soft and chewy. A little cinnamon added in might be good, too.

- Peel, core and microwave apples for two minutes on high. Mash apples and bananas then mix with remaining ingredients. Drop by tablespoon onto prepared cookie sheet (coated with non-stick spray) and press in a criss-cross fashion with a fork. Bake at 350 degrees for 10 to 12 minutes. Remove from oven and let cool for one minute then remove from baking sheet.

SUGARLESS OATMEAL BANANA COOKIES- GREAT FOR BABIES!
I made these for my 10 month old son! i broke it apart into finger food size pieces and he gobbled it up! I plan on trying this with veggies as well! *NOTE: the oats look really dry but are fine after they are pureed. These are best warmed up a little and are more like a bread. The dough looks more like pancake batter.

- combine oats, milk, and vanilla. puree in a food mill or processor. *The oats will look really dry even with the liquid, but once they are pureed it is fine.
- add the mashed banana to the oats, puree.
- Add the melted butter and flour, puree. It look likes more pancake batter than cookie dough.

RIDICULOUSLY HEALTHY BANANA OATMEAL COOKIES
In a bid to add to my seemingly-naughty-but-actually-very-healthy recipe collection, I invented these ridiculously healthy banana oatmeal cookies! They have no added sugar, no butter/marg and no flour in them and (considering this) taste rather magnificent if I do say so myself! I'll say it now - if you're NOT on a diet then you probably won't think so much of these. They are pretty yummy, but there are probably plenty of nicer recipes (ie. with butter and sugar) if you're not weight watching. I find these to be a really nice, healthy, filling treat though, and I hope you enjoy them too!

- Preheat the oven to 180c.
- Mash the bananas and mix with the oats, milk and egg before adding the remaining ingredients (it just mixes a bit easier and more evenly this way). These measurements make the mixture just the right consistency for my liking, but if it looks a bit runny to you at this point, throw in another handful of oats to thicken it up.
- Grease a cookie tray with 1 cal spray and spoon the mixture on to make around 9 large cookies.
- Bake for around 20mins until golden brown.
