PRESSURE COOKER CHRISTMAS PUDDING

Pressure Cooker Christmas Pudding image

This recipe pre-steams the pudding without pressure and then cooks it with pressure. This procedure involves removing the pressure valve from the lid, and then putting it back on (carefully) when the lid is still hot. If you have a normal non-pressure cooking lid for your pressure cooker you can use that instead of fussing with the valve.

Time 1h10m

Yield 1 Pudding

Number Of Ingredients 13

⅔ cup (100g) dried cranberries, soaked in boiling water for 30 minutes
⅔ cup dried (100g) apricots, chopped and soaked if they are not already soft
⅛ teaspoon olive oil
1 cup (125g) all-purpose flour
1 cup (200g) raw (Demarara) sugar
3 tsp (11g) baking powder
1 teaspoon (2 grams) ginger powder
½ teaspoon (1 gram) cinnamon powder
1 pinch salt
15 tablespoons (1¾ sticks or 200g) un-salted butter, roughly chopped
4 large eggs
3 tablespoons (50g) maple syrup
1 medium carrot, grated (about 100g)

Steps:

  • Put the dried cranberries and apricots, or dry fruit of your choice, in a small deep bowl and cover with boiling water. Then, tightly seal the top with plastic wrap and set aside - I used "soft" dried apricots that did no need to pre-soak. If your dried fruit is leathery and dry, definitely soak it.
  • Prepare a pudding mould, or 5-cup capacity heat-proof bowl by adding a drop of olive oil, and then spreading it around with a paper towel until the inside of the bowl is well covered, and set aside. If the bowl does not have handles, construct a foil sling to lower and raise the pudding out of the pressure cooker.
  • Prepare the pressure cooker base with two cups of cold water and the steamer basket or trivet.
  • Into a food processor bowl add the flour, sugar, baking powder, cinnamon, ginger and salt . Pulse a few times to mix.
  • Then, add the chopped butter and pulse a few more times until evenly distributed.
  • Next, add the eggs and maple syrup, and pulse the processor a few times until well blended.
  • Strain the dried fruit, and give it a quick rinse under cold water if it's still a little bit hot. Sprinkle the dried fruit and grated carrot on top of the mixture.
  • Use a spatula to stab, zig-zag and otherwise mix the fruit through the mixture.
  • Coax the pudding batter into the prepared bowl using the spatula. Lower the un-covered bowl onto the steamer basket and close the pressure cooker lid.
  • Cover the pressure cooker with a normal lid, or plate - if you don't have one that fits your pressure cooker remove the pressure valve and gasket from the pressure cooker lid; or, set the valve to "release" or "no pressure".
  • Electric pressure cookers: turn on the Brown/Saute setting and when steam starts sneak out of the pressure cooker (in about 10 minutes), start counting down 15 minutes of steam-without-pressure pre-cooking time. Stove top pressure cookers: turn on the heat to the highest setting. When steam begins coming out of the valve (in about 10 minutes), lower the heat to medium and start counting down 15 minutes of steam-without-pressure pre-cooking time.
  • When time is up remove the lid tilting it to the side to guide the condensation under the lid away from the pudding. Add the pressure cooking lid, or put the valve and gasket back one - the lid will be hot so use oven mitts or tongs to do this.
  • Close the lid and set the valve to pressure cooking position.
  • Electric pressure cookers: Cook for 35 minutes at high pressure. Stove top pressure cookers: Lock the lid, and cook for 30 minutes at high pressure.
  • When time is up, open the pressure cooker with the Natural release method - move the cooker off the burner and wait for the pressure to come down on its own (about 10 minutes). For electric pressure cookers, disengage the "keep warm" mode or unplug the cooker and open when the pressure indicator has gone down (about 20 minutes).
  • Leave the pressure cooker closed for an additional 10 minutes after the pressure has released - this is important as a pudding that is too hot coming out of the cooker will turn hard and dry very quickly. If you intend to cool the pudding and serve it at another time, anyway, leave the pudding in the cooker for 20 minutes more after the natural release.
  • Remember to tilt the pressure cooking lid when you remove it to prevent the condensation from dibbling back onto the pudding.
  • Test for doneness by inserting a toothpick in the middle of the pudding - it should come out clean if the pudding is fully cooked.
  • Lift the pudding out of the pressure cooker and cover tightly until ready to invert and serve.
  • Serve with an optional dousing of fresh cream.

PRESSURE COOKER CHOCOLATE PUDDING

Pressure Cooker Chocolate Pudding image

Dense, creamy and fudgy, this pudding is meant to be made in a 6- to 8-quart electric pressure cooker like an Instant Pot. You can bake this recipe as one larger pudding or as individual servings. It can be made in a stovetop pressure cooker, by trimming a few minutes off the cooking time, or you can also bake the individual servings in a water bath in the oven. To do so, heat the oven to 300 degrees. Set the filled, uncovered custard cups in a large roasting pan positioned on the oven's center rack. Add hot tap water to the pan, halfway up the sides of cups. Cover the entire pan with foil, and use a fork to prick holes in foil. Bake until edges are lightly set (lifting the foil to check) but the centers are still jiggly - they will set as they cool - 30 to 35 minutes.

Time 3h40m

Yield 6 servings

Number Of Ingredients 10

1 1/2 cups heavy cream
1/2 cup whole milk
6 ounces bittersweet chocolate (preferably 60 percent to 65 percent), chopped
5 large egg yolks
1/3 cup light brown sugar
2 teaspoons vanilla extract, or 1 tablespoon dark rum or bourbon
1/4 teaspoon ground cardamom or cinnamon (optional)
1/8 teaspoon kosher salt
Crème fraîche, or whipped cream, for serving
Chocolate shavings, for serving (optional)

Steps:

  • In a heavy saucepan, bring cream and milk to a simmer. Remove from heat; whisk in chocolate until melted and smooth.
  • In a large bowl, whisk together yolks, sugar, vanilla (or rum or bourbon), cardamom or cinnamon (if using) and salt. Whisking constantly, pour hot chocolate into yolk mixture. Strain through a very fine mesh sieve into a large measuring cup or bowl. This can be made up to 2 days ahead and stored in the refrigerator.
  • Pour into a 1-quart, 7-inch soufflé dish, or divide chocolate mixture among six (4- to 6-ounce) custard cups, espresso cups or small ramekins. Cover with foil.
  • Place steamer rack in pressure cooker, and fill cooker with 1 1/2 cups water. If baking the larger pudding, place dish on top of rack. Cook on low pressure for 18 minutes. Wait 5 minutes, then manually release pressure. If making the individual servings, place 3 custard cups on top of rack. Cook for 5 minutes on low pressure, then manually release pressure. Repeat with remaining three cups.
  • After cooking puddings, remove foil covers to allow the steam to evaporate, and cool to room temperature. Cover puddings with plastic wrap, and chill at least 3 hours and up to 3 days before serving with crème fraîche and chocolate shavings, if you like.

STEAK AND KIDNEY PUDDING (PC)

350 g( 12 oz) self-raising flour
175 g (6 oz) shredded beef suet (Atora)
Pinch of sea salt and freshly ground black pepper
560 g (1¼ lb) chuck steak / steak
275 g (10 oz) ox kidney - trimmed to 225 g (8 oz), some supermarkets sell the above, ready trimmed, in one packet
2 tablespoons plain flour
Big pinch of mustard powder
sea salt and freshly ground black pepper
Handful of fresh parsley, chopped
2 cloves of garlic, peeled and crushed
1 tablespoon of mushroom ketchup
1 teaspoon Worcestershire sauce

Sea salt and freshly ground black pepper

Steps:

  • Sift the flour and the salt into a large mixing bowl

  • Continue stirring, adding a few drops of water at a time until it starts to become a little clay-like

  • Divide the dough into ¼ for the lid and ¾ t line the bowl
  • Roll out a circle, quite thick, about a foot in diameter and press into your pie-bowl
  • Roll the remainder out as a lid so that it sits over the edges of the lined bowl

  • Season the flour with salt, pepper and mustard
  • Dredge the meat and kidney in the seasoned flour
  • Add all of the filling ingredients to a separate bowl. Crumble in the Oxo cube. Mix well with your hands.
  • Fill the suet-lined bowl with the filling ingredients.
  • Shake any remaining flour over the top and just cover the meat with cold water
  • Cover with a double layer of tin-foil, leaving a pleat for expansion

BEEF, ALE & PARSNIP PUDDING

Beef, ale & parsnip pudding image

A traditional steak and ale pie with suet pastry. Make the filling the night before then steam the pudding the following morning for a delicious Sunday lunch

Provided by Silvana Franco

Categories     Dinner, Main course

Time 3h50m

Number Of Ingredients 15

1 large onion , chopped
100g smoked bacon lardons
2 tbsp olive oil
500g lean stewing beef , cubed
2 tbsp plain flour
3 parsnips , cubed
500ml brown ale
300ml beef stock
2 tbsp cranberry or redcurrant jelly
4 thyme sprigs
greens , to serve (optional)
butter , for greasing
300g self-raising flour , plus extra for dusting
2 tsp English mustard powder
140g shredded suet

Steps:

  • Heat a large pan and cook the onion and lardons together for 5 mins until golden. Scoop out with a slotted spoon and set aside. Add the oil to the pan, dust the beef with the flour, then evenly brown over a high heat.
  • Add the parsnips, ale, stock, jelly, thyme and lardon mixture to the pan. Bring to the boil, then cover and simmer for 1½ hrs until the meat is tender.
  • Generously butter a 1.5-litre pudding basin. To make the pastry, mix together the flour, mustard powder, suet and ½ tsp table salt. Add enough cold water, about 150ml, to make a soft dough. Remove one-quarter of the dough and set to one side. On a heavily floured surface, roll out the remaining dough to make a large round, big enough to line the basin.
  • Carefully lay the pastry in the basin (aim to have 1cm of pastry overhanging the rim), then press the edges of the join together to seal. Roll out the remaining one-quarter into a circle big enough to cover the top.
  • Pour off the cooking liquid from the filling into a small pan and set aside. Discard the thyme stalks. Spoon the filling into the lined basin and pour over 100ml of the cooking liquid. Fold over the overhanging pastry and brush with water. Place the lid on top, pressing firmly around the edges to seal.
  • Butter a sheet of baking parchment, fold in a large pleat and lay, butter-side down, on top of the pudding. Cover with a pleated layer of foil and finally tie with string, making a loop for the handle so you can lift the pudding easily.
  • Sit a small trivet or a large cookie cutter in the bottom of a deep saucepan that's big enough to take the basin easily. Half-fill the pan with water and bring to the boil. Lower in the pudding, cover and simmer for 2 hrs, topping up with boiling water when necessary.
  • Reheat the cooking liquid, bubbling it down a little so it reduces into a tasty gravy. Carefully lift out the pudding. Run a knife around the rim, then turn out and serve with gravy and greens, if you like.

  • Beat the butter and sugar until very light and fluffy, just like you need to do for making a Victoria Sponge. Beat in the lemon extract and vanilla extract then the eggs one at a time.
  • Fold in the flour then before it is completely mixed, mix in the milk. Work with light hands and do not over stir or it will toughen the mix.
  • Scoop into the prepared basin. If it has a lid, pop it on, if not use a disc of baking parchment then a piece of foil to cover the pudding. Scrunch the foil up under the rim of the basin and secure with string or an elastic band if needed.
