3 tablespoons vegetable oil, divided
1 onion, diced
1 tablespoon minced garlic
1 tablespoon minced fresh ginger root
2 tablespoons tomato paste
1 teaspoon cayenne powder
3 large tomatoes, diced
¾ cup water
salt and ground black pepper to taste
1 pound beef stew meat, cut into bite-size chunks
4 cups jasmine rice
water to cover

Steps:

  • Heat 2 tablespoons vegetable oil in a large pot over medium heat. Add onion, garlic, and ginger; cook and stir until softened, about 5 minutes. Add tomato paste and cayenne pepper; cook, stirring constantly, until dark and fragrant, about 2 minutes. Stir in tomatoes, 3/4 cup water, salt, and pepper. Cover and simmer over medium-low heat.
  • Heat remaining 1 tablespoon vegetable oil in a separate pot. Season stew meat with salt and pepper. Cook in the hot oil until browned, 1 to 2 minutes per side.
  • Stir meat into the simmering tomato mixture. Add jasmine rice. Pour in enough water to cover the rice. Cover and cook over medium heat, stirring occasionally, until stew meat and rice are tender, about 30 minutes.

This traditional Nigerian dish brings out the best possible flavor of rice and chicken. Chicken is first sauteed on the stove top to produce a wonderful aromatic base for the rice. For an extra special and authentic touch, serve jollof rice with fried plantains.

2 pounds chicken drumsticks
½ large onion, diced
1 (2 inch) piece fresh ginger root, peeled and thinly sliced
2 cubes chicken bouillon, crushed
2 cloves garlic, diced
1 tablespoon curry powder, or more to taste
1 teaspoon herbes de Provence
freshly ground black pepper
1 pinch cayenne pepper
1 cup water
3 tablespoons vegetable oil
½ large onion, diced
1 (14 ounce) can tomato sauce
1 (14 ounce) can coconut milk
1 teaspoon herbes de Provence
1 teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
3 cups parboiled rice (such as Uncle Ben's®)
1 (10 ounce) package frozen mixed vegetables (carrots, corn, peas)
4 ripe plantains, peeled and cut diagonally into 1/2-inch slices
½ cup canola oil for frying

Steps:

  • Place chicken drumsticks in a large Dutch oven over medium heat. Add 1/2 onion, ginger, crushed bouillon cubes, garlic, curry powder, 1 teaspoon herbes de Provence, black pepper, and cayenne pepper. Mix well. Cook until chicken starts sticking to the bottom, about 5 minutes. Pour in water, mix, cover the pot, and bring to a gentle simmer; cook for 15 minutes. Remove from heat.
  • Transfer chicken to a baking dish using a slotted spoon. Strain cooking liquid through a fine-mesh sieve. Reserve 1 1/2 cups liquid. Discard solids.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake chicken in the preheated oven until no longer pink in the middle and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the thickest part should read 165 degrees F (74 degrees C).
  • Heat 3 tablespoons vegetable oil in a large pot over medium-low heat and cook 1/2 onion until soft and translucent but not browned, about 5 minutes. Add tomato sauce; cook and stir until slightly thickened and infused into the oil, 5 to 7 minutes.
  • Stir reserved chicken broth, coconut milk, 1 teaspoon herbes de Provence, salt, and pepper into the pot. Bring to a simmer; add rice. Cook, stirring often, until rice is almost tender, 15 to 20 minutes. Add frozen vegetables and continue cooking until rice is tender and creamy, about 5 minutes.
  • Heat 1/2 cup of canola oil in a nonstick pan over medium heat. Add plantains and fry on both sides until golden and crispy, about 2 to 3 minutes per side. Drain on paper towels. Garnish jollof rice with friend plantains and serve with chicken.

4 pieces chicken (4 to 6)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup vegetable oil
1 medium onion, peeled and finely chopped
1/4 lb cubed salt pork or 1/4 lb ham
2 beef bouillon cubes
1/4 teaspoon ground red pepper
1/2 teaspoon dried thyme or 1 sprig fresh thyme, crushed
1/2 cup water
1 (6 ounce) can tomato paste
1/4 cup uncooked rice
2 cups tomatoes (or any combination of vegetables) or 2 cups string beans (or any combination of vegetables)

Steps:

  • Season chicken with salt and black pepper.
  • In a large frying pan, heat oil over medium-high heat for 4 to 5 minutes.
  • Add chicken pieces and brown on both sides.
  • Place chicken in a kettle and set aside.
  • Add onions and salt pork to oil in frying pan and saute until onions are trans- parent.
  • Add onions and pork to kettle.
  • Set frying pan aside. (Do not discard oil.).
  • Add bouillon cubes, red pepper, thyme, 1-1/2 cups water, and tomato paste to kettle and stir well.
  • Simmer over low heat for about 10 minutes.
  • Add rice to frying pan and stir to coat with oil.
  • Add rice and vegetables to kettle, stir well, and cover.
  • Cook over low heat 35 to 40 minutes or until vegetables and rice are tender.

6 medium tomatoes, sliced
1 red bell pepper, stemmed, seeded and quartered
2 small red onions, 1 quartered, 1 diced
1 scotch bonnet pepper, or habanero, stem removed
½ cup vegetable oil, plus 2 tablespoons
1 lb boneless chicken thighs, cubed
2 teaspoons curry powder
1 teaspoon dried thyme
2 cups parboiled long grain rice, washed
2 stock cubes
¾ cup water

Steps:

  • Add the tomatoes, red bell pepper, quartered onion, and pepper to a blender and blend until smooth.
  • In a pot over medium heat, add 2 tablespoons oil, diced red onion, chicken, and curry powder. Cook until onions are soft and chicken has browned, about 8-10 minutes. Remove chicken from pot and set aside.
  • Raise heat to medium-high, and using the same pot, add pureed tomato mixture, cooking until reduced by half.
  • Add in remaining oil, and fry sauce for 8-10 minutes.
  • Stir in chicken, along with rice, stock and thyme leaves.
  • Cover pot tightly with foil. Cover with lid and reduce heat to low, cooking for 30 minutes.
  • Once rice is cooked, fluff up before serving.
  • Enjoy!

2 cups rice (long grained or medium variety)
1/4 cup groundnut oil or 1/4 cup olive oil
1/2 tablespoon butter
1 teaspoon dried thyme, if using fresh 2 tbsp would be perfect
1/4 teaspoon curry powder (optional)
1 onion, sliced
1 celery, diced
1 green pepper, diced (remove the seeds & white stuff)
2 -3 garlic cloves (as per taste)
1 cup chicken breast, diced not cooked preferably, omit if vegan
1/2 inch piece ginger, peeled and grated
1 tablespoon ground paprika (smoked would be ideal)
2 tablespoons cayenne, add more if you want it hotter
3 tablespoons tomato paste, I love using hunts
2 large tomatoes, chopped finely (or 1 small can pureed tomatoes)
1 carrot, cubed
1 chicken bouillon cube (I love knorr chicken or maggi)
1 bay leaf
2 cups chicken stock
2 cups water
1/2 cup portebello mushroom (optional)
peas (You can use frozen mixed veggeis)
salt
1/4 cup cilantro (to garnish) or 1/4 cup parsley (to garnish)

Steps:

  • Method.
  • Add oil and butter in a heat resistance pot, then add the chicken breast, paprika, cayenne, onion, celery, green pepper, garlic and ginger. Saute for about 3 minutes.
  • Add the chopped carrots next and saute for a minute with little salt.
  • Add the tomato paste, tomatoes along with curry powder, bay leaf & thyme. Cook until tomatoes get slightly soft. For about 3 minutes until you see the oil getting red. Then add frozen veggies. . Add the rice next. Saute for another 2 minutes or so.
  • Add 3 cups of vegetable stock/water, bouillon cube, required salt,close the lid and cook until 90% cooked, for about 30 minutes.
  • Allow the rice to continue cooking until the rice is soft. If it is not dry at this point, then switch the heat to low to allow it to dry the excess water without making the rice much softer.
  • If rice is still lil hard, add 1/4 cup water and cover with foil, which will allow it to steam through. Check back at 5 min and It should be ready. You want your rice not too soft.
  • Garnish with cilantro/parsely and serve.
