These are a wonderful chewy spice cookie. They are drop cookies that keep very well. I make them at the beginning of the holiday season and they keep all the way to New Year's!

1 ½ cups shortening
2 cups white sugar
½ cup molasses
2 eggs
4 cups all-purpose flour
4 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon salt

Steps:

  • Melt the shortening in a large pan on the stove, and cool.
  • Add sugar, eggs, and molasses, beat well.
  • In a separate bowl, sift dry ingredients together and add to the pan. Mix well and chill 3 hours or overnight.
  • Form into walnut-size balls. Roll in granulated sugar. Place on greased cookie sheet about 2 inches apart.
  • Bake at 375 degrees F (190 degrees C) for 8-10 minutes.
  • Store in an airtight container to keep from getting overly crisp. If they do lose their softness, an easy way to restore it is to place one slice of fresh bread in the container with the cookies for a couple of hours or overnight and they will be soft again!

There's nothing really fancy about these cookies, but they're my husband's all-time favorite. He enjoys their chewy, comforting flavor and the childhood memories they bring back.

1 cup sugar
3/4 cup vegetable oil
1/4 cup molasses
1 egg
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
Additional sugar

Steps:

  • In a large bowl, combine the oil, sugar and molasses. Add egg; mix well. Combine the flour, baking soda, cinnamon, salt, cloves and ginger; add to sugar mixture and mix well. Cover and refrigerate for 4 hours or until easy to handle., Shape dough into 1-in. balls; roll in additional sugar. Place 3 in. apart on greased baking sheets. Bake at 375° for 7-9 minutes or until tops are cracked and edges are set. Cool for 2-3 minutes before removing from pans to wire racks.

1 cup butter, softened
½ cup brown sugar
1 egg
¾ cup molasses
3 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon ground cinnamon
1 teaspoon ground ginger

Steps:

  • In a large bowl, cream together the butter, brown sugar and egg until well blended. Stir in the molasses. Combine the flour, baking soda, cinnamon and ginger; stir into the molasses mixture. Cover the dough and chill for at least 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the prepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

¾ cup butter flavored shortening
1 cup packed brown sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
¼ teaspoon salt
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger

Steps:

  • Cream together until light and fluffy butter flavored shortening and brown sugar. Add egg and molasses and beat well. Sift together flour, salt, baking soda, cinnamon, ground cloves and ginger. Add to creamed mixture and mix well.
  • Chill at least 1 hour or overnight.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll into 1-inch balls, roll in sugar. Place balls 2 inches apart on ungreased cookie sheet. Bake for 10 minutes. Cool slightly before removing from pan.

But push on and all your hard work will be rewarded with some of the tastiest and most comforting cookies I have come across. They're great for dipping in a cup of tea or just for snacking on. I particularly like to make them to give away at the holidays.

1 cup butter, softened
1 1/2 cups sugar
1/2 cup molasses
2 large eggs
4 cups flour
1/2 teaspoon salt
2 1/4 teaspoons baking soda
2 1/4 teaspoons ground ginger
1 1/2 teaspoons ground cloves
1 1/2 teaspoons ground cinnamon
additional sugar

Steps:

  • In a large mixing bowl, cream the butter and sugar.
  • Beat in the molasses and eggs.
  • Separately, combine the dry ingredients, then slowly mix into the wet ingredients.
  • When blended and smooth, roll the dough into small balls, about 1 inch around.
  • Dip the tops in sugar and place on greased or non-stick baking sheets.

With a taste of orange and chocolate. How could you go wrong. Try using colored sugar to dip these into instead of just white. I've dipped them in red and green sugar for Christmas and orange sugar for Halloween.

1/2 cup orange juice
1 tablespoon grated orange rind
3/4 cup butter, softened
1 tablespoon cold water
1 teaspoon vanilla extract
1 3/4 cups flour
1/8 teaspoon salt
1 cup miniature semisweet chocolate chips
1 cup finely chopped walnuts
additional sugar

Steps:

  • Preheat oven to 325*.
  • Combine orange juice and peel; set aside.
  • Cream butter and sugar. Beat in water and vanilla. Combine flour and salt and gradually add to creamed mixture. Stir in chocolate chips and walnuts.
  • Roll into 1 inch balls and place 1 inch apart on ungreased baking sheets. Bake for 12 to 15 minutes or until lightly browned. Remove to wire racks to cool.
  • Strain reserved oranje juice/peel mixture. Drop cookies quickly in juice, then roll in additional sugar. Let dry.
  • Store in an air tight container.
