Steps:

  • Line 12 jumbo muffin cups with paper liners and fill with your favorite bread stuffing (we used Mushroom-Leek). Bake, uncovered, at 375 degrees F until golden, about 45 minutes.
  • Mushroom-Leek Stuffing: Make Classic Stuffing with 3 cups chopped leeks instead of onions. Cook 1 pound sliced cremini mushrooms with the leeks and celery.
  • Classic Stuffing: Melt 1 stick butter in a large skillet over medium heat. Add 2 cups each diced onions and celery and 1 tablespoon each minced sage and thyme; add salt and pepper and cook 5 minutes. Add 3 cups turkey or chicken broth and bring to a simmer. Beat 2 eggs with 1/4 cup chopped parsley in a large bowl; add 16 cups cubed stale white bread, then pour in the vegetable-broth mixture and toss. Transfer to a buttered baking dish and dot with butter. Cover and bake 30 minutes at 375 degrees F; uncover and bake until golden, 30 more minutes.

1 batch Stuffin' Muffins Base
1 ½ cups shredded cheddar cheese, divided
2 teaspoons fresh rosemary, chopped
2 large eggs
½ teaspoon McCormick® Rubbed Sage

Steps:

  • Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin with nonstick spray.
  • Add 1 cup shredded cheddar and the rosemary to the stuffing base and stir to combine. Fold in the eggs until incorporated.
  • Spoon about ¼ cup of the stuffing into each muffin cup, filling just above the rims. Press down gently with a spoon to release any air pockets. Sprinkle the remaining ½ cup shredded cheddar over the muffins, then finish with a sprinkle of the McCormick® Rubbed Sage.
  • Bake the muffin cups for 25-30 minutes, or until cooked through and the tops are browned. Let rest in the muffin tin for 20 minutes, then run a knife around the edges of each cup to release.
  • Serve warm.

¾ cup butter
1 cup diced onion
1 cup diced celery
2 teaspoons poultry seasoning
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste
1 cup Swanson® Chicken Broth
1 (1 pound) loaf sliced white bread (air dried at least 2 hours), cut into cubes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter 18 muffin cups.
  • Melt butter over medium heat in large stock pot or Dutch oven. Add onion and celery; saute over medium heat until vegetables are soft, about 8 minutes. Season with poultry seasoning, salt, and pepper. Remove pot from heat.
  • Mix bread cubes into vegetables; stir until bread cubes are evenly coated. Stir in Swanson® Chicken Broth; mix well. Press 1/4 cup mixture into buttered muffin tin cups.

  • Preheat oven to 400°F.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 stick butter, softened
1 fresh bay leaf, available in produce department
4 ribs celery and greens, from the heart, chopped (save time and purchase celery already washed, trimmed and cut into sticks, this makes chopping fast work)
1 medium to large yellow skinned onion, chopped
3 McIntosh apples, quartered and chopped
Salt and pepper
2 tablespoons poultry seasoning
1/4 cup chopped fresh parsley leaves
8 cups cubed stuffing mix (recommended: Pepperidge Farm)
2 to 3 cups chicken stock, available in paper containers on the soup aisle

Steps:

  • Preheat oven to 375 degrees F.
  • Preheat a large skillet over medium high heat. Add extra-virgin olive oil to skillet and 4 tablespoons butter. When butter melts, add bay leaf and add the vegetables as you chop them, celery, onions then apples. Sprinkle the vegetables and apples with salt, pepper and poultry seasoning. Cook 5 to 6 minutes to begin to soften vegetables and apples then add parsley and stuffing cubes to the pan and combine. Moisten the stuffing with chicken broth until all of the bread is soft but not wet.
  • Butter 12 muffin cups, 2 tins, liberally with remaining butter. Use an ice cream scoop to fill and mound up the stuffing in muffin tins. Remove the bay leaf as you scoop the stuffing when you come upon it. Bake until set and crisp on top, 10 to 15 minutes. Remove stuffin' muffins to a platter and serve hot or room temperature.

Steps:

  • Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray.
  • Crack the eggs into a large bowl, add the salt and whisk to combine. Divide the mixture evenly among the muffin cups. Top with desired variation ingredients. Bake until the centers of the muffins no longer jiggle, 17 to 20 minutes.
  • Let the muffins cool in the pan for 5 minutes. Run a knife around the edges of the muffins, unmold and serve. If storing, allow to cool completely, place in a resealable plastic bag and refrigerate or freeze.

  • In a heavy large skillet, add olive oil and butter over medium high heat. Once mixture is melted and hot, add the celery and onions, cooking until onions are browned and translucent. Add remaining ingredients up to (but not including) cubed stuffing. Cook 1-2 minutes, stirring, and turn off heat. Add stuffing cubes and stir gently to combine. Add 2 cups of broth until bread is softened and moist. At this point, you can choose to cover and chill overnight or continue on with recipe.
  • When ready to bake, preheat oven to 375F with rack on lower middle position. Use rubber spatula to gently stir stuffing mixture and add more broth as needed (may not need to add much, depending on how soft you like your stuffing.)
  • Butter a 12-muffin tin generously. Divide stuffing mixture evenly into muffin tin. Bake 10-15 min or until nicely browned on top. Stuffing muffins can be served fresh out of the oven or a couple of hours later (they can easily be reheated if you like.)

  • Before you make the stuffing you need to have everything else ready to go at your workstation. Get your eggs and cheese ready. If you are using scrambled eggs, make them. In a medium sized bowl combine your eggs and milk. I sometimes sprinkle in some salt and pepper. Use a whisk or fork scramble the eggs.
  • Prepare stuffing as directed on package, except do NOT allow the stuffing to rest. Boil your water with some butter in it and as soon as it boils add stuffing mix and stir until combined. Then divide mixture, as evenly as possible, between the six holes in the muffin pan. I usually use a soup spoon to do this. Next press stuffing into the muffin hole and press it up the sides. Push the stuffing deep into the bottom of the muffin hole, especially around the lower bottom round edge. As you do this the stuffing will push up the sides of the muffin cup. Once stuffing is cool enough I usually use my fingers to do this. The stuffing does not have to reach the top of each muffin hole but get as close as you can.
  • Add a pinch of cheese to the bottom of each cup. Then, crack an egg into each cup or scoop some eggs that are scrambled into each cup. Bake for about 20 minutes if you are just using cracked eggs. If you are using scrambled eggs, remove from oven at the 20 minute point, add some cheese if desired and return to oven for about another 5 minutes or eggs are done to your liking. If you used scrambled eggs, use a toothpick to confirm that the eggs are done. The toothpick should come out clean if eggs are cooked. The scrambled eggs will also form a sort of dome that looks cooked at the top, in the middle, when they are done.
