I take alot of pictures when Im cooking, so I decided to share my dinner today. I hope you like it. I DID ; )

Number Of Ingredients 7

3 slice bacon, uncooked cut into pieces
1 1/2 c water to half cover beans
1/4 small onion
4 c string beans (cleaned snapped in 2 in. pieces)
dash(es) salt and pepper ( to your taste )
DO NOT ADD POTATOES TILL BEANS ARE TENDER
2 medium potatoes cut to medium chunks : )

Steps:

  • 1. in a 2.5 quart pot add water, bacon, salt & pepper, onion
  • 2. bring to a roaring boil 5 min. add beans
  • 3. reduce heat to low simmer for 30 min. check beans for tenderness
  • 4. when beans are tender, ADD POTATOES again, salt and pepper to taste
  • 5. simmer till potatoed are tender ENJOY! . . . . . .with " Down Home Flap-Jacks " ( see my recipes )

PROVENCAL COD, POTATOES AND STRING BEANS



Provencal Cod, Potatoes and String Beans image

1 pound Yukon Gold potatoes, thinly sliced
1/4 cup plus 1 tablespoon extra-virgin olive oil
1 teaspoon herbes de Provence
Kosher salt and freshly ground pepper
8 ounces yellow wax beans and/or green beans, trimmed
2 small tomatoes, diced
1/3 cup pitted kalamata olives, roughly chopped
2 tablespoons fresh lemon juice
4 6-ounce cod fillets (1 to 1 1/2 inch thick)
Chopped fresh parsley, for topping

Steps:

  • Put a rimmed baking sheet in the upper third of the oven and preheat to 475 degrees F. Combine the potatoes, 2 tablespoons olive oil and 1/2 teaspoon herbes de Provence in a large bowl; season generously with salt and pepper. In a separate bowl, combine the beans, 1 tablespoon olive oil and the remaining 1/2 teaspoon herbes de Provence; season generously with salt and pepper.
  • Remove the hot baking sheet from the oven; add the potatoes in a single layer on one side of the pan and the beans on the other side. Roast until the potatoes are browned and the beans are tender, about 20 minutes.
  • Meanwhile, combine the tomatoes, olives, remaining 2 tablespoons olive oil, the lemon juice, 1/2 teaspoon salt and a pinch of pepper in a small bowl; set aside. Season the cod all over with salt.
  • Remove the baking sheet from the oven. Separately stir the potatoes and beans with a spatula and push to the sides of the pan, leaving a space in the middle. Place the cod in the middle of the pan and top with half of the tomato mixture. Roast until the cod is opaque, 10 to 12 minutes. Sprinkle the potatoes with parsley. Serve with the remaining tomato mixture.

White Bean and Roasted Potato Salad With Rosemary image

Freshly cooked white beans hold their shape better than canned ones, so unless you're really pinched for time, cook the beans yourself for this hearty, lively winter salad. Serve it as a side dish for roasted meats or chicken. If you omit the anchovies in the dressing (use capers instead), it would be an excellent meatless main course. If you have time, it's best to give the beans a proper soak (4 to 12 hours); if not, just tack 30 to 60 minutes onto the cooking time, adding more water as needed to keep them entirely covered.

1 1/2 cups dried cannellini or Great Northern beans
1 1/2 tablespoons plus 1 teaspoon coarse kosher salt, more to taste
2 bay leaves, torn
1 garlic clove, smashed
6 tablespoons extra-virgin olive oil
1 3/4 pounds Yukon Gold potatoes, scrubbed and cut into 1/2-inch chunks
1/4 teaspoon black pepper
8 cups hearty winter greens, kale, collard greens, cabbage or mustard greens
2 teaspoons lemon juice, more to taste
4 anchovy fillets (see note)
2 garlic cloves
2 tablespoons red wine vinegar, more to taste
Large pinch kosher salt, more to taste
1/2 cup extra-virgin olive oil
Finely grated zest of 1 lemon
1 tablespoon chopped rosemary
Large pinch red chile flakes

Steps:

  • Put the beans in a bowl or pot, cover with water by 2 inches and add 1 1/2 tablespoons salt. Let soak 4 to 12 hours. Drain before using.
  • Put the soaked beans in a pot, cover with water by 2 inches and add 1/2 teaspoon salt, 1 bay leaf, the smashed garlic clove and 2 tablespoons oil. Bring to a boil, then simmer until tender, about 40 to 75 minutes, stirring occasionally. Season with more salt if needed.
  • Meanwhile, prepare the potatoes: Heat oven to 425 degrees. On a rimmed baking sheet, toss potatoes with 2 tablespoons oil, the remaining 1/2 teaspoon salt and the pepper and arrange in a single layer. Top with remaining bay leaf. Roast for 15 minutes, flip potatoes, then roast until golden and very tender, another 15 to 25 minutes.
  • While potatoes roast, make the dressing: In a blender, combine anchovies, garlic, vinegar and a large pinch of salt; blend until smooth, then blend in oil. Taste and add more salt or vinegar, or both, if needed. Transfer to a large bowl, stir in lemon zest, rosemary and chile flakes.
  • In a separate large bowl, toss greens with remaining 2 tablespoons oil, the lemon juice and a large pinch of salt. Arrange on a large serving platter.
  • Toss the warm potatoes and beans into the bowl with the dressing and mix well. Taste and add more salt if necessary, and vinegar. Arrange on top of greens and serve.

CHICK'S STRING BEANS & POTATO'S



Chick's String Beans & Potato's image

My grand mother taught me how to make string beans & potato's. I was not a fan of string beans until she made them for me. Grandma has been gone for 8 years now and since I've created my own version of her recipe and everyone is always asking me to make them. Try them! I'm sure you'll love them too! :)

3 1/2 lb fresh string beans
6 clove fresh garlic
1 pkg pork bacon sliced
6-8 small - medium red or yukon gold potatoes quartered & peeled
1 small red onion
2 Tbsp garlic powder
1 Tbsp onion powder
2 1/4 c water
salt to taste
black pepper to taste
3- 4 shakes of garlic salt with parsley flakes

Steps:

  • 1. Wash the string beans under cool water. Snap the ends off of the string beans and snap or cut into smaller pieces. Set aside.
  • 2. Chop the Onion & Garlic and Set aside.
  • 3. Wash the potato's and peel *(You may keep the skin on if you prefer). Cut the potato's into halves then cut the halves into quaters. Set aside in a bowl of cold water to keep them from turning brown.
  • 4. Add string beans & water into a large pot. Cover and cook them on medium high heat. Allow the beans to cook 20 minutes at this temperature. Reduce heat to medium then add the Onion & Garlic powder.
  • 5. In a medium pan fry bacon until crisp then remove from heat, add about a 1/4 cup of water to the bacon pan. Stir with a wooden spoon to lift all bits off bottom of pan. Add this water to the pot of beans and stir. Cover and stir occasionally.
  • 6. Cut or break bacon slices into smaller pieces and add to the pot. Stir in chopped garlic & onions and allow to cook until the string beans start to become tender enough to poke through easily with a fork.
  • 7. Add potato's and allow to cook until the potato's are soft. Remember to always cover your pot and stir occasionally. String beans should be soft and there should be plenty of juices in the pot to scoop up when you serve the beans, Enjoy!
