BERRY COULIS



Berry Coulis image

This is a flexible recipe for a classic berry coulis: use just one type of berry or a combination. Passing the mixture through a fine-mesh strainer produces a smooth, glossy sauce, but you can skip the step if you prefer something more rustic. The coulis will keep in the refrigerator for 4 to 5 days and also freezes well. Serve over ice cream, cheesecake, pound cake or other plain cakes.

Number Of Ingredients 4

12 ounces fresh raspberries, blackberries, blueberries or strawberries, or a mix (if using strawberries, hull and quarter them)
1/2 cup sugar
1 tablespoon fresh lemon juice
Pinch kosher salt

Steps:

  • Combine the berries, sugar, lemon juice, salt and 1 tablespoon water in a medium saucepan. Bring to a simmer over medium heat and cook, stirring constantly, until the berries begin to give off their juice, 1 to 2 minutes. Adjust the heat so the sauce is simmering rapidly and cook until the berries have broken down, 4 to 5 minutes. Let cool slightly.
  • Transfer to a blender and blend until smooth. Pour the mixture through a fine-mesh strainer, pressing on the solids to extract as much of the sauce as possible. Serve the sauce cold or at room temperature.

RASPBERRY COULIS

Made with fresh raspberries, this simple coulis is the perfect use for extra berries. It can be used to top different desserts, crepes, or yogurt or even mixed into sparkling water, champagne, or a cocktail! If your raspberries are extra tart, add a bit more sugar.

2 cups raspberries, rinsed and drained
2 tablespoons white sugar, or more to taste
1 teaspoon lemon juice

Steps:

  • Combine raspberries, sugar, and lemon juice in the bowl of a small food processor. Blend until smooth and sugar has dissolved, 15 to 20 seconds. Adjust sugar if desired, and blend again.
  • Strain mixture using a fine mesh strainer to remove seeds. Refrigerate until ready to use.

Number Of Ingredients 5

1 1/2 cups raspberries or 1 1/2 cups strawberries, fresh
2 1/2 cups water, divided
3/4 cup sugar
1/4 cup fresh lime juice, about 4 limes
2 tablespoons cornstarch

Steps:

  • Place fruit and 1 cup water in blender and process until smooth.
  • Strain mixture through a fine sieve into a bowl and discard the solids.
  • Combine puree, 1 1/2 cups water and sugar in a small saucepan.
  • Combine juice and cornstarch in a small bowl, whisking until blended.
  • Add cornstarch mixture to fruit mixture and bring to a boil over medium heat.
  • Cook 5 minutes or until thick, stirring constantly.
  • Strain again into a bowl and discard solids.
  • Cool, cover and chill.

Number Of Ingredients 7

1 cup red wine
1 cup low-sodium soy sauce
1/2 cup olive oil
5 cloves garlic, crushed
1 tablespoon dried rosemary, or 2 tablespoons to 1/4 cup fresh rosemary, snipped, plus sprigs for garnish
2 teaspoons ground black pepper
1 butterflied leg of lamb, 4 to 5 pounds

Steps:

  • Combine the wine, soy sauce, oil, garlic and herbs and pour over the lamb in a shallow glass or enamel pan (aluminum will react with acidity in the wine and affect the taste). Refrigerate, covered, for 6 hours, turning the lamb occasionally.
  • Prepare coals for grilling. Drain the lamb and reserve the marinade. Place the lamb on the grill 4 inches above the coals. Grill 15 minutes per side for rare, or 20 for medium, basting frequently with the marinade. Slice thinly and arrange on a large platter garnished with sprigs of fresh rosemary.

2 pounds butterfly-shaped (bow-tie) pasta noddles
2 to 3 cups fresh mint, washed and dried
2 Cups Parmesian Cheese
2 cups olive oil
1 1/2 cups walnuts

Steps:

  • Bring a large pot of water to a boil. Meanwhile, combine the mint, cheese and oil in a food processor. Blend to a paste. Place the nuts in an ungreased heavy skillet and toast on all sides over medium heat, stirring constantly. When the water is boiling, add the pasta and cook al dente, about 7 to 8 minutes for packaged dry pasta. Drain well and toss with pesto. Stir in the walnuts.
