Ham and Cheese Jalapeno Poppers image

6 ounces cream cheese
4 ounces thick-cut ham, chopped
1 cup shredded Swiss cheese
1/2 cup shredded mozzarella
1/2 cup chopped pickles
1 tablespoon Dijon mustard
1 dash cayenne pepper
1 dash paprika
8 jalapenos, stemmed, halved lengthwise and seeded
1/2 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 large eggs
2 tablespoons milk
5 cups buttery crackers, such as Ritz, ground in a food processor
Oil, for frying

Steps:

  • Combine the cream cheese, ham, Swiss, mozzarella, pickles, mustard, cayenne and paprika in a medium bowl.
  • Stuff the jalapeno halves with the filling and place on a baking sheet lined with parchment.
  • Set up 3 bowls. In the first, mix together the flour with a pinch of salt and a few cracks of pepper. In the second, beat the eggs with the milk, a pinch of salt and a few cracks of pepper. In the third, place the cracker crumbs.
  • Coat the stuffed peppers first in the flour mixture, then in the egg mixture and then in the cracker crumbs.
  • Heat 2 inches of oil in a heavy-bottomed pot until a deep-frying thermometer registers 365 degrees F.
  • Fry the stuffed jalapenos in batches until golden brown on all sides, about 2 minutes per batch. Alternatively, you can bake the poppers in the oven at 350 degrees F for 30 minutes.

Sunny's Easy and Cheesy Stuffed Slider Bake-Two Ways image

24 savory or sweet dinner rolls, attached at the hip!
1 1/2 cups shredded rotisserie chicken
1 cup crumbled blue cheese
1 1/2 to 2 cups wing sauce
1 1/4 cups shredded Italian cheese blend
1 cup marinara sauce
3/4 cup shredded mozzarella
12 frozen meatballs, defrosted
1/2 cup grated Parmesan (the sandy kind in a canister)

Steps:

  • Preheat the oven or a grill for indirect cooking to 350 degrees F.
  • Prepare the rolls: Place the rolls on a nonstick-foil-lined baking sheet. With a serrated paring knife, carve out a circle on the top of each, cutting down about 1 inch deep. (You need to keep the bottom sturdy, so you don't want to cut all the way to the bottom. Get your fingers in there and pull out the plug of bread, leaving room for your filling. Save the excess bread for breadcrumbs!)
  • For the buffalo chicken sliders: Mix the chicken, blue cheese, 1 1/2 cups wing sauce or to taste and 1/2 cup of the shredded Italian cheese blend in a medium bowl. Set aside.
  • For the Italian meatball sub sliders: Assemble 12 sliders by spooning into the cavity of each: 1 tablespoon marinara sauce followed by 1 tablespoon mozzarella, then a meatball, then a teaspoon of marinara. Sprinkle the tops of the meatball sliders with the Parmesan.
  • For the buffalo chicken sliders: Assemble the remaining 12 sliders by stuffing 2 to 3 tablespoons of the buffalo chicken mixture into each cavity. Top with the remaining shredded Italian cheese blend.
  • Bake the sliders in the oven or over indirect heat until the cheese is melted and the tops are golden, about 25 minutes.

1/2 cup grated sharp cheddar
6 large jalapenos, halved and seeded
Coarse salt and ground pepper

Steps:

  • Preheat oven to 450 degrees. In a small bowl, mix together cream cheese and cheddar. Season with salt and pepper. With a small spoon, fill each jalapeno half with about 1 tablespoon cheese mixture. Place peppers on a parchment-lined baking sheet and bake until cheese is browned and bubbling, about 10 minutes, rotating sheet halfway through.

1 pound ground beef
2 jalapenos, seeded and diced fine, plus whole or sliced, for serving
2 shallots, chopped fine
1/2 cup panko bread crumbs
1/4 cup heavy cream
1/4 cup grated spicy Monterey Jack cheese
Pinch garlic powder
Kosher salt
1/2 teaspoon cracked black pepper, plus pinch
1 cup creme fraiche
1/4 cup store-bought salsa verde
12 mini dinner rolls

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, add ground beef, jalapenos, shallots, panko, heavy cream, cheese, garlic powder, 1 tablespoon salt, and 1/2 teaspoon black pepper. Mix together well. Form into small patties and place in the oven for 12 to 15 minutes.
  • In a separate bowl, add creme fraiche, salsa verde, pinch of salt and pepper and mix together. Refrigerate until ready to serve with your sliders.
  • Lightly spread creme fraiche on both sides of buns. Place burgers in middle and pick it with a jalapeno.

2 lb ground chicken
2 tablespoons kosher salt
1 tablespoon black pepper
1 teaspoon smoked paprika
2 teaspoons worcestershire sauce
1 clove garlic, grated
½ cup white onion, grated
nonstick cooking spray, for greasing
1 ½ cups shredded monterey jack cheese
4 medium jalapenoes, cut into 1/4 (6 mm)
1 package sweet slider buns
3 tablespoons mayonnaise
6 tablespoons stone ground mustard
3 tablespoons honey, clover
1 cup shredded green cabbage
1 cup shredded red cabbage
2 medium carrots, shredded
1 teaspoon kosher salt
1 ½ teaspoons rice vinegar
2 tablespoons unsalted butter, melted
1 tablespoon honey, clover
1 tablespoon sesame seed

Steps:

  • Make the chicken burger: Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the ground chicken, salt, pepper, paprika, Worcestershire sauce, garlic, and onion. Mix well until evenly distributed.
  • Lightly grease a baking sheet with nonstick spray.
  • Press half of the chicken mixture into an 11 x 10-inch (23 x 21 cm) rectangle in the center of the prepared baking sheet. Evenly sprinkle the cheese over the chicken patty and layer the jalapeños on top. Top with the remaining chicken mixture, spreading evenly.
  • Bake the chicken burger for 30-40 minutes, or until the internal temperature reaches 165°F (75°C). Remove from the oven and let cool for 5 minutes.
  • While the burger cooks, make the sauce and slaw. For the sauce, mix together the mayonnaise, Dijon, and honey in a small bowl.
  • For the slaw, toss together the green and red cabbage and carrots in a medium bowl. Add the salt and rice vinegar and toss well.
  • Using a serrated knife, gently cut the slider buns in half to create a large top and bottom bun for the burger. Spread the bottom bun with the some of the sauce.
  • Using a spatula, transfer the burger patty to the bottom bun. Top with the slaw, drizzle with the remaining sauce, and cover with the top bun.
  • Make the glaze: In a small bowl, mix together the melted butter, honey, and sesame seeds. Brush the glaze over the top bun.
  • Slice between each row of buns, creating 12 sliders.
  • Serve warm.

  • Slice peppers lengthwise, remove seeds and core; fill with cheese.
  • Roll out sausage with rolling pin, between two layers of plastic wrap. Remove plastic from sausage, and wrap a thin coating of sausage around each jalapeno.
  • Roll peppers in spicy seasoned coating mix.
  • Bake at 350 degrees F (175 degrees C) for 15 to 25 minutes or until brown and sizzling and cheese is melted.
