100 g frozen berries (of choice)
250 ml natural unsweetened yoghurt (unsweetened)
1 tsp granulated sweetener of choice (to more, to your taste)

Steps:

  • Put all the ingredients together in a blender with the blade attachment. Pulse until smooth.
  • Serve immediately. Serves 2.

When you're counting your calories, this is a good substitute for real icecream, it's sugar free as well. I don't make it too often because of all the additives in the pudding mix, but its good to have around for a sweet tooth. I use different flavor combos, but my favorite is chocolate fudge pudding with cherry jello.

1 box sugar-free instant pudding mix
1 1/2-2 cups skim milk, use less if you want it thicker
1 pinch or to taste sugar-free jello (optional)

Steps:

  • Mix pudding mix with milk.
  • pour into ice cube tray and freeze.
  • add ice cubes to blender and puree, adding extra milk for texture.
  • add some dry jello to make flavor variations (a little goes a very long way).
  • Return to freezer for a firmer texture.

Using only two ingredients, this ice cream recipe consistently produces thick, creamy ice cream. It can be made fat-free or sugar free in any flavor available in a pudding mix. This recipe is ideal for busy cooks, children, elderly people, diabetics, or dieters who cannot find sugar-free ice cream they like, or anyone who wants to impress guests with little effort. This recipe has been tested in a Cuisinart®® 2-quart electric ice cream maker, the kind where you freeze the bowl overnight and do not need ice or salt. This ice cream tastes like very good commercial ice cream.

1 quart half-and-half
1 (3.5 ounce) package instant pudding mix, any flavor

Steps:

  • Place the bowl of an ice cream maker in the freezer until completely chilled, at least 1 hour.
  • Chill half-and-half in the freezer, shaking every 10 minutes, until chilled but not frozen, about 30 minutes.
  • Pour chilled half-and-half and pudding mix into a bowl and mix well with a whisk.
  • Place frozen bowl of ice cream maker into the ice cream maker; add the stirring component and lid. Turn on the machine so the bowl is rotating. Pour pudding mixture into the machine through the hole in the lid.
  • Allow ice cream to process in the ice cream maker until desired consistency is reached, about 30 minutes.

This is an enhanced and sugar free variation of Recipe:#74250 by Marie. It is very simple and perfect for anyone, including a beginner chef!

1/2 cup nonfat milk
3 teaspoons artificial sweetener
1/4 teaspoon vanilla extract
1 teaspoon unsweetened cocoa powder (optional)

Steps:

  • Add all ingredients EXCEPT THE FRUIT, but ADD THE COCOA if using, to pint size ziplock bag and zip shut.
  • Place bag into quart sized Ziplock bag.
  • Add crushed ice to fill quart sized Ziplock bag 1/2 full.
  • Add 6 tablespoons salt to ice and zip shut.
  • Place quart Ziplock bag inside a gallon Ziplock bag.
  • Zip bag shut and shake, turn, toss [carefully] and mix in the bag.
  • In about 5 to 10 minutes, you will have yummy ice cream.
  • Do not double this recipe.
  • The two bags are needed because the one containing salt and ice tends to spring leaks when shaking it up.
  • Spoon into a bowl, add fruit [if used], and serve immediately.
  • NOTE: Nonfat milk may be substituted by whole milk. Artificial sweetener by be substituted by 1 TBSP sugar. Vanilla extract may be substituted by any other flavot you wish. Cocoa powder may be substituted by frozen, minced fruit [1/8 cup]. Also, up to 1 tablespoon of artificial sweetener such as Splenda or Altern may be used.
  • The Nutritional Guide artificially elevates sugars in this recipe, since the body does not recognize sugar substitutes as sugar.
